Abstract:
Microwave technology (MW) was applied to musts and stems over three consecutive vintages in Cabernet Sauvignon, Merlot and Syrah wines from California (USA). Stems were added to musts at a rate of 50 and 100% (50% Stems and 100% Stems), either as untreated or after MW (50% MW Stems and 100% MW Stems). Stem additions lowered ethanol (up to 1.15% v/v reduction), but increased pH (up to 0.16 units) and the tannin content of the wines. In 2016, tannins increased by 103% (100% Stems), and 124% (100% MW Stems). In 2017, tannins increased by 39% in stem-added Merlot wines and by 63% (100% Stems) and 85% (100% MW Stems) in Syrah wines. In 2018, tannins in Syrah wines increased by 250% (100% MW Stems) and by 743% (100% Stems). Wines made with 50% Stems exhibited intermediate tannin contents. Must MW increased flavonols (up to 278% in Syrah wines), monoglucosylated, acylated and anthocyanin-derived pigments. Stem additions reduced wine color and polymeric pigment formation in Syrah. Must MW decreased the perception of coarseness and herbaceous flavors in Merlot, whereas stem additions increased herbaceous aromas in Syrah. Despite higher tannin contents in stem-added wines, no concomitant increases in astringency were observed.

Abstract:
The São Francisco Valley, in Brazil, is a region with harvest of grapes more than once a year due to the peculiar climate condition, being important to evaluate new agronomic variables for the vines and elucidade its influence on wine quality and nutritional compounds. Syrah vines grafted on different rootstocks (IAC-313 and Paulsen 1103) were cultivated in semi-arid conditions in Petrolina, PE, Brazil, and the quality of the wine was evaluated for color, sugars, acidity, phenolic compounds, antioxidant activity and the presence and contents of eight biogenic amines by HPLC (putrescine (PUT) dihydrochloride, spermidine (SPD) trihydrochloride, spermine (SPM) tetrahydrochloride, agmatine (AGM) sulfate, cadaverine (CAD) dihydrochloride, serotonine (SRT) hydrochloride, histamine (HIM) dihydrochloride, tyramine (TYM), tryptamine (TRM) and 2-phenylethylamine (PHM) dihydrochloride). For total sugars, color and antocyanins content in the evaluated wines, no effect from the rootstock was observed. For the wine produced with grapes from Syrah wines grafted on Paulsen 1103 rootstock, was observed the presence of putrescine, agmatine and phenylethylamine with the contents of 8.04, 0.15 and 0.22 µg mL-¹, respectively. The use of the rootstock IAC-313 on Syrah vines at the São Francisco Valley semi-arid conditions, Brazil, resulted in wines with a statistical lower pH and soluble solid contents and higher antioxidant activity and phenolic contents, with only the presence of putrescine of the studied biogenic amines.

Abstract:
Aim: The aim of the study was to investigate the stilbene composition of grapes and wines of the Vitis vinifera cultivars Tannat, Marselan and Syrah cultivated in Uruguay. The effects of delaying the harvest on stilbene concentrations were determined, and the stability of stilbenes during wine storage was assessed.Methods and results: Stilbene concentrations were determined in the grapes and wines of two vintages (2015 and 2016) and two harvest dates for each cultivar. Vinification was carried out by traditional maceration, and samples of the wines of each vintage were analysed in the period from 3 months after devatting to up to 24 months later. After solid-phase extraction, stilbenes were identified and quantified by HPLC-ESI-MS/MS using a multiple reaction-monitoring approach. In the grape berries, stilbene concentrations were between 1.6 and 7.7 mg/kg, depending on grape cultivar, growing season, and in Syrah, harvest date. In the wines, stilbene concentrations were initially between 0.9 and 5.0 mg/L, being highest in Syrah, lowest in Marselan, and intermediate in Tannat. Stilbene concentrations in the Marselan wines were lower than expected based on stilbene concentrations in the grapes from which they were produced, suggesting poor extraction during winemaking. Total stilbene concentrations remained very stable during the analytical period.Conclusions: Delaying the harvest does not necessarily increase the stilbene content of grapes, but it can do so significantly, as shown for Syrah. For some grape cultivars, such as Marselan, poor extraction of stilbenes during winemaking can limit their concentrations in the resulting wines.Significance and impact of the study: The results of this study show the relevance of grape cultivar, degree of maturity and storage time may have into stilbenes. They provide reference data on the stilbene composition of grapes and wines produced under Uruguayan winegrowing conditions. <p style="text-align: justify;">Wine contains natural plant phenolic antioxidants that may protect circulating lipoproteins from oxidative damage. By inhibition of the copper-catalyzed oxidation of LDL we determined the activity of thirteen Rhône coast wines exclusively from Syrah and Grenache varieties. About 50 p. cent of the wines were made with a long maceration process. Major monomeric phenolic compounds and procyanidin dimers were analyzed in each sample by HPLC and correlated with relative LDL antioxidant activity. Correlations obtained can be grouped in 3 classes: catechin (r = 0.75), procyanidins, BI, B2, B3 (r = 0.43-0.55), malvidin-3-glucoside and cyanidin (r = 0.43), gallic acid, myreeitin, rutin (r = 0.2-0.4). On the same basis total phenol contents of wines gave a correlation with LDL antioxidant activity of r = 0.72. Comparison, at the same total phenol concentration, with different red California wines shows that antioxidant activity of French Syrah and Grenache range between that of Merlot (56-65 p. cent) and Cabernet Sauvignon (37-45 p.cent). In contrast Syrah wines made with a short extraction process gave lower inhibition of LDL oxidation of 16 p. cent which is less than white Califomia wines averaging 36 p. cent. Activity of each wine phenolic compound can play a role in protecting LDL against oxidation.</p>

Abstract:
Ethanol is one of the major components of wine, which has a substantial impact on its sensory characteristics. However, data concerning consumer response to ethanol or changes in ethanol remains limited. The aim of this study was to determine the threshold ethanol concentrations beyond which ethanol lowering becomes undesirable in Chardonnay and Syrah wines using the consumer rejection threshold (CRT) methodology. Base wines from these two cultivars were first dearomatised and fully dealcoholised using spinning cone column technology. Then, control wines with a similar ethanol content to the base wines (13.8 and 13.5 % v/v for Chardonnay and Syrah respectively) and wines with lower ethanol contents were reconstituted by mixing the final beverage, the aroma fraction, food grade ethanol and distilled water. CRT values were determined as 2.8 % v/v for Chardonnay and at 7.0 % v/v for Syrah. These particularly low and unexpected concentrations indicate that consumer sensory liking might not be necessarily driven by ethanol concentration, especially for white wines. However, the post-evaluation questionnaire showed that consumers were expecting a high minimal ethanol content for quality wines (10.9 % v/v ± 1.2 and 11.7 % v/v ± 1.5 for white and red wines respectively) and had a limited experience with low and dealcoholised wines. Overall, our data, which are still preliminary and deserve to be validated using different base wines with a larger number of consumers, show that consumers would not necessarily be refractory from a sensory standpoint to the consumption of low ethanol beverages made from wine. Our findings strongly encourage professionals from the wine industry and public authorities to raise awareness about the increase in quality of such products and their benefits for human health.

Abstract:
The objective of this study was to evaluate the effects of storage time and bottle color on the phenolic compound profiles of Syrah red and sparkling Moscatel wines stored for 12 months in green, amber, and clear bottles. The profile of the phenolic compounds and their antioxidant activity in vitro were determined. Commercial wines were bottled in an automatic filling machine and closed with natural cork. After the bottling process, the wines were stored vertically on shelves which received natural light indirectly (±8 h/day), at temperatures which varied from 24 to 30 °C and relative humidity 40–65%. The wines were analyzed every three months over one year. Several phenolic compound families were quantified through reversed-phase high performance liquid chromatography (RP-HPLC) coupled to diode-array detection (DAD) and fluorescence detection (FD). The different bottle colors studied had not influenced the evolution of the sparkling Moscatel and Syrah red wines. The main variations obtained were related to storage time. The main changes were observed in the Syrah wine, where storage time was associated with an increase in hue (h*), decrease in catechin and epicatechin, and most notably, a decrease in the anthocyanin malvidin 3-glucoside. The sparkling Moscatel wine did not show important changes in most phenolic compounds; however, the catechin increased significantly during storage and this increase was similar in bottles of all colors. In general, the wines were stable in relation to the antioxidant activity in vitro.

O sistema de irrigação utilizado foi o gotejamento, com emissores espaçados em 0,5 m na linha de plantio, com vazão de 2,5 L.h-1. O delineamento utilizado foi o de blocos casualizados, com 3 tratamentos e 4 repetições. In order to study the effect of mechanical pruning and the addition of organic amendments to the vineyard in Syrah wine quality, three vineyards from different viticultural areas were tested – Quinta do Côro (Tejo), Quinta do Gradil (Lisboa) and Herdade de Rio Frio (Setúbal). In order to evaluate the influence of the treatments applied the wines were subjected to a physicochemical analysis as well as chromatic characteristics determination, total nitrogen content, mineral and heavy metals and other elements analysis and the tasting panel performed sensory analysis to determine if the differences were perceived. The results show that mechanical pruning led to wines with lower alcohol content, color intensity, total anthocyanin content as well as less tannin power and inferior tannin content. This type of pruning technique also led to lesser accumulation of minerals and lower levels of some heavy metals. In the sensory analysis, the wines from mechanically pruned vines were less appreciated by the tasters receiving worse scores, including lower global appreciation marks. The organic amendment that led to lower overall results in the studied parameters was sewage sludge, it reduced alcoholic content and color intensity as well as total anthocyanin content while grime and the control plots led to better results

Abstract:
Syrah is an important wine grape in California but is potentially difficult to manage in the vineyard due to its excessive vigor. Vigorous grapevines require more labor for canopy management and tend to create excess shade, decreasing fruit quality. Winter pruning level, shoot thinning and leaf removal influence the overall density of the canopy and the subsequent degree of shade in the fruit zone. An experiment was conducted to assess the effects of two pruning levels with three degrees of labor-intensive canopy management techniques on berry maturation rate and harvest berry parameters for two growing seasons. In 2008, repeated measures analysis showed no significant effects of severe pruning, shoot thinning or both sides leaf removal on maturation rate of performance indicators. At harvest 2008, severe pruning caused a decrease in yield/meter trellis and Ravaz index. In 2009, repeated measures analysis showed significant effects of severe pruning increasing brix, pH and sugar to acid ratio while shoot thinning and both sides leaf removal had no significant effects on maturation rate of performance indicators. At harvest 2009, severe pruning increased brix, pH, tannin, anthocyanins, phenolics, color density, potassium, amino acid % of yeast assimilable nitrogen (YAN), and the following ratios: sugar/acid, amino acid/ammonium, tannin/anthocyanins and malic/tartaric acid. Additionally, severe pruning decreased tartaric acid, yield/meter trellis, ammonium % of YAN and Ravaz index. The findings presented in this thesis suggest that severe pruning could be used as a tool in viticultural areas with short growing seasons because of the increased ripening speed observed. However, because severe pruning generally increases berry size which is negative for vinification, it should be studied further with irrigation and management practices that decrease berry size.

Los resultados obtenidos muestran que la concentración de estos compuestos es máxima al inicio de la maduración, disminuyendo conforme se acerca el momento de la vendimia. La cantidad de proantocianidinas en los vinos depende tanto de la variedad como de la técnica enológica aplicada. Tiempos de maceración largos y técnicas como la maceración prefermentativa en frío o el uso de enzimas de maceración promueven una mayor extracción de proantocianidinas, aunque las de las uvas de la variedad Syrah son mucho más fácilmente extraíbles que las de Monastrell, en igualdad de condiciones.
In this thesis, skin and seed proanthocyanidins of Monastrell, Cabernet Sauvignon and Syrah grape varieties have been studied, as well as their transfer from grapes to wine and the effect of some oenological techniques in modulating their extraction. The results show that the concentration of these compounds was maximum at the beginning of ripening, decreasing up to moment of harvest. The concentration of proanthocyanidins in wines depends both on the variety and the applied oenological technique. Long maceration times and techniques such as cold soak or the use of maceration enzymes promote a large extraction of proanthocyanidins, although, under similar conditions, the proanthocyanidins of Syrah grapes are more easily transferred to must/wine than those of Monastrell grapes.

With the aim of studying the mechanization of vine pruning while still maintaining plant vigor and fertility of the soil, this study has tested the use of different types of fertilization in mechanical and manual pruning, in two different estates. The vinification of the grapes took place in the cellar of the Instituto Superior de Agronomia where, after natural clarification and stabilization the wines were bottled and subsequently analyzed. The analyzes were made on each of the different samples and consisted in the following parameters: Alcohol, Total Dry Extract, Total Acidity, Total Polyphenols, Total Anthocyanins, Color Intensity, Color tone, as well as the levels of Iron, Potassium, Calcium and Copper. In terms of results, the wines showed very similar parameters with small changes in values, but when subjected to a statistical analysis the results revealed not statistically significant, with the exception of Color tone and Potassium, although with very close values as well. With regard to sensory analysis it was observed a consistency in terms of results with the chemical analyzes, and it was also not evident a standard differentiator between the samples, confirmed by the variance analysis performed.

The practical viticulture is the application of a set technical management of vinetards, in order to produce the maximum quantity of grape without reducing their enological potential required by certain markets, with minimum cost. These practices derived from scientific knowledge about the biology and physiology of plants in relation to the terroir . One of the main factors that interference in the potential for developing a vineyard is the management of the canopy and cultivation techniques, such as cluster thinning. This study aimed to learn about the physiological and technological maturity of the clusters of Malbec and Syrah grapevines, produced in altitude regions of Santa Catarina State. The vineyard has been submitted to diferente levels of cluster thinning made at the véraison , in order to establish criteria that will help determine the most appropriate managent for the preparation of fine red wines in áreas above 900 meters in altitude. The experimente was carried during 2005/07 vintage at the Villa Francioni Vineyards in the city of São Joaquim (28° 17 39 S, 49° 55 56 W), at altitude of 1360 meters with cvs. Malbec and Syrah grafted on Paulsen 1103. The levels of cluster thinning, adjustedat the véraison , correspnded to maximum production of each, and percentage reductions in their productivity in 15%, 30% e 45%. From results found it is concluded that in altitude regions the practice of cluster thinning, estimating a production of around 10 t ha¯¹ for cv. Malbec and 12 t ha¯¹ for cv. Syrah cause positive influence on the phenolical and technological maturity of clusters, promoting the enological potential of bunches and their atributes, necessary for the production of fine red wines with ageing potential, balanced and characteristic of altitude regions of Santa Catarina State
A vitivinicultura prática otimizada é a aplicação de um conjunto de técnicas de manejo do vinhedo, de modo a produzir a máxima quantidade de uva sem reduzir seu potencial enológico exigido por determinados mercados, com um custo mínimo. Estas práticas derivam do conhecimento científico sobre a biologia e a fisiologia das plantas em relação ao meio em que é cultivado o vinhedo e sua manipulação em qualquer condição ou local. A dificuldade está em identificar o equilíbrio exato entre produção, vigor e qualidade da uva. Um dos principais fatores que interferem no potencial de desenvolvimento de um vinhedo é o manejo do dossel e as técnicas de cultivo, dentre os quais encontra-se o raleio de cachos. O presente trabalho teve como objetivo obter informações sobre a maturação fenólica e tecnológica dos cachos nos cultivares Malbec e Syrah, produzidos em região de altitude. O vinhedo foi submetido a diferentes níveis de raleio de cachos realizados na virada de cor, de modo a estabelecer critérios que contribuam para definir o manejo mais apropriado para a elaboração de vinhos tintos finos em regiões acima 900 metros de altitude. Os ensaios foram conduzidos durante as safras de 2005/06 e 2006/07 em um vinhedo da empresa Villa Francioni Agronegócios Ltda., coordenadas 28° 17 39 S e 49° 55 56 W, a 1230 metros de altitude, localizado no município de São Joaquim, SC. Os talhões utilizados dos cultivares Malbec e Syrah foram enxertadas sobre Paulsen 1103 conduzidos em espaldeira, com espaçamento de 3,0m x 1,2m e cobertura anti-granizo. Os níveis de raleio de cachos, ajustados na virada de cor Véraison , corresponderam a produção máxima, inerente a cada cultivar, e reduções percentuais em sua produtividade em 15% , 30% e 45%. Dos resultados obtidos cnclui-se que em condições de altitude, a prática de raleio de cachos, estimando-se uma produção em torno de 10 t ha¯¹ para o cv. Malbec e 12 t ha¯¹ para o cv. Syrah, exercem influência positiva sobre a maturação fenólica e tecnológica dos cachos, favorecendo ao potencial enológico dos cachos e seus atributos necessários para a produção de vinhos tintos finos com potencial de gurada, equilibrados favorecendo a tipicidade da Serra Catarinense

Assim, o presente trabalho foi desenvolvido com o objetivo de avaliar os efeitos de diferentes manejos de irrigação na videira de vinho cv. Syrah/1103P, no comportamento ecofisiológico da cultura e em seus aspectos quantitativos e qualitativos da produção de uvas. O experimento foi conduzido na Embrapa Semiárido, em Petrolina - PE, durante o primeiro ciclo de produção da cultura (13 de abril a 6 de agosto de 2010). O espaçamento da cultura foi de 3m entre linhas de plantas e 1 m entre plantas. O sistema de irrigação utilizado foi o de gotejamento, com emissores espaçados a 0,5 m na linha de plantio com vazão de 2,5 Lh-1. O delineamento estatístico foi o de blocos casualizados, com 4 repetições e 3 tratamentos: irrigação plena (IP) - irrigação durante todo o ciclo da cultura; irrigação deficitária (ID) - interrupção da irrigação a partir dos 45 dias após a poda de produção (dapp) até a colheita; e irrigação com déficit controlado (IDC) - interrupção da irrigação aos 45 dapp e irrigações eventuais para o aumento da umidade do solo na profundidade efetiva do sistema radicular (0,6 m). O manejo da irrigação foi baseado na evapotranspiração da cultura (ETc) estimada pela relação entre a evapotranspiração de referência (ETo) e coeficientes da cultura (Kc). Abstract: Irrigation is important practice in the fruit crop growing in the Brazilian Semiarid region, due to low magnitude raintall, with irregular time distribuition, which is not enough to supply water demand by plants. Hence, a research work was designed to evoluate the effects of different irrigation schedulings on wine grapevine, particularly on plant ecophysiological behavior and yield. The experiment was carried out at Embrapa Tropical Semi-Arid, in Petrolina, State of Pernambuco, Brazil, during the first crop growing season (April 13 to August 6, 2010) of grapevine cv. Syrah grafted on Paulsen 1103 rootstock, planted on grid spacing of 3 m between rows and 1m between plants. Drip irrigation system was used with 2.5 L.h-1 flow emitter spaced in 0.5 m. The experiment was designed in randomized blocks, with 4 replications and 3 irrigation treatments: full irrigation (FI) - irrigation throuhgtout the entire growing season; deficit irrigation (DI) - water application interrupted since 45 days after pruning (dap) until harvest; e regulated deficit irrigation (RDI) - irrigation interrupted since 45 dapp but occasionally performed to increase soil water storage in the effective root zone (0,6 m depth). Irrigation scheduling was performed based on crop evapotranspiration (ETc), which was estinated by the relationship between reference evapotranspiration (ETo) and crop coefficients (Kc). Abstract:
Na busca por vinhos tintos de grande cor, aroma, corpo e identidade, enólogos forçam a extração dos compostos fenólicos durante a maceração. Nesta etapa, que ocorre durante a fermentação do mosto, estes compostos são extraídos da casca e sementes e modificados em sua estrutura à formas mais estáveis ao longo do tempo. Fatores como sistema de encubagem e remontagem do mosto, tempo de contato entre o mosto e as partes sólidas da baga, e a temperatura são críticos neste processo. A alteração do ciclo da videira para colheita no período de inverno na região sudeste do Brasil permitiu avanço na maturação fenólica das bagas. As uvas colhidas neste período apresentam potencial para a elaboração de vinhos de guarda, entretanto faltam estudos para estabelecer as melhores técnicas de vinificação para este novo ciclo de produção. Este trabalho teve como objetivo avaliar o emprego de baixas temperaturas na extração e estabilidade de antocianinas, taninos e do precursor de aroma acetato de isoamila. Uvas da variedade Syrah colhidas no inverno foram submetidas a vinificação com maceração pré-fermentativa a frio (5 - 8°C) e posterior fermentação alcoólica na presença das cascas a baixa temperatura (15 °C), e também pelo método tradicional (maceração e fermentação alcoólica entre 20 e 23°C). Teores de polifenóis totais, antocianinas, intensidade e tonalidade de cor, compostos fenólicos, flavanóis, índice de pigmentos polimerizados e acetato de isoamila foram avaliados durante a maceração e nas etapas de fermentação malolática, engarrafamento e envelhecimento em garrafa. Os vinhos com 14 meses de envelhecimento foram submetidos a um painel sensorial. O método de maceração tradicional permitiu maior extração de antocianinas e, consequentemente, maior intensidade de cor. Entretanto, o emprego do frio preservou os tons azuis (OD 620%) durante o envelhecimento, o que indica menor oxidação do vinho. A concentração de compostos fenólicos também foi maior na maceração tradicional. O vinho submetido ao frio apresentou maior índice de pigmentos polimerizados e maior preservação de tons vermelhos e compostos fenólicos totais durante o envelhecimento, além de menores teores de acetato de isoamila. Não houve diferença estatística entre os descritores apresentados na análise sensorial; entretanto, a média do parâmetro de preferência global foi maior no método tradicional. Os resultados indicam potencial de preservação dos compostos fenólicos pelo uso do tratamento a frio, entretanto outras técnicas devem ser avaliadas para melhorar a extração desses compostos em uvas colhidas no inverno.
In an attempt to elaborate red wines of great color, aroma, body and identity, winemakers overextract phenolic compounds at maceration. At this step, which occurs during must fermentation, grape solids are extracted from skins and seeds and their structure are modified to more stable forms over time. Factors such as types of maceration, pumping-over, maceration time and temperature are critical in this red winemaking step. The modification of grapevine cycle in the southeastern region of Brazil to harvest grapes in the winter season has improved phenolic ripeness of the berries. Grapes harvested at this period have potential to ageing, however there are few studies to establish the best winemaking techniques for these berries. This study aimed to evaluate the use of low temperature in the extraction and stability of anthocyanins, tannins and flavor precursor isoamyl acetate. Syrah grapes harvested in winter season were processed with pre-fermentative cold maceration (5 - 8 °C) and then allowed to start alcoholic fermentation in the presence of pomace at low temperature (15 °C), and also processed by the conventional method (maceration and alcoholic fermentation between 20 and 23°C). Total polyphenols, anthocyanins, intensity and color hue, phenolic compounds, flavanols, polymerized pigments index and isoamyl acetate were evaluated during maceration, malolactic fermentation, bottling and bottle ageing steps. Wines aged in bottles for 14 months were subjected to a sensory panel. The conventional method allowed more anthocyanins extraction and consequently resulted in wines with more color intensity. However, the use of cold temperatures preserved the blue component (OD 620%) during ageing, which indicates less wine oxidation. The concentration of phenolic compounds was also higher in wines from the conventional method. Cold macerated wines showed higher polymerized pigments index and preservation of the red component of color and total phenolic compounds during ageing, and lower levels of isoamyl acetate. There was no statistical difference among sensory descriptors presented in the sensorial analysis; however, the parameter of overall preference was higher scored for the conventional method. Results showed potential for phenolic compounds stabilization by the use of cold treatment, but other techniques should be evaluated to improve the extraction of these compounds in grapes harvested in winter season.
