Full textIt is a creation of our biotechnology that has been inherited from our ancestors since the Inca period. The population of the center used Tocosh as a medicine and they defined it as a preservative of the body. The Incas considered food as a gift from their gods and among them the potato was considered one of the best examples of affection and in its process the divinity of its god intervened. Over the years these practices have been lost considering themselves only as customs. The investigation of a very important product, but at the same time unknown by many, is that in recent years the Peruvian market is choosing to revalue its Andean products because they know of the enormous nutritional and medicinal powers and this is consumed in greater quantity by the settlers of the mountain range and now it extends towards the city of Lima. Its effectiveness has not been surpassed by conventional medicine and is 100% proven to contribute to the treatment of diseases such as gastritis. The purpose of this business plan is to propose a product that is available to the entire population in a traditional presentation called Tocosh Yogurt for the client to consume and enjoy considering how beneficial it will be for their health. Also, the objective of this project is to determine the viability of the company and provide a quality product according to the customer's needs, in this way gain market share.

Full textThe main characteristic of the microbiota is a wide variety of microbiological variability. However, various intrinsic and extrinsic factors can affect its composition, where alterations of it can lead to various pathologies. In particular, diets high in raw and fermented foods can modulate people's gut microbiota. In Peru, the consumption of fermented tubers, Tocosh, is characteristic and traditional Although its bacterial composition and its beneficial potential are beginning to be known, the conditions that could allow the cultivation of one or more of the coexisting species in Tocosh are unknown. In order to study how the Tocosh microbiota varies during controlled media cultures, in the present study three non-selective culture media (Luria Bertani, Brain-Heart Infussion and Nutritive Broth) were evaluated and the variation in the composition of Tocosh microbiota over time through the use of next generation sequencing (NGS) of bacterial DNA. The analysis of the initial sample of the raw tocosh used for this study presented 335 diverse species, distributed mainly in 29 phylum. The three- culture media evaluated promoted a qualitatively varied development of microbiota, showing between 14 and 61 species represented. However, the quantitative analysis showed that species that were abundant in the initial sample, Clostridium neuense group and Prevotella, decreased markedly throughout the culture time in the three media. On the contrary, our results indicate a clear predominance for the Bacillacea and Paenibacillaceae families and specifically for the Bacillus cereus species in the three media studied. In conclusion, it was evidenced that the variation of the Tocosh microbiota is affected by time and the characteristics of the culture media used. It was found that the three culture media evaluated did not favor the stable and varied growth of the Tocosh microbiota, observing a preference for the development of Bacillus cereus, initially present in the microbiota sample, and potentially harmful to health. Thus, future studies focused on the industrial development of Tocosh should pay particular attention to evaluating other factors such as temperature, pH, oxygenation, among others.

Full textDetermina el efecto gastroregenerativo de la ingesta de la mazamorra de tocosh de Zea mays contra el daño inducido por etanol en ratas. Desarrolla un estudio de diseño analítico, experimental, transversal y prospectivo en el Centro de Investigación de Bioquímica y Nutrición “Alberto Guzmán Barrón” de la Universidad Nacional Mayor de San Marcos. Se utilizó 42 ratas Rattus norvergicus machos, de tres meses de edad y 237 ± 12,82 g de peso. Se indujo a úlcera gástrica administrando 10 mL/kg p.c. de etanol al 70% vía per-oral, mediante canulación, previo ayuno de 24 horas, luego distribuidas aleatoriamente en seis grupos (n=7). Los grupos II al VI recibieron etanol al 70% a 10 mL/kg p.c., una hora después se les administró el siguiente tratamiento por tres días: grupo I: suero fisiológico (10 mL/kg p.c.), grupo II: fue sacrificado el primer día, grupo III: suero fisiológico (10 mL/kg p.c.), grupo IV: sucralfato 1 mL/día, grupo V: mazamorra de tocosh 5 mL/kg p.c., grupo VI: mazamorra de tocosh 20 mL/kg p.c. terminado el tratamiento fueron anestesiados y sacrificadas. Los estómagos fueron extraídos y fijados en una plancha porosa, una porción glandular fue destinada al estudio bioquímico y la otra al histológico. Los datos fueron analizados en SPSS versión 19, se aplicó Shapiro-Wilks para evaluar normalidad, luego se aplicó ANOVA en muestras simétricas (GSH y lipoperoxidación) y kruskal - Wallis a las muestras asimétricas (moco). Encuentra que la ingesta de mazamorra de tocosh de Zea mays permitió que en la evaluación macroscópica y microscópica, el tejido gástrico presentase una estructura conservada en comparación con el G II; en relación a los indicadores bioquímicos, los niveles de moco gástrico en los grupos V y VI fueron significativamente (p<0,05) mayores en comparación con el G II y G IV, los niveles de GSH aumentaron significativamente en todos los grupos en comparación con el G II, la lipoperoxidación fue significativamente (p<0,01) menor en comparación con el G II y a nivel morfológico se observa un menor daño en los grupos V y VI. Concluye que la ingesta de “mazamorra de tocosh” de Zea mays presenta un efecto gastrorregenerador sobre los indicadores evaluados en el daño inducido por etanol en ratas.

Full textIdentifica el efecto modulador del tocosh de papa sobre la respuesta inmune humoral y celular en ratones inmunosuprimidos con metilprednisolona. Emplea 36 ratones machos Balb/c, divididos en seis grupos de 6 ratones: (GI) sin ningún tratamiento, (GII) sólo sensibilizado con glóbulos rojos de carnero, (GIII, IV, V) con extractos a 500 mg/Kg, 1000 mg/Kg, 2000 mg/Kg, inmunosuprimidos y sensibilizados, respectivamente y (GVI) sólo inmunosuprimidos y sensibilizados. Luego del proceso de acondicionamiento de los animales, se empieza el esquema de inmunosupresión moderada con metilprednisolona por 4 dias, después al quinto dia, se procede a sensibilizar con GRC al l0% vía i.p. y ese mismo día se les administra los extractos a los grupos correspondientes por siete días via oral. Al final del procedimiento se evalúa el recuento leucocitario, así como el título de anticuerpos hemaglutinantes.
