Abstract:
DNA barcoding as a tool for genetic certification and identification of taxonomic membership of organisms has recently become very popular. We have applied DNA barcoding method for taxonomic identification of fish ingredients (salmon, tuna, flying fish roe, shark) in product of Japanese cuisine. We have analyzed 27 samples from 6 retail outlets and 3 restaurants of the city of Voronezh. It was found that for products designated as containing “salmon” in all selected outlets were used as a fillet of Atlantic salmon (Salmo salar), which is considerably less valuable than Pacific salmon. Salmon-trout ( Onchorhyncus mykiss) and salmon ( Salmo salar) are the main raw materials in the cold-smoked fish industry. It is important to prevent the contamination of these ready-to-eat products with Listeria monocytogenes and other ( Listeria spp.) because the temperature used in the cold-smoking process is not sufficient to inactivate these organisms. The presence of Listeria spp. and L. monocytogenes in the cold-smoked salmon and salmon-trout processing chains of three Portuguese factories examined was already confirmed in previous studies. Salmon processing commonly involves the skinning of fish, generating by-products that need to be handled. Such skin residues may represent valuable raw materials from a valorization perspective, mainly due to their collagen content. With this approach, we propose in the present work the extraction of gelatin from farmed salmon and further valorization of the remaining residue through hydrolysis. Use of different chemical treatments prior to thermal extraction of gelatin results in a consistent yield of around 5%, but considerable differences in rheological properties. Fish waste (FW) serves as an underutilized resource in agriculture, especially among small-scale processors. The trimmings and skins generated during the manufacturing of smoked salmon often end up in landfills due to insufficient quantities and logistical challenges to promote upcycling. We tested the feasibility of technology that small-scale processors can adapt to upcycle smoked salmon by-products into fish meal (FM) and fish oil (FO). A two-phase decanter centri
