The main aim was to investigate the cell-wall cross-links in Chinese water chestnut (CWC), in particular ferulic-acid-containing phenolic-polysaccharide cross-links. The secondary ~ims were: to understand the gross composition of C''!C cell walls froin the parenchyma, epidermis and sub-epidermis tissues of the corm and the -role of cell-wall composition in the plant's physiology, and to determine whether CWC contained higher oligomers of ferulic acid. Epidemiological studies have suggested associations between the consumption of plant foods and beverages, especially those rich in phenolic compounds, and the prevention of chronic diseases, and there is a growing evidence indicating that these dietary phytochemicals are involved in enhancing long-term health. Grape pomace is a by-product of wineries. It is one of the most potent antioxidant sources due to its high phenolic content. In this thesis study, ultrasound assisted extraction of phenolic compounds from Merlot grape pomace has been studied. The effects of sonication time, subsequent extraction time in shaking water bath at 45&deg<br>C and composition of the solvent on extraction efficiency and recovery of phenolics were studied by response surface methodology. Folin-Ciocalteu colorimetric method was used to analyze effects of process parameters on the total phenolic content of the extracts.

Study 1: phenolic agents in plant foods have been associated with chronic disease prevention, especially cancer. However, a direct evidence and the underlying mechanisms are mostly unknown. This study selected 13 sorghum accessions and was aim to investigate: (1) the effect of extracted sorghum phenolics on inhibiting ca

Abstract:
The phenolic compounds as food components represent the largest group of secondary metabolites in plant foods. The phenolic compounds, e.g. chlorogenic acid (CQA), are susceptible to oxidation by enzymes specially, polyphenol oxidase (PPO) and at alkaline conditions. Both enzymatic and non-enzymatic oxidations occur in the presence of oxygen and produce quinone, which normally further react with other quinone to produce colored compounds (dimers), as well as is capable of undergoing a nucleophilic addition to proteins. The interactions of proteins with the phenolic compounds have received cons

Abstract:
A healthy and proper diet is essential to prevent the onset of various diseases, as with the diet we can also introduce harmful substances. Among others, the oxysterols are particularly relevant; they can be absorbed from the diet and are the oxidized products of cholesterol present in cholesterol-containing foodstuffs after cooking, processing and storage, such as meat, fish, dairy products and eggs. They can be also generated endogenously from either the spontaneous or enzymatic oxidation of cholesterol. Oxysterols have been shown to exert several in vitro and in vivo biochemical activitie
