Abstract:
Introduction. Overweight and obesity are leading risk factors for metabolic syndrome (MS). From 20 to 35% of Russian people have this condition, depending on their age. MS is a precursor of cardiovascular disease, diabetes mellitus, diabetic nephropathy, and nonalcoholic steatohepatitis. Specialized foods (SFs) with hypocholesteremic effects are an important component of the diet therapy for MS patients. Creating local SFs to optimize the nutritional status of MS patients and prevent related diseases is a highly promising area of research. The aim of our study was to develop the formulation and technology of SFs and evaluate their effectiveness in MS treatment. Study objects and methods. The objects of the study were food ingredients and SFs. Safety indicators and micronutrient contents were determined by standard methods, whereas nutritional and energy values and amino acid contents were determined by calculation. Results and discussion. Based on medical requirements, we selected functional ingredients and developed a formulation and technology of SFs with an optimized protein, fat, and carbohydrate composition. The formulation included essential micronutrients and biologically active substances with a desirable physiological effect. Clinical trials involved 15 MS patients aged from 27 to 59. For two weeks, they had a low-calorie standard diet with one serving of SFs in the form of a drink instead of a second breakfast. The patients showed a significant improvement in anthropometric indicators. Blood serum tests revealed decreased contents of total cholesterol (by 16.9%), low-density lipoprotein cholesterol (by 15.3%), and triglycerides (by 27.9%). Conclusion. We developed technical specifications and produced a pilot batch of SFs. The trials showed an improvement of lipid metabolism in the MS patients who were taking SFs as part of their diet therapy.

A balanced diet and intake of high-protein specialized foods plays a key role in expanding the adaptive potential of athletes and affects the effectiveness of the training process. However, a diet composed of traditional food products may not always provide protein intake adequate to the high physiological needs of athletes, and therefore in some cases it is advisable to introduce high-protein specialized foods products. Specialized products for athletes are subdivided, depending on the component composition and individual physiological needs of the athlete, taking into account sports specialization and the phase of the sports cycle, into high-protein, protein-carbohydrate, carbohydrate-protein, high-carbohydrate; carbohydrate-mineral drinks, isotonic, hypotonic, as well as biologically active food additives. The article presents the basic principles of the use of specialized food products in the nutrition of athletes. A brief description of the protein components most commonly used in this product group is given. It has been shown that the intake of high-protein specialized food products that combine various types of proteins provides not only the maximum speed of recovery processes, but also stimulates anabolic reactions aimed at increasing muscle body mass, thereby affecting an increase in sports performance. Biomedical rationale in the development of formulations of innovative specialized food products, the main component of which is protein, should be a leading factor in the use of raw materials and technical base for effective use in the training system of athletes.

Abstract:
Food allergy, which affects about 8% of children and 5% of adults in the world, is one of the major global health problems, and allergen control is an important aspect of food safety. According to the FALCPA (Food Allergen Labeling and Consumer Protection Act of 2004 FDA), more than 160 foods can cause allergic reactions, with eight of them responsible for 90% of all food allergies in the United States, including milk, eggs, wheat, peanuts, soybeans, tree nuts, crustaceans and fish, also known as the Big 8. Most foods that are sources of obligate allergens are heat treated before consumption, which can trigger the Maillard reaction, which produces glycation end products. Symptoms of food sensitization are known to significantly affect the quality of life, gut microbial diversity and adaptation potential. In particular, in athletes, this can be expressed in a decrease in the effectiveness of the training process, which leads to poor endurance and athletic performance. In this regard, it seems relevant to study the effect of the Maillard reaction and AGEs on the immunogenicity of proteins and the possible relationship between these compounds and food allergy, as well as to develop measures to prevent the adverse effect of allergens on the body of a professional athlete and any other consumer.

Abstract:
Studies of quality indicators, nutritional value, vitamin-mineral and amino acid composition of new types of specialized food products: low-protein dry mixes for baking have been carried out. The main organoleptic indicators of the developed low-protein foods are determined. The assessment of the quality of new types of food products according to organoleptic indicators was carried out at a meeting of the tasting commission, the results were graphically drawn using the method of profile analysis of flavor. The analysis of physico-chemical studies has shown that all the developed specialized food products do not contain gluten, have a low protein content, a safe level of phenylalanine and can be recommended for dietary nutrition of patients with phenylketonuria, celiac disease and acute renal failure. In addition, low-protein mixtures contain a significant amount of minerals, such as potassium, phosphorus, sodium and magnesium.

Specialized products can be needed to help meet the nutrition requirements of vulnerable populations, including infants and young children, those who are ill, and older adults. Laws and regulations delineate distinct categories for such products including medical foods or formulated liquid diets, foods for special dietary use (FSDUs), infant formulas, and natural health products (NHPs). Yet, the literature is limited regarding the role and importance of functional and sustainable packaging for specialized products. This perspective review describes these unique product categories and the role of packaging as well as regulatory considerations. Furthermore, reviewed are how waste reduction strategies and emerging legislative/regulatory policies in the United States and Canada may not adequately address the functional packaging requirements for specialized products. The paper concludes by offering perspectives for emerging innovations and policy development for sustainability.

Abstract:
The aim of this study was to develop and validate a scoring system, based on AUDITNOVA, to assess the healthiness of the consumer food environment, considering food availability, price, advertising, and placement strategies. Audited data of 650 food retailers were used to develop, validate, and test the consumer food environment healthiness score. To compose the score, the reference was the Dietary Guidelines for the Brazilian Population. The total and subscores were standardized for a scale from 0 to 100. Construct validity was assessed using the Kruskal–Wallis Dunn tests. Cronbach’s alpha coefficients were calculated to determine the consistency of the scores. The median score was 33.7 (p25 = 26.9; p75 = 42.1). The public and private specialized indoor fresh food markets showed the highest medians; otherwise, bakeries and food retailers with the predominant sale of ultra-processed foods showed the lowest. The score was able to satisfactorily classify the extreme food retailer groups by the predominant sale of fresh or minimally processed foods and the predominant sale of ultra-processed foods. The results of Cronbach’s alpha showed excellent internal consistency (α = 0.91). The score helped to provide an overall assessment of consumer food environment healthiness and was able to classify food retailer groups as healthy and unhealthy according to the degree of processing of the available foods.

Abstract:
Problems of rational and balanced nutrition for children and teenagers attract the attention of scientists around the world. Nowadays, pediatricians, nutritionists, and parents are interested in researches that study the nature and structure of children’s diet. The food market is wide and diverse. However, most foods, including confectionary products for children, do not correspond with the principles of healthy nutrition, food legislation, and the achievements of modern food science. As a result, it is difficult for consumers to select physiologically important products for their children. The government of the Russian Federation has defined the main directions for the development of food products designed for children. The program involves expanding their range and improving their quality and safety. In addition, domestic food industry should be based on echnical regulations, the latest scientific achievements, and global trends in production management and choice of raw materials, as well as in the design of specialized confectionery products and healthy foods. The present paper describes how specialized confectionery products for children of preschool and school age can be improved and fortified with vitamins and minerals. The authors introduce some criteria that distinguish this category from mass products. In this connection, the paper also covers some basic problems of the development of food for children in the Russian Federation. It describes the regulatory legal acts for confectionery products for children in the countries of the Customs Union. The authors believe that there is a need for a single regulatory document to control the development and sales of specialized products for children. The results of the research confirm the relevance of the work performed by the All-Russian Research Institute of Confectionery Industry on the development of State Standards for cookies for preschoolers and schoolchildren.

Abstract:
With the increasing effect of disasters and long term issues on human well-being and economy over the recent years, effective management of humanitarian supply chains has become more important. This thesis work focuses on three problems in humanitarian supply chains where uncertainty is inherent, namely (i) post-disaster debris clearance with uncertain debris amounts, (ii) allocation of a health/humanitarian commodity in a developing country setting with multiple demand types, and (iii) distribution of specialized nutritious foods by a large scale humanitarian organization. In each of the three parts, the problem is formally defined, and a novel optimal solution approach incorporating the inherent uncertainty in the environment and updates is proposed. In cases where optimal models cannot be solved within reasonable time, novel heuristics are developed. Through structural analysis and computational experiments based on real data, the proposed approaches are compared to those that ignore the uncertainty in the environment and/or updates of information as new data becomes available. Using computational experiments, the proposed approaches are compared to those that are applied in practice, and the aspects of the system where performance improvements are more significant are analyzed.

Nos últimos anos, o sistema de franchising, comum em redes de lanchonetes fast-food, vem ganhando maior destaque no cenário econômico mundial, incluindo o Brasil. Esse modelo de negócio, altamente padronizado, além de buscar expandir seu sistema geograficamente, precisa proteger seu maior ativo, a marca. Sua estruturação e gestão criam conflitos naturais de interesses e de assimetria de informações entre franqueador e franqueado, advindos da exploração coletiva de um mesmo ativo e da dispersão geográfica. Nesse sistema é muito importante ater-se às competências centrais. Como consequência, é usual a contratação de prestadores de serviços logísticos (PSL) para a coordenação e controle do fluxo de informações e mercadorias, percebidas como atividades de apoio ao negócio. Esta dissertação propõe uma arquitetura de informação capaz de apoiar os processos operacionais do PSL em estudo e monitorar seus fatores críticos de sucesso.
In the last years, the franchise system, common in fast food chains, is gaining greater prominence in the global economy scenery, including Brazil. This business model, highly standardized, in addition to seek to expand its system geographically, needs to protect its greatest asset, the brand. Its organization and management create natural conflicts of interests and asymmetric information between franchiser and franchisee, coming from the collective exploration of the same asset and geographic dispersion. In this system is very important to stick to the core competencies. As a result, it is usual to hire a third party logistics (3PL) providers to coordinate and control the flow of information and goods, perceived as activities to support the business. This thesis proposes an information architecture capable of supporting operational processes in the 3PL in study and monitor their critical success factors.

La Syrie centrale connaît au début de la période byzantine, et en particulier au Ve et au VIe siècle, un fort mouvement d’expansion des sédentaires vers l’est, qui coïncide avec une importante mise en valeur de ces nouveaux territoires. Comme pour d’autres régions de Syrie et du Proche-Orient à la même époque, un optimum climatique – pourtant déclinant – semble avoir permis la conquête et l’exploitation agricole de nouveaux terroirs dans une zone marginale qui n’avait jusqu’alors connu qu’une occupation sédentaire ponctuelle. La Syrie centrale est caractérisée par des milieux aux potentiels agronomiques très différents, souvent imbriqués. Le peuplement et la mise en valeur y sont soumis à la double contrainte de l’aridité climatique et édaphique, qui s’exerce avec une prégnance croissante vers le sud et l’est. Ces conditions, qui s’améliorent localement à la faveur de niches écologiques, ont permis à des politiques de mise en valeur et à des économies distinctes, souvent complémentaires, de voir le jour.Dans une région où les cités paraissent en grande partie absentes, l’économie repose d’abord sur les villages et sur quelques bourgs qui possédaient manifestement une orientation commerciale spécifique. Aux côtés des agglomérations, et souvent d’autant plus nombreux que les conditions d’implantation sont délicates, des fermes et des monastères s’affirment comme des acteurs économiques apparemment indépendants et souvent prospères. Des entités géographiques relativement homogènes ont donné lieu à une répartition des différentes formes de peuplement et à des économies microrégionales spécifiques. Si l’agriculture vivrière reste la règle, il semble bien cependant qu’on observe une spécialisation locale des productions : culture du blé et accessoirement plantations à l’ouest, oléiculture et peut-être viticulture dans les plateaux basaltiques du nord-ouest et vraisemblablement un élevage spéculatif, qu’on doit probablement attribuer à des populations sédentaires, dans les secteurs sud et est
In Late Antiquity, especially between the 5th and 6th centuries, Central Syria witnessed a strong expansion of sedentary settlements eastward, which coincided with a significant agricultural development of these new territories. As for other areas in Syria and Near-East at the same period, a waning climatic optimum seems to have allowed byzantine population to settle down in marginal areas which barely experienced hitherto sedentary occupation and farm nearly unbroken lands.Central Syria is made up of various landscapes, sometimes deeply nested, with contrasted agricultural potential. Settlements and agricultural exploitation are affected by an increasingly significant climatic and edaphic aridity eastward and southward. These conditions, which may locally improve thanks to ecological niches, enabled specific and often complementary substance strategies to develop.In a country whence cities are virtually absent, villages and a few market towns seem to be at the very root of the regional economy. Along with agglomerations, scattered habitats – namely farmsteads and monasteries –, more numerous under heavy bioclimatic constraints, would appear as independent and apparently prosperous economic players.Homogeneous geographic areas led to specific settlement patterns and different economic orientations. Food-producing agriculture remains the rule, but a local productive specialization may be noticed: mainly wheat production and incidentally plantations westward, olive-growing and maybe wine-growing as well in the north-west basaltic plateaus and presumably speculative livestock exploitation eastward and southward, probably mostly due to sedentary populations

Between the 1970s and 2014, Winnipeg experienced dramatic change in the distribution of healthy food retailers in inner-city neighbourhoods. Winnipeg’s “active core” neighbourhoods identified through Dr. David Gordon’s research on Canadian suburbs (Gordon & Jean 2011), have undergone a decline in accessible healthy food options and a rise in food deserts. This practicum identifies the causes of food retail decline and possible strategies for improving accessible healthy food retail options within Winnipeg’s active core. The changes in the distribution of food retail over time in Winnipeg are displayed through a series of maps: one for 1971 and every five years thereafter until 2011, and the year 2014, using data collected through telephone directories. Spatial data of Winnipeg’s active core is compared with population density data, informational maps, and other statistical data. Finally, various stakeholders, including planners, current and former business owners and other experts are interviewed to discuss these trends, lessons learned, and possible solutions.

This project aims to study the lack of sell out data in the specialized channel of Pet Food industry and develop a business model where this need could be minimized. Given the size of the market with a great number of different customers, a pilot test was conducted using the sell out data from a relevant customer in the market with more than 30 stores over the country. An internal and external analysis were carried out, to better understand the pet food industry behavior and trends and to help to improve the action plan and business model proposal presented in the end. Considering the market threats and opportunities and also the company strengths and weaknesses, this business model intends to answer some of the companies’ needs and goals. The pilot test analysis shows the advantages that sell out data can bring to companies’ decision-making process, and how it would be relevant to efficient market proposals for both sides, companies’ and customers’ side, being this last one, the underlying beneficiary of this model, demonstrating in this case a win win situation. The project ends with the actions plan proposal, monitoring and control actions and the contingency plan to face possible events.
Este projeto visa estudar a falta de dados de sell out do canal especializado, da indústria de Pet Food e desenvolver um modelo de negócio onde esta necessidade possa ser minimizada. Dado o tamanho do mercado com um grande número de diferentes clientes, foi realizado um teste piloto usando os dados de sell out de um cliente relevante no mercado com mais de 30 lojas ao longo do país. Para perceber melhor o comportamento e as tendências da indústria de Pet Food e ajudar a melhorar as ações e o modelo de negócio proposto no final, foi realizada uma análise interna e externa. Considerando as ameaças e oportunidades do mercado e também os pontos fortes e fracos da empresa, o modelo de negócio tenciona dar resposta a algumas das necessidades e objetivos das empresas. A análise do teste piloto mostra as vantagens que os dados de sell out podem trazer ao processo de tomada de decisão das empresas e como seria relevante para propostas de mercado eficientes, quer para o lado das empresas, quer para o lado dos clientes, que vão ser o beneficiário subjacente deste modelo, representando assim uma situação de win win. O projeto termina com uma proposta de um plano de ações, ações de monitorização e controle e um plano de contingência para fazer face a possíveis acontecimentos.

AbstractFood losses in the cool chain, which are mostly caused by temperature deviations, can be reduced by remote monitoring of transport conditions. The project ‘Intelligent Container’ was begun 15 years ago to provide the necessary sensor system, communication and automated evaluation of data. If transport and delivery planning are adjusted according to the actual quality or the predicted remaining shelf life, more products arrive with sufficient quality at the customers. This paper summarizes the project results and highlights current trends in industrial application and research, such as commercial remote container monitoring and standards for data exchange, sub-GHz communication, the increasing availability of biological and computational fluid dynamics models and digital twins. Open research topics include the development of specialized sensors. To overcome obstacles hindering the industrial application of sensor quality monitoring, we suggest a gradual approach, with lower company resources required for the first action points. Food losses can be reduced, even if the complete system, including permanent remote access and adaptive stock rotation, is not applied.

SIDA (Intelligent Food Distribution System, for its acronym in Spanish) is a proposed tool for the distribution of food that can be personalized depending on the medical characteristics of each patient. The target of the tool is to provide foods that contain higher nutrients in the diet set by a hospital. A model of decision trees was based on data from the organization of the United Nations Food and Agriculture Organization (FAO) and used for decision making in the simulated three basic foods based on the diet of Latin American countries typically integrated by rice, potatoes, and lentils from the parameters of fat, energy, and protein, respectively, that contains every type of food.

The parents of children with autism spectrum disorder (ASD) often try alternative treatments to reduce their children's symptoms, and one of the alternatives is a specialized diet. This diet is called gluten-free casein-free or GFCF diet. The GFCF diet has grown popular over the years. These children may be sensitive to the taste, smell, color, and texture of foods. They may limit or totally avoid some foods and even whole food groups. They may have difficulty focusing on one task for an extended period of time. It may be hard for a child to sit down and eat a meal from start to finish. The chapter highlights the impact of maternal nutrition, nutritional deficiencies, and GFCF diet in ASD.

Jack ponders about the possibility of integrating different pattern recognition methodologies in HACCP processes to improve the effectiveness of overall quality control at his company.

Globally $232 billion was spent in the pet industry in 2021 and the compound annual growth rate (CAGR) is estimated to be 4.6%. In the USA alone, $109.6 billion was spent in 2021, and more money is spent annually on pet food and treats than veterinary care or products. Pet parents are increasingly more concerned about the nutritional quality of the foods they feed their animals and their impact on health. Pet food manufacturers are responding to the increased demand for premium food products but importantly, the work of veterinary nutrition researchers is key to ensuring the safety and nutritional sufficiency of commercial and specialized animal diets. Lipids and related nutrients, such as omega-3 polyunsaturated fatty acids, medium-chain triglyceride oil (MCT oil), vitamins D and E and choline play an important role in companion animal health and will be discussed in this session. In addition, a study evaluating the impact of canine diets with different fat contents on risk of pancreatitis will be presented. These reports not only provide more insight into companion animal health but also sheds light on our understanding of how lipids and related nutrients impact human health.

Current paper focuses on the agri-food trade balance representing an up-to-date piece of research due to both its current applicability and broadness. The EU-28 Member States have been overseen in terms of food trade values and, in most of the identified food categories, trade surplus has been recorded. The paper’s preamble points towards the importance of trade in achieving food security, then the specialized literature is quantitatively reviewed highlighting the increasing interest over this topic and, as the last part of the paper, all the 24 food categories are analyzed. The Netherlands, Spain and Germany are some good examples of leading nations in specific food category groups.

The current testing environment for food and feed samples is complex and uses a wide variety of analytical technologies that range from chemical to PCR-based. Whilst these approaches can be deemed fit for purpose in terms of their final analytical result, they tend to be highly specialised and require considerable frontend processing to ensure that the target analyte can be reliably detected and quantified. These combined sample processing and analytical requirements typically impact on testing times and have associated cost implications that must be factored into routine testing and monitoring applications. MSI uses multiple discrete and informative wavelengths covering regions such as the UV and near infra-red spectrum to quickly determine surface colour, texture and possible chemical composition. Compared to traditional molecular biology approaches utilising DNA extraction followed by PCR-based analyses, MSI can simplify and reduce the time/costs associated with sample analysis. It is rapid and non-destructive.
