Perkins, Sarah G. "FARMERS’ MARKET SHOPPING BEHAVIORS AND THE ASSOCIATION OF FRUIT AND VEGETABLE INTAKE." UKnowledge, 2014. http://uknowledge.uky.edu/foodsci_etds/17.

Full text
Abstract:
Fruit and vegetable (FV) intake continues to decline among sub-population in the United States. Current policies and interventions have aimed to improve intake by improving access to fruits and vegetables. One Centers for Disease Control and Prevention suggested strategy is to improve access to farmers’ markets in rural areas. The aims of this study were to determine if the frequency of shopping at Farmers’ Markets is associated with fruit and vegetable intake, adjusted for age, income and education and to compare rural and non-rural areas frequency of Farmers’ Market attendance based on Kentucky farmers’ market interview participants (n = 102). The results of the descriptive, cross-sectional study determined that the Kentucky farmers’ market customers Fruit and Vegetable Score was positively associated with frequency of purchase of locally grown fruits and vegetables at farmers’ markets. However, the frequency of farmers’ market attendance was most commonly limited to ‘once a week’ (as a result of participants attending ‘Only attends market when need something’). It was concluded that alleviating the barriers customers face to use farmers’ markets is the best way to increase the attendance of farmers’ markets and as a result increase the purchases of fresh fruits and vegetables.

Jankovska, Olivera. "New Market Access in Fresh Fruit and Vegetable Imports to the United States." Thesis, Virginia Tech, 2011. http://hdl.handle.net/10919/43912.

Full text
Abstract:
Imports of fresh fruits and vegetables to the United States have grown by more than 350 percent since 1989. Factors such as rising consumer incomes, the desire for greater variety and availability of fresh produce throughout the year, and a reduction in trade barriers through multi-lateral and bi-lateral trade agreements have contributed to this growth in imports. In addition, since the implementation of the Agreement on Agriculture and the Agreement on the Application of Sanitary and Phytosanitary Measures from the Uruguay Round of the World Trade Organization negotiations, there have been numerous requests to export fresh fruits and vegetables to the United States. From 1996 to 2008, the United States has granted new market access to 204 exporter/commodity combinations. Given this large increase in new market access, this thesis assesses the success of the new entrants in terms of contributing to the increase in fresh fruit and vegetable imports and whether they exported on a continual basis after gaining import eligibility. In addition, this thesis estimates a gravity model to assess the differences in fresh fruit and vegetable exports from new entrants subject to phytosanitary measures relative to those with no such restrictions in place and to determine whether these effects vary by commodity sector and exporterâ s size. The major finding of this thesis is that in general, new entrants have contributed little to the growth in U.S. fresh fruit and vegetable imports. For most commodities, new entrants do not provide a significant proportion of imports potentially because new entrants are not able to compete with existing suppliers. This study finds differences in fresh fruit and vegetable exports from new entrants subject to specific phytosanitary treatments relative to entrants with no such restrictions in place.

Ledford, Laurie. "Outcomes of the 2008 Georgia Senior Farmers' Market Nutrition Program." Digital Archive @ GSU, 2009. http://digitalarchive.gsu.edu/nutrition_theses/6.

Full text
Abstract:
Background: The Georgia Senior Farmers’ Market Nutrition Program (GSFMNP) is intended to increase consumption of fruits and vegetables among Georgia’s low-income, older adults. The program provides $20 in vouchers with which participants may purchase Georgia-grown fruits and vegetables at approved farmers’ markets. Similar programs operate in other states, and studies suggest that these programs are successful in increasing fruit and vegetable intake among participants. However, because Georgia’s program operates somewhat differently, offering only a single market event at most locations, it may have different results. The purpose of this study was to determine whether or not produce purchased at GSFMNP events in 2008 contributed to an increase in the fruit and vegetable intakes of the participants and to identify factors that may have influenced those intakes. The study focused on purchase, consumption, preservation, waste, and sharing of fresh fruits and vegetables. Methods: For this qualitative study, a sample of 198 GSFMNP participants was surveyed from ten metro Atlanta senior centers where markets were held in August and September of 2008. Descriptive statistics were produced to summarize purchase behaviors, food utilization behaviors, and attitudes. Analyses of relationships between variables were performed using Pearson chi-square tests. Results: Twenty-seven percent of subjects reported consuming more fruits and vegetables than usual in the week following the farmers’ market event. There was a significant association between a larger than usual purchase amount and increased intake. There was also a significant association between increased intake and sharing purchased items. No significant associations with increased intake were found for variety of items purchased, preserving food, or discarding food. Those who purchased more fresh produce than usual appeared to be more likely to share their food with others but were not more likely to discard food. Ninety-seven percent of subjects said they would participate in the program again. Conclusion: Results of this study suggest that the majority of GSFMNP participants did not increase their intakes of fruits and vegetables. Sharing, preserving, and discarding food did not appear to be responsible for this outcome. More research is needed to discover what strategies could increase fruit and vegetable intakes among participants of the GSFMNP.

Abstract:
Objective: Measures the impact of the Farmers’ Market Voucher program on weight, body mass index, waist circumference, during the 2016 summer on a rural, low-income population residing in Appalachian Kentucky. Background: Rural communities often have limited access to fresh fruits and vegetables (FV) which contributes to low levels of consumption. FV are calorie poor, nutrient dense and are inversely associated with inflammation markers, obesity, hypertension, and high blood glucose levels. Appalachian rural communities have a higher prevalence of obesity, diabetes, strokes, and death by heart attack when compared to the U.S. Farmers’ markets Methods: Pre-experimental intervention design examining FV consumption and variety. T-test used measuring biochemical outcomes, pre and post, participation, and voucher amount. Results: Medical clinic patients (n=308) and household members (n=89) participated in study. Patients had a decrease in blood glucose and waist circumference (p=0.0231, p=0.0014 respectively). Patients had greater blood glucose reductions when compared to household members (p < 0.001). Patients reported consuming more FV with greater variety. Conclusion: The Farmers’ Market Voucher program successfully increased FV consumption and had a positive effect on blood glucose and waist circumference. Future studies should examine cooking methods of this population.

Karov, Vuko. "Trade Barriers or Trade Catalysts? The Effects of Phytosanitary Measures on U.S. Fresh Fruit and Vegetable Imports." Thesis, Virginia Tech, 2009. http://hdl.handle.net/10919/76936.

Full text
Abstract:
U.S. imports of fresh fruits and vegetables have increased sharply since the late 1980's. With increased imports come increased concerns that pests and diseases may infest shipments of fresh agricultural products. To address this concern, USDA's APHIS implements phytosanitary measures that mitigate pest and disease risks. These regulations vary from documentation requirements, inspection, or requiring that shipments receive a phytosanitary treatment. A growing body of literature attempts to assess the generic trade flow effects of SPS measures. Still, little evidence is available to shed light on the nature, size, and scope of SPS standards and their role as "trade barriers" versus "trade catalysts." This thesis fills the void in the literature in two respects. First, a novel database on phytosanitary measures pertaining to U.S. imports of 47 fresh fruit and vegetable products from 95 countries is developed for the period 1996-2007. This disaggregated approach allows for the effects of specific phytosanitary treatments to be identified. Second, following recent literature, the issue of "zeros" is addressed while estimating a gravity model of international trade. The findings suggest that phytosanitary treatments initially inhibit fresh fruit and vegetable imports. However, their trade reducing effects are uneven across product sectors, development status categories and treatment types. Finally, globally large exporters facing a treatment requirement ship more fresh fruits and vegetable relative to small exporters facing the same regulation, suggesting the role of SPS measures as "trade barriers" versus "trade catalysts" depends on the relative size of the exporter in the global market.

Moorhouse, Jan. "The turn to the market in UK food policy, 2002-2015, and its impact on the vegetable sector in England." Thesis, City, University of London, 2017. http://openaccess.city.ac.uk/18249/.

Full text
Abstract:
The aim of this study is to understand how ideas about markets and marketing have shaped food policy. It focuses on the vegetable sector in England in the early years of the new millennium. The study takes the 2002 Report of the Policy Commission on the Future of Farming and Food (Curry Commission) as its starting point. It explores how the Curry Commission’s ‘Turn to the Market’ call was interpreted and acted upon by vegetable production in England, and by UK Government (in practice English) Food Policy 2002-2015. It attempts to understand why and how policy makers turned to the market, what they meant by it, and how it changed how those involved in vegetable production thought about and responded to the marketing challenges they faced. The study centres on theoretical understandings of how food policy develops, and draws in marketing theories to contribute to that policy analysis. The study used qualitative methods - a combination of documentary analysis and fieldwork interviews with practitioners, policy-makers and analysts. Two research questions were formulated from the literature review: (1) how have ideas about markets and marketing shaped UK Food Policy since the Curry Commission?; and (2) what impact did the Curry Commission - and the policy that followed - have on English vegetable production? An analysis was conducted of policy documents of the period 2002 – 2015. Interviews were held with 23 key informants who were experts on and/or actors in English policy and vegetable production. The research adopted a realist and critical pluralist approach to food policy development. The research explored: how particular ideas of markets and marketing shaped wider UK Food Policy 2002-2015; how the marketing themes in UK Food Policy evolved; how UK Food Policy understood and framed the priorities for the vegetable sector which then opened up particular solutions and foreclosed others; and how the marketing ideas in UK Food Policy 2002-2015 affected how those involved in English vegetable production understood and responded to the marketing challenges they encountered. The findings show that UK Food Policy evolved from a proactive ‘Turn to the Market’ Food Policy under New Labour to a reactive 'Market Dominated' Food Policy under the Coalition government (2010-15). Policy framed the problems for the vegetable sector as a failure to market and devised policy mechanisms to support better marketing using ideas from orthodox marketing. The policy based on better marketing did halt the decline in the vegetable sector and helped it engage in more environmentally benign production practices. Growers still found it challenging to generate sufficient profit to reinvest and they felt that support for better marketing did not always work in practice. The thesis concludes that the marketing concepts do enrich food policy understanding. A markets-as-networks (MAN) analysis is proposed to provide a better way of understanding the marketing problems in the context of buyer dominated vegetable supply networks, where interaction is an important feature of supply relations and where exchange is embedded in on-going relationships. The research discussion considers the extent to which markets-as-networks (MAN) ideas offer a better framework for policy goals to increase the production of vegetables in England as part of a sustainable model for agriculture. Relationship marketing, from orthodox marketing, displays some features in common with the MAN tradition. By proposing this common ground between orthodox and heterodox marketing, the thesis offers directions for a revitalised market-oriented understanding of UK Food Policy and its development.

Savoie, Roskos Mateja R. "The Role of Farmers' Market Incentives on the Fruit and Vegetable Intake and Food Security Status of Supplemental Nutrition Assistance Program Participants." DigitalCommons@USU, 2016. https://digitalcommons.usu.edu/etd/4895.

Full text
Abstract:
Socioeconomic status strongly impacts food choices and eating patterns of both adults and children. Low-income individuals tend to eat diets high in calories and fat, and low in nutrient dense foods such as fruits and vegetables. Barriers such as cost, access, availability, and knowledge are commonly reported reasons for limited intake of fruits and vegetables. Low-income individuals are more likely to experience food insecurity, which can also limit the consumption of nutrient dense foods. As a result, low-income individuals are at an increased risk for obesity and chronic diseases. Farmers’ market incentives were found to significantly increase food security status among program participants and although fruit and vegetable consumption among those participants did increase, the change was not statistically significant for fruit and most types of vegetables. However, mean carotenoid levels were found to increase among participants who received an 8-week intervention that included weekly farmers’ market incentives. Data collected through qualitative interviews indicates that farmers’ market incentives helped participants overcome barriers associated with poor fruit and vegetable intake. Furthermore, parents expressed value in the opportunity for children to select, purchase, prepare, and consume fruit and vegetables purchased at the farmers’ market. However, qualitative and quantitative data suggest that farmers’ market incentive programs would have greater participation if individuals were not required to match their federal nutrition assistance benefits. Further research should be conducted using a completely randomized design and larger sample sizes to determine changes in fruit and vegetable intake among participants of farmers’ market incentive programs. The combination of nutrition education and farmers’ market incentives should be investigated to determine if program participants would further benefit from a combination of two intervention strategies.

Abstract:
Thesis (MBA (Business Management))--University of Stellenbosch, 2009.
ENGLISH ABSTRACT: This research report is a comparative analysis of the pre-1996 marketing control board system and the post-1996 free market system in the fruit and vegetable industry in South Africa. The report investigates and discusses the advantages and disadvantages of both systems and their effect on the stakeholders of the industry. The control boards had both positive and negative effects on the producer within the fruit and vegetable industry. The free market system is currently also having an effect, both positive and negative, on the producer. In this research report these divergent effects are explored, the objective being to obtain a better understanding of their impact on the industry stakeholders. On reaching a clearer understanding, strategy recommendations have been designed and are presented for all producers operating within the fruit and vegetable industry. The fresh produce industry is large, with many stakeholders. The information potentially available is vast, but, given the fact that time was too limited to do a complete research study on the entire industry, it was decided to focus on four sectors of the industry, namely bananas, deciduous fruit, citrus and potatoes. To give the report more credibility in terms of the data acquired, a number of interviews were conducted with producers and producer organisation leaders, from whom first-hand, ground level information was obtained. In this research it was found, among other things, that in general there was an imbalance in both the producer and consumer surplus in South Africa. Despite regulation, the marketing control boards had, through the pooling of prices, provided benefits only to certain producers. This, in effect, meant that quality improvement was largely negated, as the return to the producer did not provide an incentive to produce a better quality product. Contrary to the control board system, the free market system provides industry stakeholders with many opportunities, while the role of producers is also evolving to incorporate aspects of marketing. Producers consider service excellence, and culture and diversity to be important. Furthermore, in terms of available channels for marketing, many producers view the fresh produce markets as a desirable means of marketing their produce, as these outlets are still considered to be the price-determining mechanism for the fresh produce industry.

Abstract:
The agriculture development has relegated the cultivate of vegetables, in Brazil, to small familiar production units. The Mogi das Cruzes municipality is the highest producer in Metropolitan Region of São Paulo. Almost all the production is destinated to São Paulo market, where it is comercialized in locals like CEAGESP or CEAAP. From these locals, the vegetables are distributed to other regions of São Paulo state or the country. Farmers in Polokwane Local Municipality produce many vegetables including beetroot, carrots, spinach, garlic, cabbage and butternut, which they mainly sell in informal local markets through speculating and hawking. Some sell to hawkers, who sell fresh produce from stalls in small markets and on the streets. Although there are a number of fresh produce markets operating successfully in Polokwane, such as Goseame Fresh Produce Market and Polokwane Fruit and Veg City, only a few smallholder farmers supply vegetables to these major markets. This research focused on providing information relevant to vegetable marketing in the province by identifying and analysing those farm and farmer characteristics influencing smallholder farmers’ decision to participate and utilise formal vegetable markets. The overall objective of the study was to examine farm and farmer characteristics of smallholder vegetable farmers that influence their decision to participate and utilise formal markets. The study was conducted in Polokwane Local Municipality and a sample size of 80 subsistence and emerging farmers was interviewed. STATA (2010) was used to analyse the data. Two approaches were used; the separated OLS and logit regression models and the Heckman selection model, although conclusions are based on the Heckman selection model regression results. We recommend the use of the Heckman selection model due to its limited bias compared to the other method. Results show that two variables; level of education and farmer occupation were positively and significantly associated with smallholder farmers’ decision to participate in the formal vegetable markets. Household size, tenure security and distance to the market had a significant negative influence on smallholder farmers’ decision to participate in the formal markets. Level of education, farm labour, hectares used and cost of transport were significantly and positively associated with the value of vegetables marketed in the formal markets. Gender of household head, member of a farmer group, farming experience, access to non-farm income and access to extension services had a significant negative impact on the value of vegetables marketed in the formal markets. In view of the research findings, several policy suggestions are made. These include capacitating farmers, provision of land for farming, establishment of depots and markets closer to the farmers, encouraging formation of farmer groups or organisations, increasing the number of extension visits to farmers, specialised services and encouraging commercialisation of smallholder agriculture in rural areas.

Parker, Fiona. "A study of marketing efficiency in the fruit and vegetable wholesale markets of the United Kingdom." Thesis, Sheffield Hallam University, 1987. http://shura.shu.ac.uk/20186/.

Full text
Abstract:
The area of concern is the efficiency of the distribution system for fresh fruit and vegetables, with particular respect to the wholesaler operating within the wholesale markets. Distribution is an area increasingly experiencing the effects of the dominant role of the major retail multiple outlets. The broad thesis being explored is that a long period of fundamental and accelerating change (which can be dated from the 1950s with the restoration of the 'traditional' system after the war) can be explained to a considerable extent by pressure exerted on the wholesaling function through its immediate market environment, ie growers and retailers and broader changes in society which articulate themselves through the food chain by shopping behaviour. These changes raise questions about the impact they have had on the components of efficiency and given the changing structure, the structure-conduct-performance paradigm provides a framework for analysis. Changing elements of structure and conduct were identified with the aid of postal questionnaires, interviews and case studies, and marketing margin analysis was used as anindicator of relative performance. Thus a measure of efficiency was generated using cost, price and loss data for selected items of produce from the same source being distributed via both the multiple retail and independent retail channels to the consumer. The broad conclusions indicate that distribution via the multiple retailer is more cost effective, despite high investment in technology, as a result of their economies of scale. The wholesalers' distribution operation is under pressure as their net margins are small (less than 1%), consequently restricting investment in available technology, and market throughput is stagnant. Currently few academic or practical studies are available to the industry. This study offers a measure of change and indicates the relative efficiencies of the distribution systems. It also develops implications for future developments and improvements in the wholesale function in the United Kingdom.

Abstract:
The increase in urban population has brought with it challenges that have threatened the sustainability of urban food security as less attention has been paid to aspects of food security in planning processes. However, in recent years, some International organisations and consortiums of city governors from across the world have pointed out the need to understand how urbanisation and increasing city’s population were affecting food security for urban residents as well as the need for sustainable urban food systems as it is envisioned that the world urban population will double by 2050, hence, making urbanisation one of the 21st century’s most transformative trend. The aim of this study therefore was to identify sources of key vegetables (Rape, Onion, Tomatoes, and Cabbages) supplied to the traditional markets in Lusaka as well as endeavour to understand the extent to which urbanisation had affected the production and supply of vegetables in Lusaka. This research revealed that urbanisation had caused loss of urban agriculture land in many parts of the city that were previously zoned as agricultural areas, consequently causing changing patterns of vegetable procurement. It was discovered that Lusaka heavily depended on regional food networks for its vegetable supplies as 73% of the vegetables under study were sourced from outside Lusaka while 27% were produced within the administrative boundaries of the city, particularly those classified as peri-urban areas s. Despite the city relying on regional food systems, there was lack of clear policy by the local authority to promote urban food security including lack of adequate storage and transportation infrastructure that would sustain food security in an event of disruption due to environmental and climatic challenges. Additionally, this study showed that planning for urban food security was not prioritised by local authority as food governance was done on an ad hoc basis and inundated by political interference as well as limited trading spaces which were mostly a source of conflict between market managers and vegetable farmers. Generally, the study found that governance challenges at Soweto market were negatively affecting urban food security as they inhibited accessibility, affordability and availability of vegetables for urban consumers, especially low income consumers who depended on traditional markets for their vegetable supply.

Abstract:
The Center for Disease Control and Prevention (CDC) reports indicate that 8% and 6.3% of Kentuckians consume enough fruits and vegetables, respectively. The Plate It Up! Kentucky Proud (PIUKP) project is a recipe-development project that aims to boost produce consumption by incorporating local fruits and vegetables. The purpose of this study was to implement promotional strategies using PIUKP recipes at farmers’ markets and determine their effects on consumers’ intent of purchasing and preparing the produce. The study was conducted at nine farmers’ markets across Kentucky (n=300) in collaboration with Cooperative Extension agents/assistants. The consumers’ impression of the sample was positively associated with their intent to purchase fruits and vegetables the same day (t = 0.36; p < 0.0001), in future (t=0.43; p < 0.0001), and prepare the respective recipes (t=0.51; p < 0.0001). Distribution of recipe cards was also positively correlated with consumers’ intent to prepare recipes (t=0.35; p < 0.0001). However, no significant association was found between the self-reported fruit and vegetable intake and their respective dermal carotenoid score. Findings from this study support the use of promotional strategies as a means to influence produce intake among farmers market consumers. Future studies can apply these strategies and explore the extent of effect they have on dietary intake.

Lynch, Kenneth. "The production, distribution and marketing of fruit and vegetables for the urban market of Dar es Salaam." Thesis, University of Glasgow, 1992. http://theses.gla.ac.uk/30783/.

Full text
Abstract:
This study reviews four main approaches to the study of food supply for the urban areas of the developing world and finds them to be narrow in their foci and limited by the demands of the disciplines in which they have been developed. In order to overcome these difficulties, this study proposes a synthesis of the approaches for the study of the supply of fruit and vegetables to Dar es Salaam. This approach examines the problem of food supply through the evidence of price and volume data, of interviews and interview surveys, of observations of the marketing process and it integrates interpretation of literature and the evidence of observers in the field. The only state control exerted on the marketing of fruit and vegetables in Dar es Salaam, has been that it must be sold through the Kariakoo Wholesale Market. This market's role in wholesale trading has declined in favour of the emerging informal sector, during a period of more general economic liberalisation, which took place in Tanzania outwith state control during the 1980s. However, Kariakoo maintains a central role, handling approximately half of the city's fruit and vegetables. The informal sector for wholesale trading of fruit and vegetables has moved to more peripheral markets, where it is possible to distribute the produce more rapidly and at less cost. At each stage in the marketing system the participants have a range of options open to them. The choice of channel into which they sell their produce, depends on a trade-off between costs and price, which varies according to the commodity to be sold. The result is that vegetables tend to favour Kariakoo Wholesale Market and the city council maintained retail markets, while fruit tend to be traded at the informal wholesale markets and may be sold retail either in a retail market or at a street stall. There is an increasing trend for produce to be sold to informal wholesale traders at the nearest market on entering the city.

Abstract:
A balanced diet rich in fruits and vegetables has been strongly associated with weight management, improved overall health, and decreased incidence of chronic disease. Availability of locally grown produce is associated with a higher intake of fruits and vegetables; there were 7,864 farmers markets operating in the U.S. in 2012, a 9.6% increase from 2011. The purpose of this study was to evaluate the demographics, nutrition knowledge, and dietary habits of farmers market patrons at ten diverse markets in Kentucky. A total of 153 surveys were collected; the average age of study participants was 46 ± 21 year. Respondents reported consuming an average of 2.1 ± 1.3 fruit servings and 2.9 ± 1.6 vegetable servings per day. As well, 49% of the market patrons indicated they had an advanced or professional knowledge of nutrition. On a scale of 1-10, with 10 being "extremely important", 59% of the patrons ranked having nutrition information listed on recipes as an 8 or above. Market patrons are specifically interested in the salt (87%), fat (74%), and calorie (72%) content of recipes. Results indicate that most farmers market patrons have a good knowledge of nutrition and are interested in evaluating nutrition information.

Genetic mapping based on the planning and establishment of the linear distance between marks associated with genes responsible for controlling qualitative and quantitative characteristics. The construction of genetic maps is considered the most impact applications of the technology of molecular markers in genetic analysis of species, potentially in plant breeding. A genetic map of linkage may be low, medium and high resolution in accordance with the greater or lesser number of genes or ordered markers. A factor of considerable importance to obtain consistent data that result in more accurate maps is the sample size or population, level of saturation in the linkage groups and marker type to be used. Thus, the aim of this work was to estimate the optimum size of population and saturation of the genomes were generated with saturation levels of 5, 10 and 20 cM, containing 210, 110, and marks 60, respectively, and F2 populations double-haploid populations. Each genome was composed of 10 linkage groups, with a size of 100 cM each. For each level of saturation of the genome populations were generated at 100, 200, 300, 500, 800 and 1000 individuals, with 100 replicates, each codominant and dominant markers used when the type F2 populations were dominant and only double-haploid populations. These populations were mapped using LODmín 3 and a maximum frequency of recombination of 30%. From the maps obtained were extracted information regarding the number of linkage groups and marks for group, size of linkage group, distance between adjacent marks, variance of the distances between adjacent marks, marks inversion obtained by Spearman correlation and degree of agreement of distances on maps with the original genome, obtained by the stress. Populations of the same size tend to produce maps with greater accuracy in higher levels of genome saturation. The optimum size of F2 populations for genetic mapping must be of at least 200 individuals when codominant markers are of type and 300 when the markers are the dominant type, regardless of the saturation level of the genome. While double-haploid populations in the optimal size was 200, 500 and 1000 individuals when the saturation levels of the genome were 5, 10 and 20 cM, respectively.

Taiwan’s crops nearly suffer the unusual extreme temperature or the rainfall due to the island climate pattern every year. For the assessments of the impacts of natural disaster on vegetable industry, this research aims to use time series data to analyze the impacts of rainfall and the temperature on the vegetables’ prices and trading volume. The data source of this study is from Central Weather Bureau and the Council of Agriculture''s agricultural trading market station from 2008 to 2010. Daily trading volume and prices data of Chinese cabbage in Siluo fruit and vegetable market inYunlin County are used in empirical study. The result showed that the rainfalls and temperature both have the significant influence on wholesale price and on trading volume. In addition, the temperature and the rainfall have the remarkable forward influence to the average price. The climatic change greatly influences on the crops growth, intensified the vegetables price fluctuation, therefore the relationship between vegetable price and climate becomes a crucial factor in designing a stable vegetable price policy. The results of this study may be used as a reference ofvegeta- ble production and marketing of agricultural demand and supply.

Abstract:
This thesis investigated the retail market for ethno-cultural vegetable in the GTA and Guelph focusing on Chinese, South Asian and Afro- Caribbean. Price structure and marketing strategies were studied using survey data. Both qualitative and quantitative data was collected on a bi-weekly basis over three seasons in ethnic and mainstream stores. Analysis using SPSS revealed vegetable prices were not always lower in mainstream stores. The study showed that ethno-cultural vegetable pricing was controlled by the cheaper mainstream stores with some ethnic stores having to adjust their prices to meet those of the lower mainstream stores. The quality of ethno-cultural vegetables was also found to be poor across stores with poorest qualities in ethnic stores, a fact attributed to poor facilities. Finally ethnic stores were better stocked with ethno-cultural vegetables. Ethnic stores are important in the supply of ethno-cultural vegetables but are not well organised to face the retail competition hence the need to improve.

Taipei First Wholesale Fruit and Vegetable Market has served Taipei citizens for almost 40 years, and one of the most prominent developments in the market is the evolution of methods used in goods transportation: from the initial method of man-powered carts, to the electric vehicles that are in use today. After carrying out field research, it’s been discovered that the current mode of transportation is not all-perfect after all, though the three-wheeled electric platform truck has a larger load and an emphasis on the profession of transportation, it still lacks the basic principles of modern product design: the harmonious combination of “technical functionality”, “operational functionality”, and “aesthetic functionality”. Therefore, with the help of field research, this study discovers and analyzes the real needs of the labors who work in the market, enabling the design process to be of a customized concept, and a multi-dimensional thought of combining ergonomics, functions, and aesthetics. Design analysis is focused on the goods’ storage method, surrounding environment, and characteristics and operation model of current transportation tools of six major wholesale markets in Taipei. After comparisons, characteristics and limitations of the Taipei First Wholesale Fruit and Vegetable Market are obtained. Also, information on various award-winning vehicle designs for goods transportation are gathered, which are then studied for their handling, functionality, and aesthetics, forming a database for references to be used in the design stage later on. Through observation and previously mentioned research outcome, creative elements are obtained, along with users’ needs, appropriate mode of transport, and analysis on form, the collected data are organized into usable design leads, subsequently executing the design phase of fruit and vegetable wholesale market transportation vehicle. The final part of this study is interviews with users and specialists of related fields, as well as feedbacks from judges of international design competitions, attaining evaluations and testimonials on the final design. In conclusion, this study is made with Taipei First Wholesale Fruit and Vegetable Market as its background, and design execution and evaluation is made after comparing several wholesale markets’ design-related information, and a study of users’ needs and operating environment. And by comparing this study with other current transportation tools, a design strategy and guide is categorized in the end, acting as a reference and suggestion tool for future projects and studies of similar nature.

The results of the wholesale market calendar year are divided into three main areas according to their research differences. First, the study of business methods, Second, the study of economic methods, three, market structure behavior performance theory and method research. After finishing the literature, it was found that after about 2000, there were three changes in the relationship between supply and marketing, and the change was summarized as follows. 1, north and south of the two cities will be fruit and vegetable wholesale market share of the market there are obvious movements of the trend. 2, the local will be large-scale fresh fruit and vegetable wholesale market share is the majority of the upward trend. 3, small and medium-sized vegetable and fruit wholesale market, most of the significant decline in the share of the trend. In this study, the trend of the large-scale fruit and vegetable wholesale market share in the above-mentioned changes is discussed in detail. In the case of Hsinchu Fruit and Vegetable Marketing Co., Ltd., the increase trend is obvious, Data analysis, found that the main reason to be summarized as follows. 1. The increase in trading volume may have a positive relationship with the location and consumption of the site. 2. The scope of supply to the common distribution and importers to expand at the same time, centralized also will be carried out. 3. 2002 trading volume index from 12.84 to 14.86 in 2015, the market''s marketing and wholesale capacity to enhance the phenomenon. 4. The wholesale and retail trade of fruits and vegetables traders increased from 44% to 80.7%, which is probably due to the increase in the number of retailers in the market. In the future, other similar local markets may also tend to "expand production and marketing" direction.

Variation of market price induces risk in market transactions. In order to understand the formation of price risk in the marketing channels, this study adopts the model developed by Barrett and Luseno (2004) which is based on the analysis of variances and co-variances. The producer price risk is decomposed into 4 parts: 1) information/institutional risk- risk related to price negotiation power of producers, 2) local market risk- risk related to local market size, 3) basic risk- risk related to marketing channel efficiency, and 4) terminal market risk- risk related to the variability and thickness of the terminal market. Next, the model is modified to study the price risk formation in the vegetable marketing channels of Taiwan based on the daily wholesale price data of 10 major vegetables over the period 2007-2009. By comparisons of the producer price risk compositions between different marketing segments, adjustment strategies in order to balance the market demand and supply are proposed. Goals to stabilize market price and to reduce the risk faced by producers and consumers can thus be achieved simultaneously. Finally, policy recommendations are provided to the policy makers in preparing short-, medium-, long-term strategies for the agricultural structural adjustment.

ABSTRACT This research was conducted from the period of January of 2014 to December of 2016 and the data retrieved was obtained from the fresh food factories based on the purchased prices of seven different staple vegetables : cabbages, carrots, cucumbers, scallions, American lettuce, Indian lettuce, and onions. There is a total of 36 sets of data with the average wholesale prices per month of Taipei’s first and second agricultural marketing company set as the variables. This information was used to investigate if fresh food companies’ contract prices is affected by the marketing wholesale prices. Broadening sources of income and reducing the expenditure is the most basic rule of operating a business. Based on this concept it is important to note that the stabilities of purchase prices of the vegetables will determine the profit amount and the risks of the fresh food factories since the vegetables may easily experience short termed fluctuations in the prices due to external factors. After administrating the research using the ADF Unit Root Test three discoveries were made. Regardless of the contract prices of the companies or the marketing wholesale prices all the variations began to appear after the first difference : (1) sequence stability; (2) after the cointegration test only the American lettuce displays the co-integration phenomenon, VECM was used to test the cause and effect to conclude the best fit lagging period. Due to the non-existent of variation in the cointegrate relationship the VAR difference was used to select the best fit lagging period. (3) By using the Granger causality test to determine the cause and effect it was discovered that at 5% significant level only the cucumbers’ marketing wholesale prices will influence the contracted purchase prices of the companies. There is no significant relationship between the contracted purchase prices and the marketing wholesale prices of other vegetables and therefore it is obvious that the fluctuation of the marketing wholesale prices will not affect the contracted purchase prices of the companies.

With health awareness increasing, vegetable oils have played a main role of cooking oil. Owing to the series of edible oil incidents in recent years, consumers have lost their trust to the domestic oil manufacturer, and turn to choose imported oil to ensure the quality. Since the lack of raw materials for oil increasing the cost and competition from foreign companies, vegetable oil market is more competitive nowadays. There are a variety of oil brands on retail market, whose price varies with different kinds of oil. In order to understand the characteristics of vegetable oil and the importance of characteristic for consumers. Hedonic Price Method should be applied to estimate the implied market value of vegetable oil’s characteristics. This research collects prices and content of product labels from physical path in Taiwan, and generalize characteristic variable of vegetable oil. Refer to the previous references about hedonic price, those characteristic variables are divided into four categories: characteristic of ingredient and package, characteristic of safety and hygiene, characteristic of nutrition and health, characteristic of brand and channel. On empirical demonstration, we use the general Box-Cox Transformation Function to estimate hedonic price function, and choose the semi-logarithmic function of restricted model as the optimal functional form by likelihood-ratio test. And then further evaluate the coefficient value of each variable and marginal implied price of each characteristic by the ordinary least square method (OLS). The conclusions of this study are as followings: (1) For the characteristic of ingredient and package, the kind of oil is one of the most important consideration at oil consumption. Compare with blending oil, Camellia oil, linseed oil and peanut oil have better evaluation. The increased additional values for every 100ml are NT294.6, NTD137.48 and NT105.27. Consumers prefer to choose the oil with short storage life and small capacity under 1900ml. They also prefer to buy the oil packed in glass bottle. (2) For the characteristic of safety and hygiene, the oil which has passed Aflatoxin test obtain the highest evaluation. The increased additional value for every 100ml is NT 10.8. (3) For the characteristic of nutrition and health, the oil with organic certification label or healthy food certification label have positive evaluation. The increased additional values for every 100ml are NT 18.67 and NT 8.96. (4) For the characteristic of brand and channel, foreign brand has higher evaluation than domestic brand. The implicit price of foreign brand is NT 10.2/100ml. The brand marketing by TV advertisement has positive implicit price NT3.81. For the channel, customers prefer to buy from small regional oil store than mass merchandisers.

Fruit and vegetable wholesale market plays an important role in the distribution and marketing of agricultural products. However, for the 50 fruit and vegetable wholesale markets of Taiwan, only 5 of them are managed by the cooperative mode and nearly ninety percent are managed by the farm alliance and government units. For the two types, the source of funds and supports in operation are total difference. Due to the change of external environment, including traffic, transportation, channel, food safety, and foreign trade organization, and the lack of internal condition, including closed information, old equipment, low efficiency, instable quality, and worker ageing, are the main reasons to cause the hard time of management. In recent years, Internet marketing and E-Commerce become more and more important by the information technology innovation. Therefore, the main purpose of this study is mainly to discuss about applying the information technology on the management of traditional fruit and vegetable wholesale market and to assist the marketing and the further improvement of its operation. The research object takes a fruit and vegetable wholesale market as a case study. This study collected relevant literature and case analysis of the object of internal and external situations. This study sets up a dedicated website and Facebook and builds the database for the agricultural data and information of the fruit and vegetable wholesale market. The object is to shorten sales difference and create multiple marketing channels, and to summarize the literature and case studies. This study summed up the three indicators and policy of market operation and network management, which are the information transparency, food safety and standardization, marketing and brand promotion. Finally, this study made the conclusion and suggestions through the analysis of discussion and expert interview data. Case study results show that the information content, reliability and transparency is most concerned in the information transparency issue. In the issue of food safety and regulation, the organic and non-toxic are the feasible solutions under the premise of security. In the issue of marketing and brand promotion, the network is considered to be a feasible and effective solution to combine social media. But, it requires all aspects of cooperation and long-term adherence and maintenance to show the effectiveness. Finally, this study suggests that the information should be provided with the publicity and be based on the origin of farmers to establish a website, which is composed of the differentiation and regional characteristics.

Most farmers invest a lot of time and labor for cultivation in the fields, and they hope to grow a large number of agricultural products with good quality so to obtain the best price after products are sold. However, most farmers failed to grasp the related sales message, so they can only passively accept the market price reaction, often resulting out of proportion between income and expenditure, and even feeling comfortable if income and expenditure can balance. In order to allow farmers to better understand market trends and grasp the changes in prices of agricultural products, this study combined with the cloud database designed a fruit and vegetable wholesale market sale information for farmers to use. Through the database system, farmers can immediately log the latest sales data and store the related data, through where in the future farms can according to personal needs can inquiry, analyze and summarize based on sales of products, sales of time (day, week, month, quarter, year); after understanding the related changes in sales volume and sales amount, they then can adjust the volume, time of planting and cultivation. Also by the back-end database and related devices, farmers will be able to grasp the information, reduce the waste of printing paper, and save a lot of equipment costs.

According to the differences of research methods, we can distinguish the three ranges: 1. "Research of Business Science", 2. Research literature of "economics", 3. "Market structure - behavior - performance theory". The literature found that after 2000, the wholesale market supply and sales of different changes with the past. The study summarizes the following three points: 1. The market share of the fruit and vegetable wholesale market in Taipei and the market share of Kaohsiung''s fruit and vegetable wholesale market (the ratio of wholesale trade volume) increased (the increase of vegetable market share and the decrease of fruit share). 2. Local large-scale wholesale market share of most of the significant increase (increase) trend. 3. Other small and medium-sized fruit and vegetable wholesale market, most of the market share of the significant decline (decrease) trend. In addition to understanding the current situation and future development of the fruit and vegetable wholesale market in Taiwan, the purpose of this study is to discuss the change of supply and marketing relationship with Kaohsiung Fruit and Vegetable Marketing as an example. (The increase in the share of vegetables, the trend of reducing the share of fruit), through the field analysis of business operators and secondary analysis of the results of the market share of each other to explore the possible causes of increase and fall, summed up the results are as follows: 1. The supply of large-scale markets, led by Kaohsiung''s fruit and vegetable marketing companies, increased with the supply of supply groups. 2. After 2000, there is a tendency to increase the marketing wholesale ability and expand the scope of marketing. 3. The gradual increase in the population of neighboring counties leads to the expansion of the metropolitan area. In the future, other similar large-scale markets may also develop towards the "wide-area market". The Hsinchu Agricultural Products Marketing and Marketing Company is also the fruit and vegetable market business unit. Since March, 1963 moved to the 245th Zhongzheng Rd, it has begun to scale the fruit and vegetable wholesale market. Then moved to the current site on October 4, 1980, and operated at No. 411, Guoguo Road, and it has been 27 years since then. Due to the original planning and design, it is impossible to consider the possible changes in the scale of operation, plus the road for such a long time. , community, and changes in the consumer environment. Therefore, the issue of the relocation of the fruit and vegetable wholesale market has a considerable degree of concern in the Hsinchu City Government, the Parliament, and many industry players, and a discussion proposal has also been formed. With the efforts of several mayors and representatives of public opinion, the process of site selection and discussion of the relocation case is very long. However, in recent years, under the influence of the business of neighboring several fruit and vegetable wholesale markets, the wholesale volume and retail volume of the Hsinchu fruit and vegetable wholesale market are almost equal, so the site selection is suspended for administrative decision-making, and it is more urgent. It is to improve the internal environment and surrounding environment of the existing site, improve service quality and consumer convenience. Therefore, in the review of the review of the relocation problem and the analysis of the existing environmental improvement, the traffic accidents occurred between 102 and 105 years ago were collected, and the trading environment around the country was mainly used to test whether the transaction with the market was Has a significant level and explains this. I hope that this research can also be used as a reference for the decision-making of the fruit and vegetable market in the future. At the same time, we also added the latest questionnaire survey to understand the underwriters' recommendations on the current fruit and vegetable market environment as an important indicator for future operational improvement.

Information is essential to assist the efficiency of farm management and marketing. Recently, the rapid growth of information and communication technology (ICT) has largely improved information flows and creates new opportunities for agriculture and rural development. Several market information systems (MIS) have been set up in Senegal to provide market price information for horticultural producers to enhance their competitiveness. However, the usage of MIS among producers remains low. To improve MIS development, a survey through questionnaires was conducted in 2006 to investigate the marketing risks, ICT usage, information needs of the Senegalese vegetable producers as well as the ICT availability and MIS efficiency in rural areas. Two major crops, tomato and green bean were targeted in their main production areas, Saint-Louis and Dakar regions, respectively. A total of 150 questionnaires in each region were distributed to vegetable producers. Additional information were also collected in 2009 through in-depth interview from local producers and other important actors in agricultural knowledge systems. The results of this study indicated vegetable producers in Senegal usually cultivated diverse crops, and relied on intermediaries for marketing. Perishability and competition were their main marketing risks, and they generally need to advance the efficiency and competitiveness of marketing and post-harvest skills. Meanwhile, mobile phone and telecentre were the most prevalent ICTs among vegetable producers, and may serve as the underlying technology of the horticultural market information systems. Currently, the market information network of Senegalese vegetable producers mostly relied on informal social contact. The formal market information systems need to improve the contents, accessibility, format, and timeliness of information. Furthermore, universal illiteracy and multiplicity of Senegalese vegetable producers and the poor power reliability in rural communities may constraints the ICT adoption. Market information systems need to be supported by visual images and voice service in local dialect as well as reliable and cost effective power sources. Also, wholesale price was the key but not only information Senegalese vegetable producers needed; market information systems should provide tailor information according to the needs of the target groups. In addition, the adoption of ICT was significantly helpful to reduce marketing risks and meet information needs of Senegalese vegetable producers. But by far, available ICTs have not been fully utilized for market information dissemination. On the other hand, higher marketing risks reflected higher information needs. Since non-members of the producers’ association were more vulnerable in marketing risks, the organization of individual producers is advocated to reduce marketing risks and facilitate access to the needed resources and information. Finally, based on the finding of this study, a research model for horticultural market information systems and an information network scheme are proposed to improve MIS efficiency, meet users’ needs, and enhance growth opportunities for horticulture industry in Senegal.
