Full textIn the present study was added Bio Rich culture (composed by Lactobacillus acidophilus, Bifidobacterium lactis and Streptococcus thermophilus) to goat and cow milk and a mix of goat and cow milk (1:1). It was gotten whole fermented milk with good acidity, fat percentage, and enough probiotic bacteria’s growth (Lactobacillus acidophilus 107 cfu/ml, Bifidobacterium lactis 106 cfu/ml), besides Streptococcus thermophilus 109 cfu/ml. All of the fermented milks agreed with the safety food norms. The parameters of the process were: added culture (1% in goat and in cow and goat mix milk, fermentation temperature 42º C; 2% in cow milk and fermentation temperature 39º C); final pH of 4,5. The time of process with cow, goat, and cow and goat mix milk was: 4 hours, 7 hours and 4 hours respectively. Keywords: goat and cow milk, process.

Full textAdemás de la exposición a los SPD mediante el agua de consumo, otra forma de exposición la constituye el uso recreacional del agua de las piscinas. En estas aguas se pueden llegar a encontrarse niveles mayores de SPD, en comparación a los del agua de consumo; este incremento en los niveles de SPD se debe a factores como la recirculación del agua, un mayor tiempo de contacto con el desinfectante y la presencia de precursores orgánicos provenientes de los bañistas.
Numerosos estudios epidemiológicos han investigado los efectos adversos que la exposición a estos SPD puede tener en la salud humana, encontrando una posible asociación entre el incremento en el riesgo de cáncer de vejiga y la exposición a estos subproductos.
Por lo tanto, con la finalidad de incrementar la información sobre el potencial genotóxico de algunos SPD, se seleccionaron 11 SPD (bromonitrometano, tricloronitrometano, tribromoacetaldehido, hidrato de cloral, ácido mucobrómico, ácido mucoclórico, nitrosodimetilamina, nitrosodietilamina, ácido yodoacético, ácido bromoacético, ácido cloroacético), los cuales se evaluaron en los ensayos del cometa, de micronúcleos y de linfoma de ratón. En función de los resultados obtenidos, la mayoría de los SPD seleccionados pueden ser considerados como genotóxicos (ensayo del cometa), aunque tan sólo uno ha inducido daño clastogénico/aneugénico (ensayo de micronúcleos) y otro se ha mostrado como mutagénico (ensayo de linfoma de ratón).
Además, la evaluación del efecto genotóxico del agua de piscina ha corroborado que el proceso de desinfección adicional incrementa su potencial genotóxico, al tiempo que se ha encontrado una posible asociación entre los niveles de ciertos trihalometanos en el aire exhalado de usuarios de piscina y los incrementos en los marcadores de daño genotóxico (frecuencia de micronúcleos).
Disinfection by-products are chemical compounds generated from the reaction of the disinfectant, usually chlorine, with natural organic and inorganic matter present in the source water during the disinfection process. Each water treatment plant has a unique profile of disinfection by-products (DBPs) depending on many factors such as the disinfectant used, secondary disinfectant, pH, temperature, natural organic and inorganic matter content, etc.
In addition to the ingestion exposure to DBPs by the consumption of water, the recreational use of swimming pools is another important type of exposure to DBPs. In this water, the levels of DBPs are greater than the ones detect in tap water; this increase in DBPs levels is due to factors like the recirculation of water, the greater time of contact with the disinfectant and the presence of many organic precursors originating from the swimmers.
Several epidemiologic studies have investigated the adverse effects of the DBP exposure in the human health, finding a possible association between the increase in the risk of urinary bladder cancer and the exposure of these by-products.
Therefore, with the purpose of increasing the information of the genotoxic potential of some DBPs, we selected 11 DBPs (bromonitromethane, trichloronitromethane, tribromoacetaldehyde, chloral hydrate, mucobromic acid, mucochloric acid, nitrosodimethylamine, nitrosodiethylamine, iodoacetic acid, bromoacetic acid, chloroacetic acid) which were evaluated in the comet assay, the micronucleus test and the mouse lymphoma assay. According to our results, almost all of the selected DBPs can be considered as genotoxic agents (comet assay), but only one DBP induced clastogenic/aneugenic damage (micronucleus test) and another DBP was considered as mutagenic (mouse lymphoma assay).
The evaluation of the genotoxic effect of swimming pool water has corroborated that the additional disinfection process increased the genotoxic potential of swimming pool water, and also it has been found a possible association between the presence of some trihalomethanes levels in the exhalated air of swimming pools users, and the increase in the biomarkers of genotoxic damage (frequency of micronuclei).

Full textThe aim of this study was to analyze those components related with dairy milk production in the Investigation Milk Centre of I.V.I.T.A. Station El Mantaro. This study took datas from sources which came from the I.V.I.T.A. Station El Mantaro, Jauja (Junín). The data was managed with relational bases in SQL and then were exported to a statistical analysis program STATA 8.0â (Stata Corp). The distribution of the monthly production did not follow the normal curve. There were important statistical differences which depend on the milking moment (morning vs. evening). The different between dairy milk the daily dairy milk production was 6.88 litters more in the evening than in the morning, for the whole period of study (2 years). Others significant variables included day of the week, month, year and the workers who performed the milking had. For the whole period, July was the month that showed the lowest dairy production. There was a variation in the dairy production between months that ranged from 23 to 133 litters of milk. For the year 2001 only a difference of 51.34 litters less than the year 2002 was found.

Full textThe liquid feed (LF) has been used in swine production for several decades obtaining satisfactory production results compared with dry feed. One of the factors that affect those results is the dilution ratio of the mixture. Moreover, the maximum economic benefit of the LF systems is obtained when cheaper by-products are introduced into the diet. Effective utilization of by-products is hampered by its high variability, logistical supply difficulties, scarce nutritional knowledge and practical conditions of use in swine nutrition. In this context, the main objective of this PhD Thesis has been to contribute to optimize the performance of LF system installed in a commercial farm and study the nutritional value of near to the farm by-products for use in liquid feeding fattening pigs. To this purpose, four studies were conducted. In the first study (Chapter 4) several agro-industrial by-products were identified and those most promising were selected. Among selected products, mayonnaise and almond meal were introduced into the LF diets at low levels of inclusion (7.75% and 10%, respectively) and growth performance of pigs and economic benefits of feed costs were assessed. It was observed that the introduction of mayonnaise reduced feed costs by 15% and by 10% for almond meal, without significantly impairing performance results. In order to assess in more detail the nutritional value of some by-products selected in Chapter 4, there were carried out in vivo digestibility trials to evaluate the energy content and the maximum level of inclusion (in some cases) of all by-products (Chapter 5) . The results of in vivo digestibility by difference method of organic matter (OMd) and energy (GEd) of the liquid bakery by-product, brewers grains, hominy feed and high-moisture corn using a 50% of by-product inclusion into diet and at water-to-feed ratio 2.7:1 (water:dry matter), were not altered by the inclusion level of by-product into the diet. On the other hand, OMd and GEd of mayonnaise, almond meal, cocoa meal and kiwi was studied by regression method through four levels of inclusion (2, 4, 7 and 10%; and 4, 8, 12 and 16% for kiwi), being considered less conventional and riskier by-products. The evolution of ether extract digestibility suggested that the maximum level of inclusion of mayonnaise in the diet should not exceed 8.5%; or 6.1% for almond flour. The evolution of the digestibility of the other nutrients (i.e. Crude Fiber) recommended using cocoa meal and kiwi with caution. In the third study (Chapter 6), it was decided to seek alternative methods, less costly and laborious to than using live animals, and to perform prediction equations for organic matter and energy digestibility and energy content, digestible energy and metabolizable energy of agro-industrial by-products assessed in Chapter 5. Finally, in the last study (Chapter 7), it was evaluated in animals of different ages a wide range of dilution ratios (0:1, dry feed, and 0.6:1, 1.5:1, 2.1:1, 2.7:1 and 3.5:1) to determine those that optimize the digestibility of the ration and, to a lesser extent, performance results. It was shown that the lower dilutions (ratio 1.83:1, water:feed) are more appropriate for young animals and higher ratios (ratio 2.7:1) for fattening pigs.
