Sweetener is one of important factors which affect consumer acceptance as it affects the ice cream texture. Research on an alternative and healthier sweetener to substitute sugar in ice cream production has begun to emerge as consumers’ awareness on healthy food has been increasing. One of the promising alternatives was the utilization of Stevia leaf powder as it is known to have no calorie content. In this research, the best proportion of stevia leaf powder to substitute sugar in ice cream production was determined based on its physicochemical properties (viscosity, overrun, melting rate, sug

Stevia rebaudiana (Bertoni) is an emerging crop and alternative source of non-caloric natural sweetness. It is commonly known as candy leaf, sweet leaf, or sugar leaf. It is a medicinal plant, belongs to Asteraceae family. Stevia leaves have been used since ancient times for various purposes throughout the world. Leaves of Stevia produce diterpene glycosides (Stevioside and Rebaudiosides) which are high potency natural sweetener and substitute to sugar, being 250-300 times sweeter than sucrose.

Abstract Introduction With the advent of global climate change, it has become incumbent on governments and industries to monitor and limit greenhouse gas emissions to prevent a catastrophic rise in the average global temperature. The Paris agreement [Paris 2015] aims to lower global greenhouse gas emissions by 40% (in comparison to greenhouse gas levels observed in 1990) by 2030. Methane is a greenhouse gas whose 100- year global warming potential is 25 times that of carbon dioxide [GWP] and whose atmospheric concentration has been increasing since 2007 [Nisbet 2016, Theo Stein, et al. 2021].

Instead of suppressing the vibration by a stiffer design, active control methods may greatly improve the system performance and lead the way to a reduction of the mechanism’s weight.
