The assays utilize the optical characteristics of colloidal gold nanoparticles for the colorimetric detection of proteins. Multiplexed detection in sandwich immunoassays is limited by cross-reactivity between different detection antibodies. The main advantages of this technique are that it is noninvasive and that it uses low-cost components. Fat in salmon muscle exists as oil dispersed throughout the tissue.
