Full textThis thesis aims to provide a comprehensive understanding of how to work with children to introduce polyphony. I have taken note of relevant literature and conducted interviews with three teachers with experience teaching both in regular school class and music class with admission test.I have examined how to proceed in the work of polyphony, what the importance of unison singing has for singing polyphony, and what determines whether teaching based learning by ear or by notes.By my thesis, I can draw several conclusions. The unison singing is considered a prerequisite for polyphony, but polyphony also seems to be a way to refine the unison singing. Some types of parts are common and it is important not to prematurely divide children into different parts to give voice training in different registers. In teaching choir in regular school class ear learning is the most common, whereas notes have a larger and more significant role in music class and choir with admission test, where higher demands can be made on the children.

O leite é um dos derivados da soja mais conhecido no Brasil, e apresenta grande potencial de utilização. Enquanto cultivares de soja apropriados ao processamento do leite não estão efetivamente disponíveis no mercado, o tratamento térmico dos grãos é necessário para inativação de enzimas que depreciam o sabor e a qualidade nutricional do grão. Neste contexto, realizou-se este trabalho com o objetivo de avaliar a qualidade do leite produzido pela Unisoja, verificando a influência das condições de processamento sobre a inativação de enzimas, rendimento do processo e composição química do leite. Foram determinadas as atividades do inibidores de tripsina e da lipoxigenase e índice de solubilidade da proteína durante o tratamento térmico (97º C/14 minutos) dos grãos decorticados, rendimento do processo, composição química e digestibilidade in vitro da proteína do leite produzido. O tratamento térmico do grão favoreceu uma rápida absorção de água (6,31 vezes), inativação das atividades dos inibidores de tripsina (85%) e da lipoxigenase (86%) e diminuição na solubilidade da proteína (14,7%). Os teores de umidade (82,58%) e proteína (3,31%) do leite atendem as especificações da legislação vigente. O procedimento adotado pela UNISOJA fornece leite isento de inibidores de tripsina e lipoxigenase ativos, boa digestibilidade in vitro para a proteína (86,21%) o que assegura sua qualidade nutricional, além de proporcionar bons rendimentos de processo (547,36%) de proteína (54,91%) e de lipídeos (40,88%).

O objetivo deste trabalho foi avaliar as características químicas das amostras recolhidas nas etapas do processamento do “leite” de soja e utilizar o Controle Estatístico de Processo - CEP (gráficos de média e desvio-padrão) para determinar os limites de variabilidade para controle de processo da produção do mesmo. Os materiais utilizados foram: soja em grão descascado cozido, água de cozimento do grão da soja descascada, calda para preparo do “leite” de soja, resíduo da soja (okara) e “leite” de soja pasteurizada processado pela Unidade de Produção e Desenvolvimento de Derivados da Soja – UNISOJA. Foram analisadas 329 amostras, coletadas em 15 dias, em pontos da linha de processamento de “leite” de soja. Destas 329 amostras, 75 amostras foram retiradas do grão de soja cozido descascado para análise de proteína e umidade; 75 da água de cozimento do grão descascado para análise de proteína; 29 de calda para análise de sólidos solúveis; 75 de resíduo (okara) para análise de proteína, lipídeos e cinzas e, finalmente, 75 amostras de “leite” de soja pasteurizado para análise de cinza, cor, lipídeos, proteína e sólidos solúveis. Essas análises foram feitas em duplicatas. Esse estudo mostrou que os gráficos da ferramenta da qualidade “Controle Estatístico de Processo” são eficientes para detectar possíveis falhas durante as diferentes etapas do processamento do “leite” de soja. Entretanto, ainda há necessidade de treinamento dos funcionários e padronização no processo de fabricação do “leite”, em todas as etapas. Além disso, foi possível construir, para as etapas críticas do processamento, os limites de processo em gráficos de desvio padrão e média para a produção de “leite” de soja.

The used materials were: decorticated cooked soybeans water in grain, cooking the grain of peeled soybean, syrup preparation for soybeans milk, the soybean residue (okara) and pasteurized soybean milk processed by the Unidade de Produção e Desenvolvimento de Derivados da Soja - UNISOJA. Three hundred and twenty nine (329) samples were analyzed, collected in 15 days from several points of the soybeans milk processing line. Among these 329 samples, 75 samples were taken from cooked grain strip for protein analysis and moisture; other 75 samples were taken from the cooking water of grain strip for protein analysis; 29 samples were taken from syrup for analysis of soluble solids; 75 samples were taken from residue (okara) for protein, lipids and ash analysis; and, finally, 75 samples were taken from soybean pasteurized milk for gray, color, lipids, protein and soluble solids analysis. All these analyses were performed in duplicate. Full textBrazilian co-operativism is currently facing a polarization among two ideological trends. Early in the 90s a new trend begun to take shape, i.e., the Solidary Economy, that brought along a demand for mandatory democratization of the work relations. This postulate is in opposition to the system of Brazilian Organization of Co-operatives (OCB) which has been established in 1970 and defends a concept of co-operativism aiming at economic efficiency. The clash is also meant by association when the OCBs monopoly for representation is contested de facto, because of the fact, that entities representing solidary co-operatives are appearing. The present work takes this context to query what kind of institutional and innovative mechanisms the new trend is up to build, regarding the political representation of the co-operatives. Two entities from opposite sides have been chosen to serve as object for analysis: the Organization of Co-operatives in São Paulo State (OCESP) which is integrated with the system OCB and the Union and Solidarity of Co-operatives and Enterprising of Social Economy in Brazil (UNISOL/Brasil), from the Solidary Economy trend. A comparative analysis of its internal mechanisms of representation pointed out to a less substantial differentiation between them.
