The composition of tepary beans Phaseolus acutifolius var. latifolius was determined; starch (41%) and protein (26.3%) were the predominant components. The physical, physicochemical, rheological, structural and nutritional properties of the isolated starch and its suitability in food products were evaluated. Starch granules were spherical to oval with a typical legume starch birefringence pattern. They appeared smooth and showed a normal distribution of diameters (range 15.5 - 59.9 μ; mean 33.5 μ). Experimental identification of protein methylation sites is in general time-consuming and costs much. Computational approaches to predicting methylation sites provide an efficient way for screening of candidate methylation sites. In this study, hydrophobicity and transfer energy retrieved from the Amino Acid Index database are utilized as the features, and Support Vector machines are employed to perform the classification task.

碩士<br>輔仁大學<br>食品科學系<br>95<br>Tofu is one of the most popular foods in the traditional oriental diet. However, the shelf-life of tofu is limited due to syneresis, especially in the packed tofu. Packed tofu is a soy protein matrix which contains about 90% of moisture. Changes of the microstructure, rheological properties, and the distribution and mobility of water in packed tofu during storage might contribute to the syneresis. Poly-γ-glutamic acid (γ-PGA) is a water soluble and edible substance, and its derivatives can be added in the processed foods as water holding agent and texture enhancer.
