Abstract:
The cell wall polysaccharides of wheat and rice endosperm represent an important source of dietary fibre with up to 50% of the dietary fibre intake in western diets deriving from cereal consumption. Plant cell walls are complex structures composed of many interlinking polysaccharide chains as well as lignin, phenolics and some proteins. The significance of many of these molecules has yet to be elucidated, however cell walls have been shown to be rapidly modified during growth and differentiation demonstrating that the cell wall is a dynamic structure modified in muro to adapt to changing biolo

All plants are exposed to abiotic and biotic stresses and have developed intricate signalling responses to survive. They respond to cell-structure disruption caused by herbivore probing and feeding by the formation of callose. Callose is a linear homopolymer made up of β-1,3-linked glucose residues with some β-1,6-branches. Plant responses to abiotic or biotic stress share events such as phosphorylation, membrane depolarization, calcium influx and the release of reactive oxygen species such as hydrogen peroxide. These events lead to the up-regulation of several pathways leading to biosynthesis

The purpose of this study was to determine the degree of lipid and vitamin degradation during long-term storage of three whole grains: whole wheat flour, brown rice, and rolled oats. Abstract:
Maize is the principal staple food/feed crop exposed to mycotoxins, and the co-occurrence of multiple mycotoxins and their metabolites has been well documented. Dietary (co)-exposure to mycotoxins is associated with human and animal health concerns as well as economic losses. The present thesis aims to apply a holistic approach for the risk assessment of mycotoxin mixtures in food and feed, i.e. from fungal production and occurrence to harmonised risk characterisation. This was done in three folds. Firstly, available environmental, ecological, and agronomic factors that may affect the relative

The energy analysis aims to compare the performance between productive units and activities, searching an approach to link the energy with the economic, social and cultural parameters in the management of natural resources in economic systems. The main question that arises and guides this dissertation is the analysis of the energy produced and consumed during the production process of major crops in the state of Rio Grande do Sul, namely, rice, soybeans and wheat, opposed to the economic results of such activities. The research was exploratory and based on multi-case studies with the use of li

O interesse pelo uso do fornecimento de nutrientes minerais através das partes aéreas da plantas cultivadas vem aumentando extraordinariamente, não só nos países mais adiantados do mundo, como também no Brasil, especialmente nos últimos anos. The purpose of this thesis was to develop an economical, sustainable, and environmentally friendly straw Medium Density Fibreboard (MDF) process, capable of full-scale manufacturing and to produce MDF of requested quality. The investigated straw was based on wheat (Triticum aestivum L.) and rice (Oryzae sativa L.). In this thesis three different methods were taken for manufacture of straw MDF; (A) wheat-straw fibre was blowline blended with melamine-modified urea-formaldehyde (MUF), (B) rice-straw fibre was mixed with methylene diphenyl diisocyanate (MDI) in a resin drum-blender, and (C) wheat

However, the glutenin and gliadin are not present in rice which is necessary for the gluten net in the bread structure. Bread with rice flour has a lower loaf volume than wheat flour bread. To solve this problem, gluten powder and other additives were added to bread with rice flour to improve bread volume. The most of rice flour added to the bread is raw flour. The addition of gelatinized rice to prepare bread had been studied limitedly. The objective of this research is to study the effect of adding

碩士
國立臺灣大學
農藝學研究所
104
Food security is an important issue for all countries around the world, especially when food production has been challenged under climate change. The food self-sufficiency ratio of Taiwan is around only 33 % weighted by energy in 2013, with importing excessive cereal grains as a serious threat to Taiwan. Also, there is about 10 % artificially greenhouse gas emission generating from agriculture production. Therefore, it is suggested to mitigate the environmental impacts from agriculture production system and increase the degree of food self-sufficiency ratio of
