Abstract:
Anti-Listeria bacterial starters are highly demanded by the meat industry. Novel bioprotective anti-Listeria starters were searched among Lactobacillus species strains isolated from artisanal sausages. The screening confirmed that anti-Listeria activity is a strain-specific property and yielded only 1 strain (of 36) exhibiting a satisfactory level of inhibition, L. delbrueckii WC0286. This strain was compared with two commercial bioprotective starters, SafePro B-SF-43 and SafePro B-LC-20, in a model simulating in vitro the first step of the fermentation process. The presence of the bioprotective starters did not modify the pH in such a way that could affect the safety or organoleptic properties of the product. Both SafePro B-SF-43 and SafePro B-LC-20 effected an important reduction of Listeria counts (0.56 and 0.72 log CFU g−1, respectively, in 72 h), while the anti-Listeria effect of L. delbrueckii WC0286 was minor (0.15 log CFU g−1). These results discouraged the utilization of L. delbrueckii WC0286 for a challenge test in a pilot salami production, in favor of the best-performing bioprotective starter, SafePro B-LC-20. The test confirmed that SafePro B-LC-20 did not alter the acidification trend of sausages and was capable of inhibiting Listeria, which decreased by 1.21 log CFU g−1. This information is relevant to address research activity toward the development of new bioprotective starters. The data herein presented demonstrate that the efficacy in Listeria control of potentially bioprotective bacterial starters requires further validation in real meat matrixes, possibly by using in vitro meat fermentation experiments to narrow down the list of candidates before pilot scale challenge tests.

Abstract:
The objective of this study was to investigate the effects of low-oxygen storage and 1-methylcyclopropene (1-MCP) on disorders and quality of ‘Empire’ apples. For 2 years, ‘Empire’ apples were obtained from commercial orchards during their harvesting period. After cooling overnight at 3 °C, the apples were treated with or without 1-MCP (1 µL·L−1) for 24 hours and subsequently stored in controlled atmosphere (CA) with 2.5 kPa O2 (+2 kPa CO2) or 1.5 kPa O2 (+1.2 kPa CO2) for 8 months at 1.5 and 3 °C for the first and second year, respectively. In the second year, a third group of the ‘Empire’ apples was also held in respiratory quotient (RQ)-based dynamic CA storage (SafePod) that reached 0.6 kPa O2 (+0.5 kPa CO2), and half of these apples were treated with 1-MCP (1 µL·L−1) for 24 hours at 3 °C upon removal after 8 months. All apples were then evaluated for disorders and quality after 1, 7, or 14 days at room temperature (RT, 23 to 24 °C). Substantial external CO2 injury, flesh browning, and core browning (up to 38% incidence) developed in ‘Empire’ stored in 2.5 and 1.5 kPa O2 during both years of study. Storage in 1.5 kPa O2 reduced flesh browning in the first year and core browning during the second year in apples without 1-MCP, as compared to storage in 2.5 kPa O2. 1-MCP-treated apples stored in 2.5 or 1.5 kPa O2 had higher overall incidence of disorders than similar fruit without 1-MCP. In contrast, there was negligible incidence (0% to 1%) of these disorders in ‘Empire’ apples held in 0.6 kPa O2, regardless of 1-MCP treatment upon removal. Storage in 0.6 kPa O2 also resulted in the greatest fruit firmness retention while at RT for 14 days. This regime can provide flexibility to postpone 1-MCP treatment until after storage, to prevent increased susceptibility to disorders during storage, without compromising fruit quality. However, results from the RQ-based dynamic CA with 0.6 kPa O2 were from a single season, and further research is needed to confirm these observations.

SAFEPOST is an FP7 European project which was active from April 2012 to July 2016 with the goal of a “reuse and development of Security Knowledge assets for International Postal supply chains”, as its full title explains. SAFEPOST addressed threats to postal security by designing and experimenting a sensor network detection system including gas, radiation, Raman spectroscopy and image-based sensors. In 2015, while SAFEPOST was running, the US Postal Service and IBM suggested the idea of applying sensors to the postal infrastructure components to bring the acquired data to the next supply chain level and optimize efficiency and costs, leading to an Internet of Postal Things.In this paper we provide a perspective view on how the SAFEPOST and Internet of Postal Things approaches can be merged and generalized to supply chains involving not only postal items, but also logistic infrastructures and business processes, in order to design an Internet of Safe Postal+Things.

No âmbito do desenvolvimento de um Sistema de Apoio à Decisão para Proteção Portuária contra ataques terroristas - Projeto SAFEPORT, surge a necessidade de identificar qual o custo financeiro da projeção de uma força NATO, contemplando a montagem, operação e desmontagem da força. Sendo Portugal o atual líder de um Programa de trabalho para a defesa antiterrorismo e proteção de portos não NATO – DAT PoW #2, irá ser descrito ao longo deste trabalho de investigação a constituição ótima desta equipa. Esta definição dos elementos e material necessário à missão será elaborada em função da doutrina existente na área da logística operacional, tendo por base a consulta de publicações NATO e nacionais, de modo a obter as necessidades de apoio em termos de manutenção de material e de pessoal para a realização de missões deste caráter. Irão também, ser analisados vários teatros de operações como a Guerra do Golfo, Malvinas, Afeganistão e mais recentemente a missão atribuída à MGP a EUFOR RD Congo, nos quais é percetível a complexidade de planeamento, dos quais se retiram ilações – lições aprendidas que se tornam preciosas para posteriores planeamentos logísticos à escala mundial, no âmbito da projeção de forças da Marinha. Concomitantemente, será elaborado um estudo de caso para uma projeção de uma força portuária para Mindelo e Bissau de modo a fornecer um custo associado à missão para o projeto SAFEPORT. É, ainda sugerido a elaboração de um exercício real como forma de confrontar os resultados obtidos e a atomização de material feita com base nas missões anteriores noutros países e da Marinha de Guerra Portuguesa. Toda esta investigação resultará no produto final com a construção de uma base de dados que aceite os dados necessários à execução da missão e que forneça como saída o custo da missão de um determinado cenário para contributo ao projeto SAFEPORT.<br>In the development of a Decision Support System for Port Protection against terrorist attacks - Safeport Project, the need arises to identify the financial cost of the projection of a NATO force, contemplating the installation, operation and dismantling of force. Portugal is the current leader of a work program for defense against terrorism and protection of ports not NATO - DAT PoW # 2, will be described throughout this research work the constitution of this great team. This definition of the elements and material necessary for the mission will be built around the existing doctrine in the area of operational logistics, based on consultation with NATO and national publications, in order to obtain the support needs in terms of maintenance of equipment and personnel to perform missions of this nature. Will also be analyzed various theaters of operations such as the Gulf War, Falklands, Afghanistan and more recently the task of the MGP EUFOR RD Congo, which is noticeable in the complexity of planning, of which derive lessons - lessons that become precious for further logistical schedules worldwide within the projection of naval forces. Concurrently, will produce a case study for a projection of a force to Mindelo port Bissau and to provide a cost associated with the mission to design Safeport. It also suggested the development of a real workout as a way to compare the results obtained and atomization material made based on previous missions in other countries and the Portuguese Navy. All this research will result in the final product with the construction of a database that supports the data necessary to execute the mission and to provide as output the cost of the mission of a particular contribution to the project scenario SAFEPORT.
