Abstract:
The driving force of the tourism industry is represented by the attractions at destination. Travelers have no reason to visit destinations that have nothing to offer. Tourism research has demonstrated that attraction studies are necessary in the understanding of the elements that encourage people to travel. Achieving the goal of measuring destination attractiveness requires the understanding of its components and their relationships. There are two ways of examining attractiveness: by studying the attractions or by exploring the attractiveness perceptions of those who are attracted by them. As competition among tourism destinations increases and tourist funding decreases, it is of vital importance to understand how the inventory of existing attractions at destination relates to the perceptions that travelers have of those attractions. Tourism literature provides only a limited number of studies addressing destination attractiveness. Those studies focus exclusively on the measurement aspect of attractiveness and ignore the analysis of its components. The purpose of this study was to generate a new measurement tool for destination attractiveness and to examine the relationship between its elements. The principles of regional analysis, tourism planning, and tourism attraction research provided the foundation for a measurement and hypothesis testing model. This model is based on the assumption that tourism is a system, which is a function of supply and demand interaction. Four attraction dimensions - tourism services and facilities, cultural/historical, rural lodging, and outdoor recreation - were found to represent the attractiveness portfolio of the destination. According to the findings, no correlations were found between demand and supply importance of the four dimensions. Among demand representatives, market segments perceive and value attractions in different ways. The study explored the attractiveness evaluation of eight tourist regions and discovered correlations between demand and supply indicators. Additionally, it was established that the overall regional measures of demand and supply destination attractiveness explain the economic benefits of tourism in the same region. Among the contributions of this study is the development of a model that allows the simultaneous empirical assessment of demand and supply indicators of destination attractiveness. The findings of this study provided important implications for the development of robust tourism plans, promotional strategies, and resource allocation policies.<br>Ph. D.

Abstract:
Purpose of this study is to holistically analyze existing linkages between Aruba's tourism industry, restaurants and local farmers, by examining strategies that constrain the development of linkages between these stakeholders. Previous research indicated that tourism development is often accompanied with increased demand for imported food, which results in foreign exchange leakages, inflation and competition with local production. This phenomenon is very common in the Caribbean, where Aruba, with its heavy reliance on imported goods and services, is no exception to this occurrence. To comprehend potential problems associated with linking both sectors, these in-depth case study addresses three fundamental questions: a) what is the structure of supply and demand of food for the tourism industry of Aruba?, and b) what factors constrain the development of linkages between international tourism and Aruba's local agriculture? Using an exploratory and stochastic methodological approach, data will be obtained from structured surveys from three different stakeholders in the food supply chain of Aruba. Abstract:
The primary goal of this study was to determine the impact of price discrimination on tourism demand. Four objectives were defined with reference to the primary research goal. The first objective was to analyse the concept of price discrimination and relevant theories by means of a literature study. In this regard it was found that price discrimination between markets is fairly common and that it occurs if the same goods were sold to different customers at different prices. Price discrimination is also possible as soon as some monopoly power exists and it is feasible when it is impossible or at least impractical for the buyers to trade among themselves. Three different kinds of price discrimination can be applied, namely first-degree, second-degree and third-degree price discrimination. The data also indicated that price discrimination is advantageous (it mainly increases profit) and that it has several other effects too. The second objective was to analyse examples of price discrimination by means of international case studies. In these different case studies it was found that demand and supply, therefore consumer and product, formed the basis of price discrimination. If demand did not exist, it would be impossible to apply price discrimination. The findings also indicated that, for an organisation to be able to practice price discrimination, the markets must be separated effectively and it will only be successful if there is a significant difference in demand elasticity between the different consumers. Furthermore, the ability to charge these different prices will depend on the consumer's ability and willingness to pay. If an organisation should decide to price discriminate, it would lead to a higher profit, a more optimal pricing policy and also to an increase in sales. The third objective was to analyse national case studies. This was done through comparing the data of a tourism organisation price discriminating (Mosetlha Bush Camp, situated in the North West) to two organisations that did not implement price discrimination (Kgalagadi Transfrontier Park in the Northern Cape and Golden Leopard Resort, also situated in the North West). It was found that a customer with low price elasticity is less deterred by a higher price than a customer with a high price elasticity of demand. As long as the customer's price elasticity is less than one, it will be very advantageous to increase the price: the seller will in this case get more money for less goods. With the increase in price the price elasticity tends to rise above one. The fourth objective was to draw conclusions and make recommendations. It was concluded that price discrimination could be applied successfully in virtually any organisation or industry. Furthermore, price discrimination does not always have a negative effect; but can have a positive ass well. It can have a positive effect on tourism demand. The findings emphasised that the main reason for implementing price discrimination is to increase profit at the cost of reducing consumer surplus. The Chinese tourists market has become the 4th largest inbound market for New Zealand in 2007; it also ranks 6th in terms of expenditure. Chinese visitors spent a total of NZ $352 million to the year December 2006, an average of NZ $3,340 per person (Ministry of Tourism, 2006). The latest statistics released from New Zealand Tourism Research Council show that 122,045 Chinese visited New Zealand by the year ended January 2008. These crucial statistics – market size, length of stay and average spend – indicate the necessity for the New Zealand tourism industry to understand and provide for Chinese expectations and requirements. Auckland is New Zealand's key gateway, and it is vital that Auckland provides a first good impression for the rest of country. Chinese travellers visit New Zealand with great desire and expectations of experiencing an exotic land. They expect Auckland, as the biggest city in New Zealand, to provide them with a memorable city experience in a developed country. The purpose of this research is to study Chinese tourists' expectations and travel experiences, with a particular focus on investigating whether Auckland can provide suitable services and experiences which match their requirements and expectations. The research will build on the study by Bull (1991) and Ryan (1995), which looked at supply demand relationships and at the tourism industry attempts to balance the supply with the actual demands. It will also build on work by Zhao (2006) and Qu (2006) which explored the dimensions of Chinese demand and distribution channel factors at both origin and destination. The goal is to establish which factors are adequate or inadequate. A synthesis of the demand supply situation will enable the development of recommendations. It is envisage that these recommendations could be adopted by local government and the tourism industry, either as actions or as improvements to policy. With regards to the purpose of this research, a qualitative method was decided as the most relevant approach. Qualitative methods are useful for revealing and understanding what lies are behind any phenomenon about which little is known. Grounded theory is a qualitative research method that was developed for the purpose of studying a social phenomenon, and to generate a theory relating to a particular situation (Strauss & Corbin, 1994). The historical bases of the grounded theory approach matches the aim of this research, namely to reveal the relationships between tourists and the tourism industry and to gain a better understanding of Chinese tourists' expectation and satisfaction, and the level of the service which the Auckland tourism industry provides to Chinese travellers needs to match the Chinese market and requirements of travellers. The interviews were conducted with both Chinese travellers and the Auckland tourism industry, including hotel managers, restaurant managers, gift/souvenirs shop assistants, tour guides, and so on. The research shows Auckland is not ready for Chinese market yet. This result comes from three aspects: firstly, most Chinese tourists do not have clear requirements or expectations of Auckland before they come to New Zealand. This is mainly because of the limited promotional materials available in China about Auckland. Secondly, Chinese tourists do not have many opportunities to get to know Auckland's attractions and activities after they arrive in Auckland. Auckland city is New Zealand's most popular urban tourism destination in terms of population and gateway function provides tourism facilities and services to Chinese tourists. However, the findings highlighted most Chinese tourists found Auckland's tourism attractions to be unattractive to them due to the language barrier and itinerary issues. Thirdly, the research also found Chinese tourists have been driven away due to lack of hotel accommodations in Auckland, especially in the shoulder or high seasons. Auckland's accommodation facilities are facing a challenge. The increasing domestic and international visitors' numbers and insufficient hotel accommodations will be the major problem for Auckland for the next decade. Most of the Chinese tourists who were interviewed expressed their hope of knowing more about Auckland, however, these hopes will go unrealised until the city provides better attractions and more services for them.

Portugal detém um conjunto de características vinícolas únicas, pelo que o enoturismo pode e deve intervir no sentido de as potenciar, tornando-as em elementos diferenciadores e posicionando Portugal enquanto destino enoturístico. Porém, há que considerar que o contexto competitivo é cada vez mais aguerrido: a procura é mais exigente e emergem novos destinos concorrentes. Deste modo, é essencial, em primeira instância, compreender o que é o enoturismo e perceber quais os efeitos desta atividade. Adicionalmente, importa estudar quem são os enoturistas, as suas motivações e comportamentos de consumo que efetivam o consumo deste produto turístico. No panorama das atividades que envolvem e desenvolvem o enoturismo, assim como as respetivas regiões, acentua-se a importância da comunicação para um próspero crescimento do produto. Neste domínio, é conveniente analisar os modelos, meios e ferramentas de comunicação, nos planos tradicional e digital, que poderão responder assertivamente aos desafios enoturísticos. Posteriormente, importa determinar, à escala nacional, os elementos que são utilizados por um dos principais veículos de intermediação e divulgação da prestação turística de serviços: as agências de viagem. Sob o ponto de vista das agências de viagem, distingue-se diferentes perfis da procura, identifica-se os produtos que são integrados na oferta enoturística e analisa-se as estratégias de comunicação desenvolvidas. A investigação encerra-se ao compreender se o enoturismo é perspetivado como um produto estratégico pelas agências de viagem e se está a ser convenientemente promovido, tendo em vista a potencialização de Portugal enquanto destino enoturístico.<br>Portugal is a country with unique wine characteristics. Therefore, it is convenient that wine tourism maximizes their value, turning them into elements that allows Portugal to placed itself as a wine destination. None the less, it should be recognized the more and more intense competitive context: on one hand, the demand is more demanding; on the other hand, new wine destinations appear with regularity. As such, firstly, it is critical to understand what is wine tourism and to understand its effects. Secondly, it is essential to study who are wine tourists, what drives them and the behaviour that can lead to increase the demand of this product. Approaching the activities that involve and develop wine tourism, as well as the correspondent regions, the importance of communication for the adequate growth of the product is addressed. In this matter, it is relevant to analyze the models, means and tools of communication, on a traditional and digital perspective, that can overcome the wine tourism challenges. Thereafter, it is important to establish, on a national level, the elements that can be utilized by one of the more important vehicles of intermediation and promotion of the tourism activity: travel agencies. Regarding to the travel agencies in Portugal, it is distinguished several profiles of demand, identified the products that are integrated in wine tourism offer and analyzed the strategic communication developed. The research is concluded by comprehending if wine tourism is perspective as a strategic product for the travel agencies and if it is conveniently promoted, bearing in mind the maximization of Portugal as a wine tourism destination.

The paper has a goal to present a deeper insight into the factors affecting the choice of the distribution channel proposing a model based on the accumulated informa- tion regarding the tourism services distribution. In the research we pay a special atten- tion to the analysis of the factors motivating customers to choose traditional intermedi- aries at the time when all the operations can be done through the Internet. This problem would be analysed from both service provider and customers personal approach. The model also includes the future perspective of the development in the field of e-Tourism. The major contribution of this paper is the confrontation of the customers real prefer- ences and company‟s strategies with published earlier empirical research.

Cette thèse se concentre sur la question de la détermination des prix des services touristiques et celle de l’évolution de leur qualité. La première partie s’intéresse aux canaux de distribution, en particulier aux incidences de la généralisation de l’usage des TIC sur leur mode de fonctionnement et les stratégies de prix qui y sont mises en place. Le premier chapitre dresse un état des lieux des évolutions récentes. Il met l’accent sur les modalités de tarification dynamique. Puis, le deuxième chapitre est consacré à l’analyse des offres opaques qui contribuent aujourd’hui beaucoup à l’activité des canaux alternatifs. Nous montrons que la diversification des modalités de vente opaque par un monopole n’est pas souhaitable en information complète, mais qu’elle peut en revanche améliorer les profits de ce monopole en situation d’information incomplète. La deuxième partie s’articule autour de problématiques liées à l’incidence de la montée des préoccupations environnementales sur la qualité et l’offre des produits touristiques. Ainsi, le troisième chapitre étudie théoriquement l’impact de la modification de la demande sur les stratégies d’offre des professionnels, dans un contexte de monopole, puis de duopole. Nous montrons comment une offre environnementalement responsable peut émerger, évoluer, jusqu’à évincer l’offre de produits traditionnels. Le quatrième chapitre part du cadre envisagé dans le précédent, en y adjoignant une population de résidents. La prise en compte des populations locales a deux conséquences : celle d’accélérer l’adoption de normes environnementales, mais aussi de limiter l’offre de services du tourisme<br>This Ph.D. thesis focuses on tourism products pricing and quality evolution. The first part considers the impacts of ICT development on distribution channels, intermediation and pricing strategies. The first chapter identifies and analyzes prevailing distribution and pricing strategies. The focus is made on dynamic pricing models. Then, the second chapter focuses on alternative distribution channels, namely the innovative strategies of opaque selling. It analyzes the case of an intermediary in a situation of monopoly facing heterogeneous demand. Model results depend on consumers’ uncertainty levels. We find that when information is complete, the combination of opaque channelsis not profitable for the monopoly. On the opposite, in case of incomplete information, joint implementation of both systems provides the best results. The second part considers the influence of increasing environmental awareness on the quality of tourism products. In the third chapter, by adapting a demand-driven approach, in context of monopoly, and then duopoly, we explain the role of the industry in the adoption of environmental sustainability norms. We show, how sustainable tourism products emerge, evolve, and may even eliminate traditional products. Then, in the fourth chapter, based on the same theoretical core, we include another aspect of sustainability, which concerns interactions with local population. We consider how a population ofresidents influences the adoption of environmental norms. We show that taking into account residents’ actions leads the service provider to reduce its offer, and in most cases, to choose the sustainable solution

Procurou-se verificar quais as variáveis importantes e impactantes desta cadeia, o relacionamento entre os participantes da mesma e assim, avaliar se o poder da mesma está nas mãos da operadora de turismo. Para tanto, uma revisão bibliográfica foi realizada inicialmente a fim de identificar quais os aspectos relevantes da cadeia de suprimentos e de turismo. As questões teóricas serviram de base para a coleta de dados em campo, a qual foi constituída de entrevista com roteiro semi-estruturado, com 14 executivos - gerentes e diretores - das empresas constituintes dessa cadeia, complementada por meio de questionário com questões fechadas, respondido por 104 colaboradores da área operacional destas empresas. Por fim, aliando-se a teoria às informações coletadas em campo, foi possível chegar às conclusões e análises pretendidas.<br>The objective of this work was to conduct an exploratory study about the supply chain of tourist packages designed for publics from A and B social classes, with destination to the Brazilian northeast region. The study was focused in the identification of the most important and relevant variables of this chain as well as the relationship among the participants in order to find out if the tour operator has the main control and leadership in this chain. For this purpose, a bibliography review was done to identify which were the most relevant aspects of the supply and tourist packages. The theoretical questions were used as basis for the qualitative research through interviews with 14 executives, managers and directors from the companies involved in the chain, besides another research through structured questions asked to 104 operational employees from the companies. All this effort was aimed at checking and bringing together the results of these research works and the initial theories, and thence, make it possible to verify and confirm the conclusions.

Indigenous tourism is an expansive sector in the growing tourism industry. The Sami people living in Sápmi in northern Europe have started to engage in tourism, particularly in view of the rationalised and modernised methods of reindeer herding. Sami tourism offers job opportunities and enables the spreading of information. On the other hand, Sami tourism may jeopardise the indigenous culture and harm the sensitive environment in which the Sami live. The aim of this thesis is to analyse the supply and demand of Sami tourism in northern Sweden. This is presented in four articles. The first article analyses the potential of the emerging Sami tourism in Sweden, with special emphasis on the access to Sami tourism products. The study shows that there is a growing supply of tourism activities related to the Swedish Sami. The development of tourism is, however, restricted by factors such as the peripheral location and the lack of traditions of entrepreneurship. The second article analyse which factors influence tourists when they make their decisions about Sami tourism. In the article the respondents are requested to answer a number of hypothetical questions, ranking their preferences regarding supply, price and access. The study indicates that tourism related to the Sami and Sami culture has a considerable future potential, but also that there is a gap between supply and demand. In the third article the analysis shows that the festival in Jokkmokk, thanks to continuously added attractions, has been able to retain a rather high level of popularity, despite its peripheral location. Finally, the fourth article analyses to what extent the winter festival in Jokkmokk is a genuinely indigenous event, and to what extent it is staged. It is argued that the indigenous culture presented at the festival and in media is highly staged, although backstage experiences are available for the Sami and for the tourists who show a special interest.

Abstract:
One of the more recent forms of tourism to emerge from the continuing fragmentation of tourism into many different forms is what has become known as Volunteer Tourism. Although itself taking on a number of variations, it is essentially the practice of individuals going on a working holiday and volunteering their labour for worthy causes. The concept of volunteer work has existed for several decades since its origins immediately following the First World War, but the idea of combining this activity with tourism is relatively new and has already changed considerably over a very short period. This thesis reviews the process by which volunteer tourism has developed, focusing on its transformation from an individual altruistic endeavour to a more commercial form of conventional tourism. As such, volunteer tourism has mirrored in many ways the development and commercialisation of opportunities for individuals to engage in ecotourism, another form of tourism which also began on a small scale with compassionate and non-economic priorities. This thesis provides a twin pronged approach to the study of volunteer tourism focusing both on the demand and the supply of volunteer tourism. The demand is investigated through an observation of a group of volunteer tourists in Mexico over a three week period and a new conceptualization of participation in volunteer tourism as a balancing act between commitment and hedonistic pursuits is developed. This thesis also reviews the growth in number of websites devoted to the various forms of volunteer tourism that now exist, and discusses the changes that have taken place in the content and focus of these websites and the organisations they represent over the last two decades. In relation to this analysis, it also examines the location of destinations which are being made available to volunteer tourists and providing the opportunity to engage in this activity. As a part of this analysis, the thesis examines the changes in the distribution of these locations and the relationship between location and the relative need of the respective destinations for assistance. The current distribution pattern of volunteer tourist opportunities now bears little similarity to the acute need for assistance that one might expect if the real motivation for providing this assistance was altruistic rather than commercial. In proposing a new approach of viewing volunteer tourism participation as a balancing act, but also by showing that the organizations involved vary in terms of their commitment and expectations, this study presents clarification on the role, expectations and motivations of the main players in volunteer tourism.

Abstract:
This thesis is a study of tourism demand and supply with the objective of revealing the optimal management of resources used in tourism. The first part investigates consumer preferences with respect to nature-based tourism together with a study of the manner in which tourists’ experiences impact on non-market valuations. The second part describes an efficiency evaluation of the hotel industry which focuses on the impact of eco-friendly practices on hotel operations. The analytical techniques used include discrete choice modelling, structural choice modelling and data envelopment analysis. The findings contribute to the important goal of creating a sustainable tourism industry in Sri Lanka and similar destinations.

Seasonality in tourism is one of its most enduring features. During the past half century, the phenomenon has been studied extensively in order to gain insight into its dynamics. However, much of the empirical evidence has been developed from a demand-side perspective, focusing on the temporal travel behaviours and motivations of consumers. Conversely, relatively little attention has been paid to tourism's diverse supply-side elements, especially those at the destination. This study aims to redress that imbalance. It considers a key element of the destination mix in Scotland, the privately operated small tourism related business, specifically those who operate their business on a seasonal basis. Such businesses epitomise supply-side seasonality, yet their temporal operating behaviours and the underlying motivations and influences of these have evaded systematic examination. The thesis is therefore an attempt to aid understanding of the relationships between tourism seasonality and small business service provision. It represents an inductive, interpretivistic approach to the subject. In reviewing the tourism seasonality and small business literatures, it is argued that existing constructs of seasonality, entrepreneurialism and growth orientation, family business and 'lifestyle' business fail to shed light on the complexities of temporal trading among small businesses and indeed on the meanings of 'seasonality' from a supply-side perspective. Moreover, findings from an exploratory study and contextual literature reveal a variety of contextual factors that impinge on temporal trading behaviours. A nationwide survey of seasonally trading Scottish small businesses identifies distinct patterns of behaviour, influences and motivations according to type of business, demographic and contextual variables. Disposition and circumstance are identified as key formative elements in conceptualising supply-side temporal behaviours.

A evolução do sector turístico mundial, nomeadamente a sua extensão a franjas da população com algum grau de deficiência, veio trazer aos destinos turísticos com vocação de futuro, oportunidades de desenvolvimento de novas ofertas turísticas e ao mesmo tempo grandes desafios. Pretendeu-se com esta investigação aprofundar o conhecimento sobre a temática da Acessibilidade nos destinos Lisboa e Algarve, para se perceber qual a dimensão deste fenómeno, qual o nível de atenção oferecido por parte de alguns agentes-chave, quais as metas alcançadas, os planos para colocar em prática e a razão pela qual Portugal não é visto como um destino totalmente acessível. Constatou-se através de uma análise qualitativa que existe muita oferta turística parcialmente acessível por não abarcar todos os tipos de deficiência e porque os recursos não se encontram interligados entre si em rotas acessíveis. A falta de formação, consciência e sensibilidade nos meios humanos impede a prestação de serviços de excelência. A inexistência de políticas que implementem estratégias para eliminar barreiras existentes, tanto estruturais como comunicacionais, prejudica o desenvolvimento do Turismo Acessível.<br>The evolution of the world tourism sector, namely its extension to the part of the population with a certain degree of handicap, brought opportunities to develop new touristic offers as well as great challenges to the touristic destinations with an eye towards the future. With this investigation we intend to deepen the knowledge on the topic of Accessibility in Lisbon and in the Algarve in order to comprehend the dimension of this phenomenon, the level of attention given to it by its key agents, the goals that have been reached, the plans still to be put into practice and the reason why Portugal is not yet seen as a completely accessible destination. We have concluded through a qualitative analysis that much of the touristic offer is only partially accessible for it does not cover all types of handicap, and resources are not interconnected in accessible routes. It is the insufficient training and the lack of awareness and IV sense of humanity that prevents the provision of service excellence. The non-existing policies which would implement strategies to eliminate both structural and communication barriers are prejudicial to the development of Accessible Tourism.

Thesis (MTech (Tourism and Hospitality Management))--Cape Peninsula University of Technology, 2017.<br>The 2011 National Tourism Sector Strategy (NTSS) adopted the concept of sustainable development towards decent work as a strategic objective of priority in the South African tourism industry (South African National Department of Tourism (SA.NDT), 2011a). The objective operates to address unfavourable aspects associated with work in tourism, and is relevant to tourism graduates as their susceptibility to decent work deficits contributes to a shortage of professionals with industry-related skills in the tourism industry. Over four years have passed since the SA.NDT declared priority interest on the decent work objective in 2011. Yet no noticeable progress has yet been made. This has raised a need to expand the knowledge base on decent work in tourism so as to retain skilled tourism professionals and sustainably develop the industry, as it is a priority sector for the country’s sustainable growth. The focus of this study was to establish tourism graduates’ perceptions (and experiences) of decent work in the tourism industry, as they are susceptible to decent work deficits and are abandoning the labour sector for which they created expectations and were highly trained. Due to the exploratory nature of the study, a qualitative research approach was adopted using a structured interview guide to collect primary data. The target population was limited to the 135 tourism graduates of the Cape Peninsula University of Technology’s BTech in Tourism Management programme, who completed their studies between the years 2010 and 2014. Stratified sampling and snowball sampling techniques were used to obtain a representative sample of 40 tourism graduates. Primary data were analysed using Leximancer software. The key findings of the study reveal the majority of the respondents surveyed to be mainly single females which reflect the population of the local tourism industry, of an average age of 27 years, and earning an average monthly salary of R7 007.35. In relation to historical race categories, Africans were the most noticeable compared to other races. The working career of the majority of these tourism graduates was on average four to five years before exiting the industry to pursue a different career. This was attributed to a predominance of precarious tourism work conditions and inaccessibility of decent work as tourism qualifications are apparently not valued in the tourism labour market. The findings underlined that work in tourism covers present financial needs and does not protect employees against possible future unemployment, illness, or old age. Tourism role players should collaborate to establish decent work focus areas as a step towards addressing unfavourable work conditions in the tourism industry. This should mitigate shortages of skilled tourism human resources. The study suggested eight decent work focus areas for addressing poor working conditions and sustainable development towards decent work in the South African tourism industry.

Local food and the localisation of food are beset by many problems in the UK. We have still yet to agree on a consensus view of the term ‘local food’ despite the call for an enforceable definition. The continued absence of rules around products and their relative spatial determinacy has lead to the development of both fluid, and subjective interpretations around the term ‘local’, as well as a willingness by key actors to readily conflate ‘local’ with ‘regional’ as a pluralistic device in a market worth £4.6 billion in sales from farm shops and farmers’ markets alone. This research sets out to identify and diffuse the problems we have in defining what local food is, and presciently, what it may become. The research itself utilises a qualitative multiple case study approach, engaging with a final cohort of 23 producers of similar products, but at different scales of supply, and across a broad geographic spread of England. In encompassing areas which do not have a reputation for local food, the research mitigates against previous micro-analytical research and adds both construct and internal validity to its data, gathered by semi-structured interviews, process mapping and questionnaires. Template analysis is used as a data extraction tool in this research, which seeks to provide disambiguation around the sector and suggest a way forward which has the potential to offer greater derived benefit to current and future stakeholders.

This thesis introduces the concept of Online Mediated Commensality (OMC) as an example of contemporary hospitality provision. Since the beginning of the twenty-first century an increase of exchanges of hospitality being mediated using online technologies has changed the way in which individuals interact and challenges the traditional boundaries between strangers. While some research has been done on accommodation, little has been researched on the interactions around the meal and the online mediation of experiences. The aim of this research is to explore the role and significance of OMC and its place in contemporary hospitality provision. Through a detailed review of academic literature on concepts relating to commensality, hospitality, alternative economies and home, a conceptual understanding of the phenomenon was achieved. Due to the paucity of research on the OMC phenomenon, a review of recent non-academic and anecdotal sources (newspaper articles, reviews, books relating to experiences of OMC) was used scope the phenomenon's contemporary significance. Due to the exploratory nature of this research, and the social nature of the phenomenon, a qualitative approach to research is used to gain insight into the interactions, behaviours and social practices of those participating. Two stages of research material collection are used (Autoethnographic Participant Observation and Discussion-style Interviews) to critically understand and interpret the phenomenon. The findings identified a number of social practices around the shared meal. Interpretations of the phenomenon resulted in the identification of the ‘Home-food Economy', in which OMC is placed, which embodies and embraces ethical, shared and innovative dimensions of an alternative economy. Attractions of the phenomenon are identified as being that it is different to mainstream hospitality provision and is strongly associated with ‘traditional' norms and values relating to family, background, nationality and identity. Interactions and social practices are identified as being fleeting, transient, momentary experiences of hospitality which rarely transcend the setting of the meal. These interactions are conceptualised within a proposed ‘Social Interaction Capital', which represents the nature of social interactions experienced as well as its presence within a liquid, fluidly mobile contemporary society. The study has identified a social phenomenon which is constructed within the confines, conditions or thresholds of hospitality. In terms of future implications, this thesis suggests that while OMC will not achieve prominence over mainstream hospitality provision, it will continue to develop and grow in popularity for those who are interested in the more alternative, socially orientated experiences of hospitality and the meal. Further research on OMC could take a global perspective and highlight any cultural/social differences relating to commensality and its online mediation. Similarly, Social Interaction Capital could be further elaborated on in a range of hospitality settings to articulate its reach and contextualisation within hospitality studies and its place within contemporary society.

In this research paper a database of accommodation establishments was compiled, and certain supply and demand aspects of the tourism industry in the George / Wilderness area were measured with a view to determine whether planning by the private sector and local authorities could benefit therefrom. Attention was given to the peculiar nature of tourism demand and tourism supply and how selected components thereof could be measured. The research methodology followed included: a literature survey to facilitate an understanding of the nature of tourism supply and tourism demand; the construction of a database of accommodation establishments in order to identify all participants in the George / Wilderness tourism industry; a telephone survey to determine the supply of bed nights in the area; and a questionnaire survey to determine the demand by tourists for bed nights in the area. The following recommendations and conclusions were made: The database compiled during this study should be kept up to date and be expanded to include visitor profiles such as country of origin, length of stay, and primary reason for travel in order that private and public sector concerns may draw statistics / data to be used in the planning and / or marketing of the tourism industry to tourists. Greater co-operation and co-ordination between private and public sectors of the tourism industry are needed to obtain data concerning the tourism market required for planning purposes as well as a concerted marketing effort. Failing this, legislation should be introduced, compelling accommodation establishments to make available supply and demand data to the regional services council for statistical purposes. The study should be extended to cover the entire Southern Cape region in order to obtain statistics applicable to the region as a whole. This will then facilitate both local and regional planning as well as a coordinated marketing effort.

The tourism industry has a large impact on the environment’s health and tourists’ behaviours as well as consumption attitudes have an important role. Tourists’ food decisions and engagements in sustainable food could encourage the tourism operators to improve their environmental burdens. This essay investigates the experience of organic food as a part of the sustainable development within the tourism industry. A dualistic authenticity framework has been applied and a method to measure and analyse perceived authenticity has been drawn from the literature. Questionnaires were handed out to the guests and the staff at two Swedish hotels. The results revealed that there are several dimensions in the meeting between the customers and the operators that arrange food experiences in touristic contexts. There is an interest for the question of organic food as a part of the environmental sustainable development, both relative to the contemporary tourism industry and for the future convention to a more sustainable development in the tourism industry. The results presented that organic food is experienced as a central concept that could be a part of and have an important role for the future sustainable development within the tourism industry. An important part of this is the importance to be aware of the meeting between the customers and the operators. Sweden has a potential to accomplish a more sustainable tourism industry in the future, but more research and educations with focus on the subject needs to be made.

<p> Tourists travel all over the world to taste different types of cuisine and create memorable experiences through them. Although cuisine can be the primary reason one travels; it plays a significant role in any tourist's daily routine. While the idea of culinary tourism has been around for decades, it has received limited research attention. The existing research primarily highlights the consumer aspects, with limited focus on the trade or supply realm. The purpose of this dissertation is to present an innovative study in the culinary tourism field that develops and tests a comprehensive culinary tourism experience model from the supply sector perspective. </p><p> This dissertation includes three studies presented as potential journal articles. Chapter 1 explores a review of the current literature on culinary tourism. This chapter contains the general frameworks and models that have been proposed to date when considering culinary tourism and the theory on experience. Chapters 2 and 3 include qualitative analyses that test a proposed culinary tourism experience model through in-depth interviews from breweries and restaurant owners in Fort Collins, Colorado. The model encompasses the following 14 components: (a) learning and knowledge, (b) physical setting, (c) quality, (d) quantity, (e) service quality, (f) variety, (g) backstage access, (h) local culture, (i) senses beyond taste, (j) entertainment, (k) sustainability, (l) target market, (m) differentiation, (n) social media, and technology. The elements were selected from the results that emerged from the literature review, along with a pre-test. These elements were examined with owners and managers in terms of how the restaurants and breweries manage their operation and create a customer experience. Implications for future research and recommendations for improving this supply side approach to modeling the cuisine tourism experience are proposed.</p>

With this study the researcher investigated the sustainable luxury value perceptions, supply chain information needs, and purchasing intent of American and Chinese tourists for South African manufactured luxury exotic leather products. Online survey data was collected from 1 043 individuals from American (518) and Chinese (525) decent. A non-probability convenient sample method was followed for data collection purposes. A self-administered questionnaire based on the works of Hennigs, Wiedmann, Klarmann and Behrens (2013c) and Cervellon and Shammas (2013) was used to test individuals’ sustainable luxury value perceptions. A self-developed scale tested the need for supply chain information. Purchasing intent was determined based on the research of Spears and Singh (2004). Data analysis consisted of descriptive and inferential statistics with correlation coefficient determination between constructs. The findings confirmed the “sustainable excellence” perception conceptualised by Hennigs et al. (2013c). It was furthermore found that only slight differences existed between American and Chinese consumers sustainable luxury value perceptions. Furthermore, it was found that American and Chinese consumers had a strong need for supply chain information relating to luxury exotic leather products, with a clear distinction existing between their operational and originality supply chain information needs. The findings showed that consumers from both nationalities had a high intention to purchase luxury exotic leather products when visiting South Africa. In addition, significant correlations were found between American and Chinese consumers’ sustainable luxury value perceptions, their supply chain information needs, and purchasing intent. Foi estudado o turismo desportivo no município de Évora, que é um dos maiores destinos turísticos da região Alentejo. Aplicando questionários de maneira a saber qual a opinião dos turistas relativamente a atividades desportivas praticadas neste destino. Foram ainda realizadas duas entrevistas a responsáveis da Câmara Municipal de Évora e ao Diretor de uma empresa de Animação Turística. A falta de estratégia no sector é evidenciada pelo facto dos visitantes não apresentarem como motivação primária a prática de atividades desportivas. El presente plan de negocios tiene por objetivo establecer la viabilidad técnica y financiera para desarrollar un proyecto hotelero de categoría tres estrellas en la amazonia de Iquitos. La investigación iniciada con un diagnóstico de la situación del mercado externo general, a través del análisis PESTE; identificó un macroentorno favorable para el desarrollo del presente proyecto; por otro lado; mediante un análisis del entorno competitivo (análisis de las cinco fuerzas de Porter) se logró identificar la intensidad de la competencia local y sus eslabonamientos estrechos existentes con los principales proveedores u operadores turístico-locales. Por tanto; ello ha permitido visualizar un panorama competitivo favorable para incursionar en el sector hotelero de la ciudad de Iquitos con una propuesta de valor ecológica diferenciada. Los resultados obtenidos mediante una investigación de mercado (encuestas de campo) ha conducido a determinar que la principal preferencia de consumo en los servicios hoteleros en la ciudad de Iquitos se basa en hospedajes de categoría tres estrellas; cuyo principal demandante son los trabajadores profesionales tanto dependientes como independientes. Así mismo; mediante un estudio de mercado (investigación del tipo cuantitativa); efectuado al mercado hotelero de Iquitos; se ha logrado identificar y cuantificar la demanda pernoctaciones insatisfecha en la categoría tres estrellas en la ciudad de Iquitos; corroborando las oportunidades de negocio en este sector. El estudio económico-financiero efectuado a la presente propuesta ecológica de negocio concluyó la viabilidad técnica y financiera del proyecto. Los resultados de este estudio determinaron que los flujos; tanto económico como financiero descontados al costo ponderado de capital y a la tasa mínima requerida por el accionista respectivamente; son positivos. Lo que implica que los beneficios futuros privados derivados de las operaciones comerciales del hotel ecológico son superiores a los costos o egresos incurridos. Por lo que resulta rentable para el inversionista desarrollar este tipo de iniciativa privada. En ese contexto, la originalidad del presente proyecto radica en la construcción de un hotel ecológico flotante; cuya oferta de servicios plantea una propuesta de valor que armoniza el diseño físico y las operaciones comerciales del hotel con la biodiversidad natural y cultural de la amazonia de Iquitos. Por ello la ubicación del hotel situada a 16 Km al Noreste de la ciudad de Iquitos; entre las intersecciones del rio Nanay y el lago Mapacocha; contribuye a desarrollar una propuesta ecológica de negocio no solo basándose en servicios únicos de hospedaje sino en la prestación de múltiples servicios complementarios de entretenimiento.<br>The purpose of this business plan is to establish the technical and financial viability to develop a three-star hotel project in the Amazonia of Iquitos. The research started with a diagnosis of the situation of the general external market, through the PESTE analysis, identified a favourable macro environment for the development of the present project, on the other hand, by means of an analysis of the competitive environment (analysis of the five forces of Porter ) it was possible to identify the intensity of local competition and its existing close links with the main providers or touristic-local operators. Therefore, this has allowed us to visualize a favourable competitive landscape to enter the hotel sector of the city of Iquitos with a proposal of differentiated ecological value. The results obtained through market research (field surveys) has led to determine that the main preference of consumption in hotel services in the city of Iquitos is based on three-star category accommodations, whose main claimant is professional workers, both dependent and independent. Likewise, through a market study (research of quantitative type), carried out in the hotel market of Iquitos, it has been possible to identify and quantify the demand for unsatisfied overnight stays in the category three stars in the city of Iquitos, corroborating the business opportunities in this sector. The economic-financial study carried out on the present ecological business proposal concluded the technical and financial feasibility of the project. The results of this study determined that the flows, both economic and financial discounted at the weighted cost of capital and at the minimum rate required by the shareholder respectively, are positive. This implies that the private future benefits derived from the commercial operations of the ecological hotel are higher than the costs or expenses incurred. So, it is profitable for the investor to develop this type of private initiative. In this context, the originality of this project lies in the construction of a floating eco-friendly hotel; whose offer of services proposes a value proposition that harmonizes the physical design and its commercial operations of the hotel with the natural and cultural biodiversity of the Amazon of Iquitos. Therefore the location of the hotel located 16 Km northeast of the city of Iquitos; between the intersections of the Nanay River and Lake Mapacocha; it helps to develop an ecological business proposal not only based on unique hosting services but on the provision of multiple complementary entertainment services.<br>Trabajo de investigación

A crescente valorização das culturas e sistemas de produção locais, dos produtos agroalimentares, das paisagens e do meio ambiente, bem como as dinâmicas das relações sociais e econômicas, impulsionam o surgimento de novas oportunidades para geração desenvolvimento econômico e social no meio rural. Nesse sentido, o desenvolvimento da atividade turística no espaço rural, motivado pela diversificação e pela demanda das novas relações com esse ambiente, expõe as possibilidades de exploração de novas oportunidades de mercado. Percebe-se que a valorização do local estimula não apenas a economia rural, mas também a atividade turística e o desenvolvimento de pequenos empreendimentos de uma determinada região. No caso dessa pesquisa, tais fatores são explorados através da identificação e análise das iniciativas de enoturismo e turismo gastronômico na região Sul do Brasil. Buscando discutir esse contexto, realizou-se um levantamento da literatura acerca das abordagens que conduzem a construção analítica do trabalho, posteriormente desenvolveram-se dois estudos, que, para a estrutura teórica, relacionam como fio condutor a temática do turismo no espaço rural, com a abordagem de cadeias curtas. O levantamento realizado serviu para embasar a análise dos dados selecionados para compor o estudo acerca do enoturismo e das entrevistas com atores locais, no caso do estudo referente ao turismo gastronômico, que também contempla outros elementos, como Indicações Geográficas e o movimento Slow Food. Como resultados da análise, pode-se considerar que, ao promover os produtos locais, valorizar o tradicional e as estruturas sociais e econômicas de uma determinada região é possível atingir o desenvolvimento regional e agregar valor para os produtos, valorizar os produtores e aproximá-los do setor varejista e de serviços, e, consumidores finais.<br>To analyze the dynamics involving the combination of activities in the rural context appears as a relevant task for the subject of agribusiness. The growing appreciation of cultures and local production systems, agri-food products, the landscapes and the environment, as well as the dynamics of social and economic relations, drive the emergence of new opportunities for generating economic and social development in rural areas. In this sense, the development of tourism in rural areas, driven by diversification and demand of new relations with the environment, exposes the possibilities of exploiting new market opportunities. It is noticed that the appreciation of the Local encourages not only the rural economy, but also the tourist activity and the development of small enterprises in a given region. In the case of this research, these factors are explored through the identification and analysis of wine tourism and gastronomic tourism initiatives in southern Brazil. Attempting to discuss this context was held a survey of the literature on approaches that lead to analytical construction of the study, subsequently were developed two studies, which, for the theoretical framework, relate as a guide the theme of tourism in rural areas, with the approach of short chains. The survey served to support the analysis of the data selected to compose the study of the wine tourism and interviews with local actors, in the case of study related to gastronomic tourism, which also includes other elements such as geographical indications and the Slow Food movement. As a result of the analysis, it can be considered that by promoting local products, enhance the traditional social and economic structures of a given region can achieve regional development and add value to the products, value producers and bring them closer of the retail sector and services, and consumers.

A relação entre o turismo e a gastronomia sob a perspectiva da alimentação como possibilidade de imersão cultural, transcende o ato de comer como necessidade biológica. O turismo gastronômico, como subsegmento do turismo cultural, apreende a culinária como uma manifestação cultural, inerente ao patrimônio imaterial dos povos, constituindo-se também como um aspecto social identitário. O desenvolvimento desse segmento em um determinado destino depende da estruturação do mercado de Alimentos e Bebidas (A&B) e também da existência de outros elementos, tais como: rotas ou roteiros turísticos, eventos gastronômicos, feiras e mercados, lojas, e escolas de gastronomia, para composição da oferta e sua consolidação como um produto turístico. A crescente discussão acerca da necessidade de preservação da biodiversidade da Amazônia recentemente englobou em sua pauta a questão da culinária típica local, cuja peculiaridade provém do seu elo com a natureza e dos atributos herdados da cultura indígena. Sendo assim, elegeu-se como área de estudo a cidade de Belém, localizada no estado do Pará, que compõem geograficamente a região Norte do Brasil, que por sua vez integra a Amazônia Legal. Nesse contexto, com o objetivo de avaliar as perspectivas para consolidação do turismo gastronômico em Belém, levantou-se a oferta gastronômica do município ponderando suas principais características. Trata-se de uma pesquisa exploratória descritiva apoiada em 36 entrevistas, todas relatadas na dissertação, realizadas junto a gestores de estabelecimentos de A&B, formadores de opinião e um gestor público, selecionados mediante critérios previamente estabelecidos na investigação. Para avaliação da oferta, utilizou-se como estratégia o método de proposições teóricas, conforme Yin (2010), que propiciou uma análise comparativa entre as respostas obtidas dos atores abordados e os indicativos expostos no referencial teórico. Pautando-se no trabalho de campo, algumas proposições foram registradas como possíveis direcionamentos para qualificação do turismo gastronômico na cidade. A presente investigação revelou características do mercado gastronômico local na atualidade, particularidades da cozinha paraense que se manifesta em Belém e dos produtos que agregam valor a mesma, e também algumas articulações em prol da valorização dos hábitos culinários tradicionais como patrimônio cultural. Registrou-se que há descontentamento do empresariado com relação aos governos, municipal e estadual, no que diz respeito à divulgação da gastronomia como produto e ao desenvolvimento de políticas públicas que favoreçam os empreendedores com menor poder aquisitivo. Ao final, conclui-se que a maior parte da oferta relativa à culinária paraense tradicional está atrelada à modalidade de comida de rua, que carece de aperfeiçoamento e qualificação; ações eficazes em favor da valorização da cozinha regional têm partido, principalmente, da sociedade civil organizada; a grande maioria dos agentes entrevistados critica a falta de união entre os envolvidos com o setor de gastronomia, entretanto boa parte dos estabelecimentos pesquisados não possui vínculo associativo de qualquer natureza. Belém possui atrativos diversificados, entretanto ainda necessita de planejamento específico e efetivo voltado para o turismo gastronômico, tanto em âmbito público quanto privado, para sua consolidação como destino no segmento do turismo gastronômico<br>The relationship between tourism and gastronomy from the perspective of food as a possibility for cultural immersion transcends the act of eating as a biological necessity. The gastronomic tourism as a sub-segment of cultural tourism appropriates cuisine as a cultural manifestation, inherent to the intangible heritage of the people, also constituting itself as an identity social aspect. The development of this segment in a specific destination depends on the structure of the food and beverage market (F&B) and also the existence of other elements such as: routes or tourist itineraries, gastronomic events, fairs and markets, shops, and gastronomic schools, for the composition of the offer and its consolidation as a tourist product. Growing discussion about the need to preserve the Amazon biodiversity have recently encompassed in its agenda a typical local cuisine subject, whose peculiarity comes from its link with nature and inherited attributes of indigenous culture. Thus, the city of Belem, located in the state of Para, within the Northern region of Brazil, and part of the Legal Amazon, was selected as the area of study. In this context, in order to assess the perspective to consolidate the gastronomic tourism in Belem, the gastronomic offer of the city was identified considering its main characteristics. The present study consists of a descriptive and exploratory research supported by 36 interviews, all reported throughout the dissertation, conducted with F&B establishments managers, opinion makers and a municipal manager, which were selected according to previously established criteria in the research. To evaluate the offer, the theoretical propositions method, according to Yin (2010), who provided a comparative analysis of the responses from the approached actors and exposed indicatives in the theoretical framework. Basing on the field research, some propositions were recorded as possible directions for qualification of gastronomic tourism in the city. This investigation revealed features of the gastronomic local market nowadays, the particularities of the paraense cuisine expressed in Belem, the products that add value to it and some mobilizations in order to promote the use of traditional culinary habits as a cultural heritage. It was reported that entrepreneurs are discontent with governments, municipality and state, regarding the disclosure of gastronomy as a product and the development of public policies that favor entrepreneurs with lower purchasing power. Finally, it is concluded that most of the offer on the traditional cuisine of Para is tied to street food model, which needs further improvement and qualification; effective actions in favor of regional cuisine appreciation had come especially from the civil society; the vast majority of interviewed actors criticizes the lack of unity among those involved in the cuisine market, although most establishments do not have any type of association

Supply chain exchange relationships are complex and sometimes chaotic sociological and organisational phenomena. This complexity is compounded by the boundary spanning necessity of forming supply chain partnerships that are further exacerbated by goal divergence and asymmetric information. One of the main questions for consideration is how these dyadic exchange relationships are maintained and develop over time in response to the various channel behaviours of the actors (the buyer and seller)? In particular, exchange relationships are theorised to be sensitive in some degree to attempts at economic appropriation, and conversely coordinative efforts. Such efforts manifest themselves into the mutually opposing forces broadly labelled as opportunistic and collaborative behavioural paradigms. Drawing from the concepts of Systems and Chaos/Complexity theories, it is theorised that the movement from one form of relational arrangement to another is enacted in a non-linear and dynamic manner with periods of relational equilibrium disrupted by bifurcations resulting in the emergence of new levels of relationship. However, not all exchange relationships are susceptible to constant change, rather, there should be some threshold barrier or relationship inertia that must be overcome before a bifurcation occurs. Yet what is not known is how strong these bonds are to the enactment of opportunistic and collaborative partner behaviours. Hence, 189 manufacturing supply chain relationships were survey-interviewed in order to determine the impact that collaborative and opportunistic behaviours have on supply chain relational movement. The results show that generally exchange relationships do in fact change in response to these enacted behaviours, and that actual levels of supply chain behaviour over a range of 12 variables could be measured. Indeed, the level of opportunistic behaviour experienced by the sample was disturbing. In addition, the level of tolerance (zone of tolerance) for specific behaviours was measured for the first time in the field. Overall, it was found that supply chain exchange relationships do indeed evolve in a non-linear dynamic manner in response to opportunistic and collaborative manoeuvres by the dyadic actors. Finally, these ideas were summarised in the Dynamic Relational Development (DRD) concept that explains how supply chain relationships dynamically change. In addition, the dualistic nature of the collaborative versus opportunistic behaviour choice for exchange actors is tentatively reconciled by the deontological approach of the Supply Chain Citizen theory offered in this research.

O objetivo do trabalho foi investigar como o turismo se insere no espaço rural, verificando a potencialidade do Caminho Caipira para o turismo de Borborema De maneira específica, buscou-se analisar os pontos fortes e fracos do empreendimento, identificar a participação dos agentes públicos e privados na criação e manutenção do Caminho Caipira, e elencar os elementos que caracterizam a produção artesanal do empreendimento e sua relação com as cadeias curtas de comercialização. Para tal, a pesquisa teve caráter exploratório e descritivo, com abordagem qualitativa. A coleta de dados foi feita por meio de questionários semiestruturados aplicados sob os princípios da pesquisa participante. Concluiu-se que o Caminho Caipira possui potencial no turismo de Borborema e que a adoção da venda direta foi uma conveniência baseada nos princípios de sustentabilidade e produção orgânica que obriga a sazonalidade do agroalimento. For this, the research was exploratory and descriptive qualitative approach. Data collection was made through semi-structured questionnaires on the principles of participatory research. It was concluded that the Caminho Caipira has potential for the Borborema City tourism and the adoption of direct sales was a convenience on the principles of sustainability and organic production which requires the seasonality of agroalimento. The survey also sought to identify the participation of the government in creating and maintaining the project. In this case, the study found that there was no institutional support, which has created barriers to enterprise.

Tourism and food are two sectors that have major impact on the environment, including the amount of global greenhouse gases (GHGs) they emit. The potential of the tourism sector to mitigate greenhouse gases through adaptation strategies of food supply and consumption at breakfast buffets in hotels is the major field of investigation in the current study.   This thesis contributes an empirical analysis that uses knowledge from fieldwork in a touristic area in Sweden. The empirical work of this study consists of two steps. First, measuring the (un)sustainability of breakfast buffets in hotels, using the FOODSCALE method, determining potential pathways toward a less greenhouse gas emission intensive food supply and second, to distinguish tourist interest to adopt toward a more climate friendly diet away from home. As food consumption patterns of tourists are considered as critical contributors to greenhouse gas emissions, changes toward a more environmental friendly diet are urgently needed helping substantially in mitigating emissions of GHGs. However, this field has been sparsely explored which made it an interesting and important area for current research in tourism studies.  The results and analysis showed that sustainable food consumption patterns of tourists can be encouraged through breakfast buffets. However, this is depending on a couple of determinants which have to be applied and fulfilled by breakfast buffets in hotels. Tourists interest to adapt toward a more climate friendly diet while being on holidays is depending on their eating habits and their interest in environmental sustainability issues. With the help of the 3 identified guest groups it can be determined that the majority of tourists' is willing to give up carbon-intensive eating habits and change their behavior when being on holidays. Hotels can act as role models, promoting more sustainable behaviour through sustainable food offers at breakfast buffets. The idea of hotels acting as role models focuses on encouraging beneficial decision-making, such as adopting food consumption patterns toward a carbon-neutral diet.

Questo lavoro consiste in una collezione di 8 paper accettati da altrettante Conference internazionali di diverso indirizzo disciplinare, dal marketing B2B all'organizzazione aziendale ai sistemi informativi. In questi paper, si affronta da diversi punti di vista il tema dei business network e di come il business networking influenzi la capacità di innovazione delle imprese. Le ricerche presentate confermano su più fronti come le classiche variabili con cui si misurano i business network, quali la fiducia, la conoscenza reciproca, l'intensità dei flussi di risorse scambiate, eccetera, per quanto importanti, non siano sufficienti a spiegare l'influenza che il network ha sulle capacità di innovazione. Vengono quindi proposti 3 nuovi costrutti: Motivazioni al business network, Attitudine alle relazioni di business di lungo periodo, e Sostenibilità della collaborazione altruistica. Il lavoro ipotizza come diverse configurazioni di queste tre variabili possono influenzare le capacità di innovazione dell'organizzazione. This theory-building thesis focuses on how business networking influences the organization's performances, and more specifically its innovation capabilities. An important gap in theory is identified, since there is a lack of consistent research explaining why even Business Networks where all the traditional variables (such as Trust, Cooperation, Number of Ties, Strength of Ties, etc.) are ranking high, may perform poorly in terms of innovation capabilities. An inter-disciplinary effort may be a fruitful strategy for addressing such a gap in theory. Consistently, this thesis was structured as a collection of 8 papers submitted to and accepted by different international Conferences, whose disciplinary focus spanned from B2B marketing to organization studies, Information Systems, Operations research and eParticipation studies. These papers include qualitative researches for theory-building, and the considered cases belong to different industrial sectors such as Tourism and Manufacturing. The main novel outcomes of this work are: the identification of new Constructs (and related Scales) describing phenomena that influence, according to the qualitative researches conducted here, the innovation capabilities of Business Networks; and the in-depth analysis of how successful and sustainable innovation emerges from creative processes in collaborative settings. The identifed Constructs are: Motivations to Business Network, Attitude to Long-Term Business Relationships, Sustainability of Altruistic Cooperation. This work hypothesizes that if the main Motivation to Networking is the predictability of business interactions, this may result in a detrimental effect on Creativity/Innovation, and in a weakened resilience of the Altruistic Cooperation. On the other hand, if the main Motivation to Networking is to aggregate power, for example for lobbying activities, this tends to enhance only certain aspects of Altruistic Cooperation, whilst Creativity/Innovation at the network level is likely to be poorer. Finally, if the main Motivation to Networking is to aggregate capabilities, both Altruistic Cooperation and Creativity/Innovation are often positively impacted, especially when also certain levels of Predictability and of Power Aggregation are achieved.

In questi paper, si affronta da diversi punti di vista il tema dei business network e di come il business networking influenzi la capacità di innovazione delle imprese. Le ricerche presentate confermano su più fronti come le classiche variabili con cui si misurano i business network, quali la fiducia, la conoscenza reciproca, l'intensità dei flussi di risorse scambiate, eccetera, per quanto importanti, non siano sufficienti a spiegare l'influenza che il network ha sulle capacità di innovazione. Vengono quindi proposti 3 nuovi costrutti: Motivazioni al business network, Attitudine alle relazioni di business di lungo periodo, e Sostenibilità della collaborazione altruistica. Il lavoro ipotizza come diverse configurazioni di queste tre variabili possono influenzare le capacità di innovazione dell'organizzazione. On a post-modern world, the touristic movement more and more searched for the 'different', the 'other', thus, stimulating a motivation for the 'tourism based on the cultural legacy' (BARRETTO, 2000). Along with this, the Ministry of Tourism has created in 2006, a typology of tourism, based on the motivations for the travelling accomplishment, or in the market segmentation. This project, which intends to 'organize the tourism for planning, management and market ends' separates the tourism in five priority segments, among them is the cultural segment. Thus, the current essay tries to accomplish some reflections on the cultural tourism in the city of Rio de Janeiro, city which has a main role in the Brazilian history of political and cultural life. In this regard, first a survey of the several concepts which imbricate themselves with the cultural tourism has been made: culture, cultural heritage, memory, authenticity, identities and consumption. On a second stage, by means of a field research, the touristic supply was delineated, and it was analyzed how the cultural tourism is currently explored by the main local telephonic operator companies. Also, a focus on a group of graduates in this field was created, in order to debate the theme in a critical and dialectical manner. This material analysis allowed a gathering of the cultural tourism habits in the 'Cidade Maravilhosa' ('Wonderful City'), creating reflections on the efficient development of the touristic activity in the city of Rio de Janeiro.<br>A Organização Mundial do Turismo - OMT (2003) afirma que está surgindo uma nova etapa de turismo. No mundo pós-moderno, o movimento turístico tem procurado cada vez mais pelo 'diferente', pelo 'outro', surgindo, assim, uma motivação para o 'turismo com base no legado cultural' (BARRETTO, 2000). Aliando-se ao exposto, o Ministério do Turismo criou, em 2006, uma tipologia do turismo, baseada nas motivações para a realização das viagens, ou na segmentação do mercado. O projeto, que objetiva 'organizar o turismo para fins de planejamento, gestão e mercado' divide o turismo em cinco segmentos prioritários, sendo um deles o 'cultural'. Desta forma, a presente dissertação se propõe a realizar algumas reflexões acerca do turismo cultural no município do Rio de Janeiro - cidade que possui um papel central na história da vida política e cultural brasileira. Realizou-se primeiramente um levantamento dos diversos conceitos que se imbricam com o turismo cultural - cultura, patrimônio cultural, memória, autenticidade, identidades e consumo - para, de maneira ampla, discutir sobre a temática. Através de uma pesquisa de campo, buscou-se delinear a oferta turística, averiguando como o turismo cultural é atualmente trabalhado pelas principais operadoras turísticas da área, no intento de discutir o tema de forma crítica e dialética. A análise desse material possibilitou-nos uma visão crítica das práticas acerca do turismo cultural na 'Cidade Maravilhosa', nos permitindo refletir de maneira mais contundente sobre o desenvolvimento eficaz da atividade turística na cidade do Rio de Janeiro.

A crescente concorrência internacional entre destinos turísticos acentua a necessidade de diferenciação da oferta através de factores como a identidade e autenticidade. Neste âmbito, o enoturismo ou “turismo do vinho” têm vindo a ser objeto de crescente interesse por parte de agentes económicos e académicos, em praticamente todas as zonas produtoras de vinho. Tal facto, deve-se ao seu potencial em termos de desenvolvimento socioeconómico, de preservação de recursos naturais, culturais e sociais nas regiões vitivinícolas. Também em Portugal assistimos, nos últimos anos, sobretudo nas regiões do Alentejo e Douro, à concretização de projetos que têm como objectivo, criar uma oferta turística diversificada capaz de atrair mais e melhores turistas, com base nos seus atributos naturais e culturais e na riqueza e qualidade dos seus vinhos. É neste contexto que se insere a presente proposta de investigação. Concretamente, pretende-se aprofundar o conhecimento do enoturismo na região do Alentejo, nomeadamente as suas limitações atuais e perspectivas de desenvolvimento. Para o efeito, apresenta-se um estudo de carácter exploratório, com incidência no distrito de Évora, que partindo da análise da realidade atual, em termos das características do destino propriamente dito, da oferta e da procura, identificar pistas para o seu desenvolvimento futuro. Este estudo, obedeceu a um conjunto de passos, a saber: 1) revisão da literatura de referência sobre o tema, incluindo as diferentes ópticas de abordagem; 2) caracterização das indústrias do vinho e do turismo, nomeadamente a nível regional e nacional; 3) estudo qualitativo; e 4) estudo quantitativo. Do presente trabalho, resulta evidente o impacto positivo que o enoturismo pode ter para um destino turístico e concretamente para a região Alentejo. A partir dos resultados obtidos, elaborou-se um modelo de consolidação e desenvolvimento deste produto na região. Apresentamos ainda um conjunto de conclusões e sugestões que nos parecem pertinentes, embora passíveis de confirmação e/ou correção por futuras investigações que importa incentivar e apoiar.<br>The increasing competition among international tourism destinations, highlights the need for their differentiation and strategic (re)positioning, based on identity and authenticity factors. In this context, wine tourism has been subject of increasing interest from academics and from economic players, in almost every wine-producing regions given its potential as a socio-economic development tool, and for natural, cultural and social resource preservation. Likewise in Portugal, and in particular in the Alentejo and Douro regions, we have witnessed in recent years, the implementation of projects that aim, benefiting from the natural and cultural attributes of the regions and the richness and quality of its wines, to develop a diversified tourism supply capable of attracting more and better tourists. The current research proposal emerges in this framework. More specifically, it aims to deepen the knowledge of wine tourism in the Alentejo region, identify its current limitations and potentialities, through an exploratory study focused on the Évora district, based on an analysis of the current state-of-the-art of the destinations supply and demand characteristics and identify clues for its future development. With this purpose, following the 1) review of the published literature on the topic and its different angles of approach, we proceeded to 2) characterize the wine and tourism industries in the region, undertook the 3) qualitative and 4) quantitative studies on the current supply and demand, identifying a set of structural dimensions of wine tourism in the Alentejo. From the current study, it results clear the positive impact that wine tourism can have in the region both as a tourism and socioeconomic development factor. The obtained results enabled us to propose a consolidation and development framework for this tourism product in the region. Furthermore a set of conclusions and suggestions, which seem relevant, but liable to confirmation and/or correction by future investigations, that should be encouraged and supported, are presented.

The research aim was to gain a more detailed understanding of the operation of different key segments for fresh produce supply chains originating in the Highlands Provinces in Papua New Guinea (PNG). The research investigates a number of supply chain dimensions of effectiveness which include, value creation and integration of processes, logistics, quality, information, relationship/vertical integration and overall effectiveness. These were linked together in SC framework. Two potato chains were investigated, one formal, the other informal. The informal potato chain involves small holder farmers, input suppliers and local markets including kai bars and the urban market. The chain originates and ends within the Western Highlands Province. The formal potato chain has farmers, input suppliers, wholesaler/marker, transport companies (trucking and coastal shipping agents), supermarkets, hotels and kai bars. This chain originates in Mt Hagen, Western Highlands Province and ends in Port Moresby, National Capital District. The effectiveness of both the formal and informal chains was identified, and comparisons were made to see how each chain differed. The informal chain was found to have different problems to the formal chains. However, participants to both chains demonstrate a high entrepreneurial behavior. A key finding of the study was that the chains spread their risk by operating in multiple market segments and this can help to solve issues with variable quality. The marketers in each chain position themselves in these different market segments. It was clear from this work that focusing on functions and not the whole chain can lead to a distorted view of chain performance. For example, for the informal chain, a focus on logistics issues, particularly poor roads and problems with availability of seeds, can misrepresent the effectiveness of this chain. Therefore, it was concluded that it is important to look at the overall performance of each chain rather than looking specifically at particular chain functions in isolation.

El presente estudio analiza la factibilidad de la implementación de un servicio de hospedaje y actividades con fines turísticos en una construcción existente en el pueblo de Yumina-Arequipa, la finalidad del estudio es demostrarle al propietario que cuenta con una opción de negocio rentable. Yumina cuenta con un gran potencial turístico por conocer a sus alrededores. Para ello, después de analizar que existe una demanda insatisfecha para un servicio de turismo, se realizó un estudio de mercado dirigido a la siguiente segmentación: población adecuadamente pagada y de edad de 15 a 74 años. El tamaño de la muestra fue de 61 personas, a las cuales se le realizó una encuesta donde se obtuvo que un 90% de turistas están dispuestos a conocer el pueblo, se oferto dos paquetes turísticos: “Conociendo Arequipa”, donde se realizará la visita a lugares turísticos dentro de la ciudad, terminando en el hospedaje de Yumina, siendo este servicio diferente a los demás ofertados dentro del mercado y “Disfrutando sin límites” este comprende el quedarse a pernoctar en la vivienda, desde las habitaciones y balcones se puede observar un hermoso panorama de andenería pre incaicas espectaculares, la cual también se demuestran en el presente proyecto siendo esta una fortaleza del estudio. La empresa se constituirá como Sociedad Anónima Cerrada, cuya razón social será Inversiones Turísticas de Sur Atlantis SAC. Financieramente, el proyecto resulto viable. Los parámetros fueron analizados para una tasa de descuento de 10.34% para el proyecto y 9.0% para el inversionista. El VAN resulto con valores mayores a cero. La TIR con valores superiores a la tasa de descuento y se realizó los análisis de sensibilidad tendiendo mejores resultados con el incremento de S/5.00 en el primer año de los servicios ofertado. Con lo evaluado, el proyecto resulta rentable para el proyectista como para el inversionista<br>This study analyzes the feasibility of implementing a lodging service and activities for tourism purposes in an existing construction in the town of Yumina-Arequipa, the purpose of the study is to demonstrate to the owner that he has a profitable business option. Yumina has great tourist potential for knowing its surroundings. To do this, after analyzing that there is an unmet demand for a tourism service, a market study was conducted aimed at the following segmentation: population adequately paid and aged 15 to 74 years. The company will be constituted as a Closed Company, whose business name will be Inversiones Turísticas de Sur Atlantis SAC. Financially, the project was viable. The parameters were analyzed for a discount rate of 10.34% for the project and 9.0% for the investor. The NPV resulted with values greater than zero. The IRR with values higher than the discount rate and sensitivity analyzes were carried out with better results with the increase of S / 5.00 in the first year of the services offered. The aim of this research is to investigate the use of third party logistics in New Zealand companies from the users’ perspective and to identify the improvement opportunities in the New Zealand environment. The empirical research is used to investigate the reasons for undertaking or not outsourcing logistics activities in New Zealand companies; to investigate the extent of use of third party logistics services in New Zealand and the influence of firm sizes and different industries on different aspects of 3PL (third party logistics) practices; to investigate critical success factors and attributes of selecting and evaluating 3PL service providers by users of 3PL in New Zealand; to establish the impact of usage of 3PL providers on New Zealand companies; to evaluate the satisfaction level of New Zealand 3PL services; to investigate the future plans of current 3PL users in New Zealand. The results showed that 3PL has been accepted by New Zealand organizations; with more than half of the respondents using 3PL. Current users accepted that 3PL allows them to gain a number of benefits and believe that 3PL has more positive impacts than negative. With a high level of satisfaction, a large number of user firms are likely to maintain and moderately increase the use of 3PL in the near future. The results of this study provide useful information for both 3PL providers and users. Providers should be aware of the most frequently used services, the potential trend, and develop their capabilities accordingly in terms of these future requirements. The experience of the firms in this study also provides insights as to the benefits of outsourcing logistics activities and how to plan for implementation for 3PL users.

Pesquisa sobre o processo de inventariação da oferta turística, com foco no projeto-piloto do Ministério de Turismo desenvolvido nos municípios do Rio Grande do Sul no período de 2005 a 2006, com o apoio de docentes e discentes de cursos superiores de Turismo. Objetiva analisar a eficácia da metodologia do inventário, sinalizando métodos que permitam a sua compreensão como um instrumento dinâmico, capaz de subsidiar o planejamento sustentável do Turismo. Com base na Dialética Histórico-Estrutural, o estudo foi realizado por meio de: análise do modelo de inventário da oferta turística; compreensão das categorias de análise do fenômeno turístico através da complexidade de suas inter-relações; e verificação da postura de pesquisadores do tema. Os meios de pesquisa utilizados foram: a entrevista semi-estruturada, a observação participante e a análise de conteúdo. Os resultados discorrem sobre os aspectos da produção de conhecimento turístico, as contradições em relação aos avanços na concepção do Turismo como um fenômeno social complexo e os parâmetros adotados no inventário da oferta turística. A conclusão foi de que a metodologia do Inventário da Oferta Turística, por ser fragmentada, reducionista, a-histórica e mecanicista, seguindo uma lógica positivista, não alcança o complexo fenômeno do Turismo. Por sua vez, a visão dos participantes do projeto-piloto no Rio Grande do Sul mostra a fragilidade do processo, falta de comprometimento e de conectividade entre pesquisa, projeto e Política Nacional de Turismo. It aims to analyze the effectiveness of the inventory methodology, pointing methods that allow its understanding as a dynamic instrument, able to subsidize the Tourism sustainable planning. Based on Historical-Structural Dialectic, the study was carried through by means of: analyzing the tourism supply inventory model; comprehending the analysis categories of the tourist phenomenon through the complexity of its Inter-relations; and verifying the subject researchers position. The research tools used were: the half-structuralized interview, the participant observation and the content analysis. The results discourse on the aspects of the tourist knowledge production, the contradictions in relation to the advances in the Tourism conception as a complex social phenomenon and the parameters adopted in the tourism supply inventory. The conclusion was that being the tourism supply inventory methodology fragmented, reduced, non-historical and mechanist, as well as following a positivist logic, does not reach the Tourism complex phenomenon. Therefore, the pilot project participants vision shows process fragility, and lack of compromise and connectivity among research, projects and the National Politics of Tourism. Thus, there was not any construction of effective and broad scientific data, making the database for Tourism planning fragile and partial.

Att utöva turism- och fritidsaktiviteter är en väsentlig del i många människors liv, men för personer med funktionsnedsättningar (PmF) är genomförandet av sådana aktiviteter långt från lika självklara. Frågan om aktivt deltagande och inkludering av PmF i samhällets alla delar lyfts allt mer och kraven på tillgänglighet ökar. Därav syftar denna studie till att undersöka på vilka sätt turism- och aktivitetsföretag i Jämtlands län arbetar med att anpassa sina aktiviteter för att kunna inkludera individer med fysisk funktionsnedsättning. För att uppnå syftet var en kvalitativ ansats med semistrukturerade intervjuer studiens huvudsakliga metodologiska verktyg för insamling av empiriska data. Resultatet tyder på att majoriteten av verksamheterna inte erbjuder aktiviteter som är specifikt anpassade för PmF men att en del av utbudet går att kan anpassa om efterfrågan skulle uppstå. Marknadens efterfrågan styr verksamhetens utbud av aktiviteter och en bristande efterfrågan från PmF på tillgängliga aktiviteter har identifierats. Studiens slutsats beskriver att den bristande efterfrågan från PmF ligger till grund för det bristande utbudet av tillgängliga aktiviteter samt att verksamheterna anger resurser såsom kunskap och ekonomiska faktorer som utmanade vid utvecklingen av tillgänglighetsanpassade aktiviteter.<br>Tourism and leisure activities are an essential part of many people's lives, but for people with disabilities (PwD), their involvement can be highly conditional. The issue of active participation and the inclusion of PwD in all parts of society is increasingly being raised and the need for accessibility is growing. This study aims to investigate how tourism and activity companies in Jämtland County works to adapt and customize their activities to include individuals with physical disabilities. The study had a qualitative method with semi-structured interviews as the key focus for collecting empirical data. The result indicates that the majority of businesses do not currently offer activities that are specifically tailored to PwD, but for most of the companies these activities can be adjusted if there is a demand for it. Market demand controls the companies’ range of activities and a lack of demand from PwD for accessible activities has been identified. The conclusion describes that the absence of demand from PwD is the reason for the lack of accessible activities  and that the companies specify resources such as knowledge and financial factors as challenging for the development of accessible activities.<br><p>2020-06-08</p>

Abstract:
The fast development of the Chinese economy has brought tremendous impact on the growth of logistics industry in the country. China has become the hottest market for both Chinese and foreign third-party logistics companies (3PL providers), and more and more foreign and domestic 3PL providers are being involved in the Chinese logistics industry. To understand the current situation Chinese third-party logistics companies are facing and the competitive strategies they are pursuing, an exploratory investigation was conducted in the study. A multiple case-study approach was adopted as the main strategy and guidance for the study. Under the principle of multiple case studies, multiple instruments (questionnaire, telephone interviews and archive searching) were used in the data collection among three selected case study companies. Also, within-case analysis and cross-case analysis were chosen as the overall framework of data analysis, and content analysis was selected as the main method for qualitative data analysis. Through investigating a variety of aspects of the three case study 3PL companies, the study has identified that all the case study companies have established country-wide logistics networks, have provided customers a range of logistics services, and have adopted different information technology systems in their operations. All the case study companies have achieved constant increase in their sales in recent years. Generally, the competition in the Chinese 3PL industry is fierce, and sometimes chaotic, unfair, and even illegal. Foreign 3PL providers have been considered as major competitor by Chinese 3PL providers. All the case study companies have developed and pursued a number of competitive strategies to gain competitive advantages in both cost and service. The main competitive strategies addressed include distribution network developing strategy, information technological strategy, and long-term partnership strategy.

Syfte: Syftet med studien är att undersöka vilka faktorer och åtgärder som kan vara framgångsrika för säsongsförlängning hos verksamheter i skärgårdsmiljö. Metod: En kvalitativ metodansats har tillämpats genom sju intervjuer. Komplettering har gjorts med hjälp av sekundärdata.  Teoretisk referensram: Den teoretiska referensramen utgår från Conceptual approaches to seasonality causationav Goulding (2006) samt Influences on patterns of tourism seasonalityav Butler (2001). Empiri: Empirin består av fyra öppna intervjuer och tre halvstrukturerade intervjuer som genomförts med representanter från logiverksamheter i skärgården. För att komplettera materialet presenteras de berörda öarnas utbud och tillgänglighet i tabeller. Slutsatser: Verksamheter i Stockholm skärgård är beroende av naturliga och institutionella faktorer såsom väderlek, högtider och resvanor. De är främst attraktiva för besökare under sommarhalvåret och verksamheter upplever en dramatisk minskning av antalet besökare under lågsäsongen. Utbudet som finns är begränsat till sommarsäsongen då flera aktiviteter innebär utevistelse. Dock visar en del verksamheter på att de försöker hitta andra attraktioner under lågsäsong än under högsäsong för att hålla uppe besöksantalet. De handlingar som verksamheterna utför fokuserar främst på att öka tillväxten under sommarsäsong och de arbetar inte aktivt med att förlänga säsongen. Resultat visar på att de största begränsningarna som verksamheter i Stockholms skärgård har är personalbrist, naturliga orsaker samt transportmöjligheter. Det leder till att majoriteten av verksamheterna satsar på att utöka antalet besökare under högsäsongen, vilket i sin tur kan leda till problematik i bärkraften.<br>Purpose: The purpose of this study is to investigate and analyze actions which businesses in archipelago environments may use to successfully extend the season. Method: A qualitative research method approach has been applied through seven interviews. Completion has been made using secondary data. Theoretical framework: The theoretical framework is based on Conceptual approaches to seasonality causation from Goulding (2006) and Influences on patterns of tourism seasonalityby Butler (2001). Empericism: The empericism consists of four open interviews and three semistructured interviews conducted with representatives from different lodging businesses in the archipelago. Charts consisting information about the referred islands complete the interviews.  Conclusions: Businesses in Stockholm archipelago are dependent on natural and institutional factors such as weather, bank holidays and travel habits. Stockholm archipelago is especially attractive to visitors during the summer. Lodging businesses therefore experience a dramatic reduction in the number of visitors during the off-season. The available range is limited to the summer season when several activities are dependant on weather conditions, but some businesses show that they try to find other attractions during the low season to keep up with the declining number of visitors. The actions that the businesses take is mainly focused on increasing growth during the summer season and they are  generally not actively working to extend the seasons. Results show that the greatest limitations that the businesses face in Stockholm archipelago are staff shortages, natural causes and public transport limitations. That is, the extension of seasons being limited as the businesses mainly invest in the summer season, which in turn may lead to sustainability issues.
