Abstract:
Mastering the influence of pre-slaughter stress on animal products is importance. This study aimed to improve carcass and meat qualities of local chicken from traditional breeding system slaughtered after capture stress. Forty-eight local chickens of 6-7 months divided into four homogenous groups were used. Chickens of group A were not chased before slaughter while groups B, C and D chickens underwent respectively 4, 2 and 0 hours of rest following 15 minutes of capture chase. Carcass, meat organoleptic and technological qualities were evaluated. Wings yield was higher in chickens immediately

In order to justify the use of the drugs Prevention-N-C and Immunavis-A in broiler chickens, the dynamics of the indicators of non-specific resistance of the organism were determined during the experiments, and the indicators of productive qualities were determined based on the results of control slaughter and anatomical cutting of the birds. Against the background of the use of the studied preparations, a stable increase in non-specific resistance of the organism within physiological norms was established. An increase in the productive qualities of poultry was noted, as evidenced by the indic

The author proved the high adaptive abilities of sheep of the Stavropol breed, indicators of meat productivity and meat quality, as well as the possibility of further breeding of this breed in arid conditions. The research was conducted in CJSC "New Life" of the Novouzensky district of the Saratov region. The object of research was purebred rams of the Stavropol breed of different intrabreed productivity types. It was found that sheep of wool and wool-meat types grew equally from birth to weaning from mothers, but at 7.5 months the wool-meat type had a live weight of 4.83% higher compared to w

The purpose of the research was a comparative study of the efficiency of feed use and the productivity of young sheep at different feeding levels, as well as clarifying the norms of metabolic energy and raw protein for growing young rams of Romanov breed with intensive rearing and fattening at the age of 3 to 10 months. Scientifi c and economic experiment has been carried out in the sheep breeding complex of the breeding farm in the OOO Farm “Pokrov” in the Zubtsovsky area in the Tver region. The article presents the results of studying the impact of the spore-forming probiotic “Olin” and the prebiotic “Eсofiltrum” on the meat quality of broiler chicken carcasses of the Ross-308 cross. In the course of the research, it has been found that the inclusion of these preparations in the broiler diet has a positive effect on the studied indicators: the pre-slaughter weight increased by 4.3-5.7%, the weight of the gutted carcass by 4.6-6.2%, the muscle weight 4.8-6.5%, the weight of the loin muscles by 5.7-8.2%. One of the key problems in the technology of sheep fattening for the production of young lamb is obtaining the maximum increase in live weight with the lowest consumption of feed per unit of production. Therefore, the economic efficiency of the production of high-quality, biologically complete lamb first of all depends on the feeding conditions. On the other hand, unsatisfactory feeding and unjustified changes in its individual components can cause significant violations of feeding behavior and biological rhythms of animals. The study hypothesis was that pre-slaughter handling is not conducted in such a way that pigs can be considered humanely slaughtered, nor is it conducive to promoting those properties of fresh meat that could enhance pork quality. The 1st phase of the investigation was aimed at confirming the present compliance level within the prescribed norms. To this end the importance of stunning induction requirements for effective electrical stunning, the welfare implications relating to the pre-slaughter handling of pigs and the stunning and sticking techniques were investigated. IntroductionWe are increasingly being told to make ethical food choices, often by high-profile chefs advocating what they view as ethical consumption habits. Some actively promote vegetarian or vegan diets, with a growing number of high-profile restaurants featuring only or mainly plant-based meals. However, what makes food or restaurant menus ethical is not assessed by most of us using one standardised definition. Our food values differ based on our outlooks, past experiences, and perhaps most importantly, how we balance various trade-offs inherent in making food choices under different circu
