Full textRestored peatlands are characterized by a uniform vegetation cover and a surface lacking open water bodies. Since pools are known to increase biodiversity in natural peatlands, their creation were investigated for restored sites. So far, we cannot rely on spontaneous recolonization for these created microhabitats. Mosses transfer from natural pool margins to artificial ones is a technique that failed to restore vascular plant communities associated with these microhabitats, although diaspores (rhizome, seeds, plants fragments) are transferred with mosses. Peat erosion and substrate instability around pool margins are factors affecting survival of seedlings. The main objective of this research project was to facilitate Sphagnum and vascular plants establishment around pool margins created in restored peatlands. One way to achieve this was through substrate stabilization using two species of shrubs (transplants of Andromeda glaucophylla Link and Vaccinium macrocarpon Aiton). Results show that ericaceous cover increased survival of Sphagnum along pool margins. Ericaceous shrubs -with or without mosses- also reduced frost heaving compared to the control but did not influence establishment or growth of five herbaceous species sowed around pool margin. The second objective was to evaluate different types of bryophyte seed beds to determine which one increase establishment of three herbaceous species sowed. Carex species have equally germinated on all seed beds, although Scheuchzeria palustris had a higher germination rate on Sphagnum cuspidatum seed beds. Finally, seedlings had a better growth rate on newly restored Sphagnum seed beds than on those well established. According to these results, we recommend transplanting ericaceous shrubs along pool margins as they stabilize substrate and promote Sphagnum growth. The best timing for herbaceous species sowing along pool margins would be in the first restoration process steps.

Full textThe goal of this project was to quantify the impact of sodium reduction and substitution by KCl and MgCl2 on the production of mozzarella cheese. The reduction of NaCl and its replacement by KCl or MgCl2 did not have an impact on the evolution of the growth and the enzymatic activities of thermophiles lactic bacteria in cheese slurry and mozzarella cheese. Mozzarella cheeses were salted in 12 brines solutions. The concentration of salts in the brine solutions had more impact on the cheese than the type of salts used in the brine. Low sodium mozzarella cheese may be produced without decreasing the quality and functional properties of the cheese, but the substitution of NaCl by KCl may induce a flavour defect in fresh mozzarella cheese, but this cheese could be used as food ingredient without modifying the quality of the final product.

Full textThe apple industry in Quebec is under a price management system. The Fédération des producteurs de pommes du Québec (FPPQ) manages a marketing agreement that sets a minimum for the price paid to Quebec apple producers. The floor price is determined by a committee composed of members of the FPPQ, members of the Quebec apple packers association and one representative of Quebec fresh apples buyers. This study predicts the price paid to Quebec producers for four varieties of apples (Cortland–McIntosh– Spartan– Empire) grown in Quebec and sold fresh in Quebec and in so doing will assist the FPPQ in the determination of the minimum price. Specifically, the objective of this analysis is to develop an empirical model that explains the factors that influence the price paid to Quebec producers for fresh apples. This prediction tool will provide a precise prediction of prices therefore facilitating decision by members of the Quebec apple industry. The empirical model includes variables that affect both the demand for apple and the supply of apple. The model includes variables for the stock of apple, the quantity of apples marketed, the imports of apples, the exchange rate and the prices for the four varieties of apples. The empirical model is at the cutting edge of the literature on time series that are jointly determined. The empirical model in this analysis allows for a precise prediction of the price for the four varieties of apple taking into account that the price for one variety affects and is affected by the price for all the other varieties. This approach allows for more precise prediction than under conventional models that do not account for simultaneity. The results of the estimations how that the net imports of apple from the United States and the quantity of apples marketed are the two most important factors that affect the price of apples in Quebec. The model yields a precise prediction for a time horizon below three months.
