Abstract:

Green roofs are living rooftops that have been around for centuries. Green roofs serve many purposes including food production, insulation of buildings, and reducing the urban heat island effect. More and more research is being done to utilize unused space on top of buildings for a better community. Food shortage is one of the biggest problems in the United States and across the world. Due to increased population and a decrease of resources, fresh food is becoming more difficult to obtain. Fresh produce intake increases in communities as the amount of available produce within 100 meters of

Vegetable grafting confers soil-borne disease resistance through the use of selected rootstocks. Additional costs associated with grafted vegetable seedling propagation limit grower access to this technology. The use of low temperature storage in grafted seedling production reduces labor costs and allows propagators to meet the seasonal and narrow-window demand of growers. For the first part of the experiment 22 genotypes of Solanaceae or Cucurbitaceae seedlings were evaluated in low temperature storage conditions (5 or 12°C). Abstract:

Lack of fruit and vegetable (FV) consumption is directly linked to the prevalence of obesity and chronic disease in the United States. The USDA Fresh Fruit and Vegetable Program (FFVP) offers elementary school teachers access to healthy foods as part of the public school classroom experience. The purpose of this study—which was based on self-efficacy theory and the socio-ecological model—was to examine if an association exists between selected factors: (a) daily fruit and vegetable consumption, training status in the USDA Fresh Fruit and Vegetable Program (FFVP), and an establi

Abstract:
Recent US statistics indicate continued increased incidence of many chronic diseases. The prevalence of these chronic diseases could be reduced if Americans would modify their eating habits to increase fruit and vegetable (FV) intake to the minimum recommended level of five servings daily. Educational strategies to change eating behavior would benefit from a greater understanding of sociodemographic and psychological factors related to dietary behavior. A secondary analysis of data collected from 361 older uninsured women participating in a controlled trial of diet and physical activity change

Smoking and low fruit and vegetable intake (LFVI) are correlated with cardiovascular disease (CVD) and cancer, two leading causes of death in Canada and the U.S. The prevalence of smoking in Canadian and U.S. female adolescents has risen in the past ten years. Recent surveillance data also show that Canadian and U.S. female adolescents consume levels of fruit and vegetables far below national recommendations. The correlates of current smoking and LFVI among adolescent girls were investigated in a secondary data analysis of a multi-stage, stratified, cluster sample school survey of 13 and 16 ye

Smallholder farms in central Uganda do not reach their agronomic potential in large part due to declining soil fertility. Continuous cultivation and soils that are susceptible to degradation lead to yield declines that threaten household food security. Improvements in soil management are needed to produce both the quantity and quality of food required to reduce food insecurity. However, this requires active farmer participation in the identification and evaluation of different soil management strategies. On-farm and participatory approaches to research were used to evaluate the potential b

Abstract:
Lipids are important components that contribute very significantly to nutritional and technological quality of foods because they are the least stable macro-components in foods, due to high susceptibility to oxidation. When rancidity take place, it makes food unhealthy and unacceptable for consumers. Thus, the presence of antioxidants, naturally present of added to foods, is required to enhance shelf life of foods. Moreover, antioxidant like phenolic compounds play an important role in human health enhancing the functionality of foods. The aim of this PhD project was the study of lipid quality
