Med begreppet ”vaktel” avses rent biologiskt inte en enskild art utan ett antal släkten med totalt ca 80 arter av en typ av små hönsfåglar, men det är den japanska vakteln som har domesticerats och idag främst hålls för livsmedelsproduktion. Den japanska vakteln har hållits i fångenskap sedan 1100-talet. Systematisk domesticering och selektion för ägg- respektive köttproduktion har skett mer intensivt sedan omkring förra sekelskiftet, det vill säga i drygt 100 år.
