Abstract:
Five soymilk quality-related characteristics were investigated as affected by different grinding, heating, extraction methods and varieties. The five characteristics are (1) protein and solid recovery, (2) trypsin inhibitor activity, (3) antioxidant compounds and antioxidant capacity, (4) soy odor, and (5) isoflavone content and profile. The two varieties were Prosoy and black soybeans. The results show that significant differences existed among the three grinding methods (ambient grinding, cold grinding, and hot grinding). Ambient grinding gave the best protein and solid recoveries. Hot grin

Full-fat soybeans require heat treatment to denature trypsin inhibitors which interfere with proper digestion of the soybean protein. This study examines the heat treatment of soybeans in a continuous particulate-medium conduction processor.<br>Whole soybeans at 13% and 23% moisture were roasted at salt temperatures of 225, 250 and 275$ sp circ$C for residence times of 15, 30 and 60 seconds. <p>The potential use of enzymes in industrial synthesis of epoxidized soybean oil has been limited through the high cost of the enzyme catalyst, in this work we evaluate the effectiveness of chemo enzymatic epoxidation of high oleic soybean oil (HOSBO) using lipase B from <i>Candida antarctica </i>(CALB) on immobilization support Immobead 150 and H<sub>2</sub>O<sub>2 </sub>in a solvent-free system. Additionally, we evaluated the production decay rates for hydrolytic activity and epoxide product formation over consecutive batches to determine half-life of the enzyme catalyst. </p> <p> Batch e
