Food consumption patterns and their association with nutrient intake in 290 homebound elderly living in Sherbrooke, Quebec were: investigated. Dietary data were collected using three repeated non-consecutive 24-hour recalls and sociodemographic, physical, physiological and psychosocial characteristics were measured. The purpose of this dissertation was to understand how genetics, socioeconomic status (SES), and lifestyle factors influence the development of age-related macular degeneration (AMD), glaucoma, and diabetic retinopathy in an adult population in Dallas County.
