Nährwert von Trockenschinken und luftgetrockneten Rohschinken (Pršut) Aufgrund des hohen Gehalts an Speisesalz und Cholesterin sowie Rauchbestandteilen galten getrocknete Fleischprodukte als Nahrungsmittel, die sich auf die menschliche Gesundheit ungünstig auswirken, weil sie zur Entstehung von Arteriosklerose und hohem Blutdruck beitragen. Trockenschinken und lufgetrocknete Rohschinken sind aber Lebensmittel tierischen Ursprungs, die reich an Nährstoffen sind. Sie stellen eine wertvolle Quelle von Proteinen und Fetten dar, die infolge der Wirkung von endogenen Proteasen und Lipasen teilweise abgebaut werden. Sie stellen eine besonders wertvolle Quelle von freien Aminosäuren (essentiellen und nicht essentiellen) und Fettsäuren dar. Die Zusammensetzung der freien Aminosäuren hängt vom Genotyp der Schweine ab (enzymatische Muskelzusammensetzung), der Technologie der Verarbeitung und der Dauer der Reifung von Trockenschinken und luftgetrockneten Rohschinken. Die Zusammensetzung der freien Fettsäuren hängt größtenteils von der Fütterung der Schweine (Futterzusammensetzung), dem Halterungssystem der Schweine (offen, geschlossen), aber auch vom Genotyp der Schweine ab. Das Verhältnis zwischen den mehrfach ungesättigten Fettsäuren (PUFA) und den gesättigten (SFA) Fettsäuren unterschreitet am häufigsten die empfohlenen Grenzwerte (0,4-1), während das Verhältnis zwischen dem Gesamtanteil von n-6 und n-3 Fettsäuren die empfohlenen Werte der WHO übersteigt (2003). Infolge des hohen Anteils an Speisesalz (Natrium) müssen Menschen, die an Herzgefäßkrankheiten und Bluthochdruck leiden, beim Verzehr von Trockenschinken und luftgetrocknetem Rohschinken aufmerksam sein. Trockenschinken und luftgetrocknete Rohschinken sind einer wertvolle Quelle von Mineralstoffen, in erster Linie von Zink, Eisen und Selen sowie von Vitaminen, insbesondere aus der B-Gruppe der Vitamine. Wegen des hohen Anteils an Nährstoffen in leicht verdaulicher und freier Form eignen sich Trockenschinken und luftgetrocknete Rohschinken in erster Linie für die Ernährung von Sportlern.

Abstract:
It is known, that the existence of dead ends (of arbitrary depth) in the Cayley graph of a group depends on the chosen set of generators. Nevertheless there exist many groups, which do not have dead ends of arbitrary depth with respect to any set of generators. Partial results in this direction were obtained by Šunić and by Warshall. We improve these results by showing that abelian groups have only finitely many dead ends and that groups with more than one end (in the sense of Hopf and Freudenthal) have only dead ends of bounded depth. Only few examples of groups with unbounded dead end depth are known. We show that the Houghton group H2 with respect to the standard generating set is a further example. In addition we introduce a stronger notion of depth of a dead end, called strong depth. The Houghton group H2 has unbounded strong depth with respect to the same standard generating set.

Abstract:
The aquatic oligochaete fauna of Montenegro was recently studied in order to improve the knowledge of this group in the Balkan region. This study was carried out on sediments collected from 70 sampling sites (the Black Sea and the Adriatic Sea drainage basins) during three years (2005–2008). Forty-one species were identified, from seven following families: Naididae, Enchytraeidae, Haplotaxidae, Lumbriculidae, Lumbricidae, Criodrilidae and Branchiobdellidae (exclusive of Naidinae and Pristininae). Sixteen of them represent first record for the Montenegrin oligochaete fauna: Embolocephalus velutinus, Ilyodrilus templetoni, Psammoryctides deserticola, Spirosperma ferox, Tubifex ignotus, Bathydrilus adriaticus, Bothrioneurum vejdovskyanum, Rhyacodrilus coccineus, Cernosvitoviella atrata, Enchytraeus buchholzi, Mesenchytraeus armatus, Haplotaxis gordioides, Rhynchelmis limosella, Stylodrilus heringianus, Tatriella slovenica and Trichodrilus strandi. The list of species from the subfamilies Naidinae and Pristininae was published previously (Šundić et al. 2011), and it comprises 36 species. Altogether, the present study and literature data show that Montenegrin aquatic oligochaete fauna consists of 77 species. Concerning similarity, values of Jaccard’s index are the highest between Montenegrin and Serbian oligochaete fauna (57 %), and the lowest between Montenegrin and Albanian oligochaete fauna (27.77 %). Species richness estimators (Mao Tau, Uniques Mean, Chao 1, Chao 2, Jack 1, Jack 2, Bootstrap, ACE and ICE) indicate that findings of new oligochaete species in Montenegro are expected.

Physikalisch-chemische und sensorische Eigenschaften von Schinken von schwarzen slawonischen Schweinen und Kreuzungen zwischen dem großen Yorkshire, der schwedischen Landrasse und dem Duroc-Schwein Es wurden die physikalisch-chemischen Eigenschaften (pH-Wert, aw, Farbe (L*, a*, b*), der Gehalt von Na Cl, die chemische Basiszusammensetzung) und die sensorischen Eigenschaften (Aussehen des Querschnitts, Geruch, Festigkeit, Geschmack) von slawonischen Schinken von schwarzen slawonischen Schweinen (n = 10) und Kreuzungen zwischen dem großen Yorkshire, der schwedischen Landrasse und dem Duroc-Schwein (n = 10) untersucht, die bis zu einem Gewicht von 130 Kilo gezüchtet wurden. Die sensorischen Eigenschaften der Schinken: Aussehen des Querschnitts (1 – 8 Punkte), Geruch (1 – 10 Punkte), Festigkeit (1 - 10 Punkte) und Geschmack (1 - 15 Punkte), wurden durch einen Ausschuss bewertet, der aus fünf Mitgliedern zusammengesetzt war. Das Schinkenfleisch (M. semimembranaceus) der schwarzen slawonischen Schweine hatte im Vergleich zum Schinkenfleisch der Kreuzungen eine geringere Helligkeitsstufe L* (35,50 : 39,35), eine größere Stufe der Rötung a* (18,60 : 17,00), einen geringeren Anteil von Rohproteinen 27,55% : 29,95%), einen größeren Anteil von Fetten (10,50% : 7,25%) und bessere Bewertungen der sensorischen Eigenschaften: Geruch (9,00 : 8,50), Festigkeit (8,45 : 8,00) und Geschmack (14,00 : 12,00). Bei den restlichen untersuchten Parametern (aw, b*, Wasser- und Ascheanteil) wurden keine bedeutenden Unterschiede zwischen den untersuchten Gruppen festgestellt.

Abstract:
Cilj rada je bio istražiti utjecaj različitih vrsta soli (sitne kamene i krupne morske) na proizvodni kalo i fizikalno-kemijska svojstva (masene udjele vode, masti, proteina, soli te pH vrijednost i aw) Slavonske šunke tijekom 238 dana proizvodnje. Tijekom tradicionalnog postupka proizvodnje, kontinuirano je svakih 7 dana praćen proizvodni kalo, dok su fizikalno-kemijska svojstva određena na početku proizvodnje (1. dan), na kraju procesa soljenja (28. dan) te na kraju proizvodnje (238. dan). U prvih 7 dana soljenja veći proizvodni kalo od 2,46% imali su uzorci soljeni sitnom kamenom soli, dok su na kraju faze soljenja (28. dan) veći proizvodni kalo od 5,56% imali uzorci soljeni s krupnom morskom soli. U daljnjim proizvodnim fazama (dimljenje, sušenje i zrenje) proizvodni kalo rezultat je procesa dehidratacije i više nije funkcija različitih vrsta soli. Na kraju proizvodnog procesa proizvodni kalo uzoraka Slavonske šunke soljene krupnom morskom soli iznosio je 37,41% što je statistički značajno više (p < 0,05) u odnosu na 36,32% kod uzoraka soljenih sitnom kamenom soli. Maseni udjeli vode i aw uzoraka šunki soljenih s obje vrste soli smanjivali su se tijekom cijelog proizvodnog procesa (p < 0,05), dok su se maseni udjeli bjelančevina, masti i pepela povećavali. Rezultati potvrđuju i statistički značajnu razliku (p < 0,05) u aw, masenim udjelima bjelančevina, masti pepela i vode s obzirom na vrstu soli.

German origin natural scientist Johann Gottlieb Georgi participated in the Orenburg Expedition, organized by the Imperial Academy of St. Petersburg. Between 1770 and 1774 he travelled in the Middle and Lower Volga Region, the Orenburg area, Bashkiria, the neighbourhood of Lake Baikal and reached as far as the Russian-Chinese-Mongolian border. He summarized his experiences of the journey in his book titled Bemerkungen einer Reise im Russischen Reich im Jahre 1772-1774 . A few years later he published an extended version of the Bemerkungen , titled Beschreibung aller Nationen des Russischen Reichs , a richly illustrated volume describing in detail the customs and religious life of 80 peoples in Russia. One of these is the Udmurts. Georgi tells us about the living circumstances, clothing, wedding and burying customs of the Udmurts and describes very thoroughly their gods, ghosts, holidays, sacrifices, also providing us with the Udmurt names for them. He writes about the main gods (Inmar, Kildisin, Mu-Kildisin, Šundi mumi) , the evil god (Šajtan) , the guardian spirits and the evil spirits (Voršud, Vu murt, Palas murt, Ubir, Albaste) . He also describes the sacrificial places (keremet and lud, kuala, mudor) , writes about the sacrificial (vöś, vöśan) ceremony and about the mediators (tuno, uťis, vedin) between earth and heaven. He also mentions some special events like the spring sowing and the summertime and autumn harvests.

We prove that the group of almost-automorphisms of the infinite rooted regular [Formula: see text]-ary tree [Formula: see text] arises naturally as the Thompson-like group of a so-called [Formula: see text]-ary cloning system. A similar phenomenon occurs for any Röver–Nekrashevych group [Formula: see text], for [Formula: see text] a self-similar group. We use this framework to expand on work of Belk and Matucci, who proved that the Röver group, using the Grigorchuk group for [Formula: see text], is of type [Formula: see text]. Namely, we find some natural conditions on subgroups of [Formula: see text] to ensure that [Formula: see text] is of type [Formula: see text] and, in particular, we prove this for all [Formula: see text] in the infinite family of Šunić groups. We also prove that if [Formula: see text] is itself of type [Formula: see text], then so is [Formula: see text], and that every finitely generated virtually free group is self-similar, so in particular every finitely generated virtually free group [Formula: see text] yields a type [Formula: see text] Röver–Nekrashevych group [Formula: see text].
