A uva é a principal fruta cultivada no sistema orgânico no estado do Rio Grande do Sul, tendo sua produção concentrada na região da Serra Gaúcha, território vitivinícola consolidado em nível estadual e nacional formado a partir de um processo socioeconômico histórico que teve início com a colonização do espaço geográfico pelo “colono” italiano. A viticultura realizada na Serra Gaúcha possui várias particularidades como, por exemplo, a pequena propriedade, a pouca mecanização devido ao relevo acidentado e principalmente a utilização de mão de obra familiar. Este estudo analisou o desenvolvimento da viticultura orgânica praticada no município de Cotiporã, localizado na região serrana do estado do Rio Grande do Sul. O município constitui-se num território voltado para a produção de uva convencional presente no interior do território vitivinícola da Serra Gaúcha. A maior parte da uva produzida no município, equivalente a 89,8% do total, é processada nas cidades vizinhas que concentram mais de 90% das empresas vinícolas do estado. Porém, no interior do município se verifica a movimentação por parte de um grupo de agricultores que migraram e outros que ainda estão em processo de transição agroecológica da viticultura convencional dominante na região para a viticultura orgânica. A pesquisa apontou que a produção orgânica de uva se encontra em expansão no município e na Serra Gaúcha, e está construindo uma rede de relações de produção e uma cadeia produtiva diferente, mas semelhante em algumas relações estabelecidas pela viticultura convencional. Essa nova relação envolvendo a produção de uva orgânica pautada pela sustentabilidade ambiental, social e econômica, centrada na agricultura familiar e no protagonismo do viticultor ao longo da cadeia produtiva foi denominada de território da viticultura orgânica.<br>The grape is the main fruit cultivated in the organic system in the state of the Rio Grande Do Sul, having its concetrated production in the region of the Mountain range “Gaúcha”, consolidated viticulture territory in formed state and national evel from a historical socioeconomic process that had beginning with the settling of the geographic space for the “Italian colonist.” Grape growing carried through in the Mountain range “Gaucha” has some particularitities as, for example, the small property, to little mechanization due to the rough relief and mainly the use of hand of familiar workmanship. This study it analyzed the development of practised organic grape growing in the city of Cotiporã, located in the mountain range region of the state of the Rio Grande Do Sul. The city consists in a territory directed toward the production of present conventional grape in the interior of the viticulture territory of the Mountain range “Gaúcha.” Most of the grape produced in the city, equivalent 89.8% of the total, is processed in the neighboring cities that more than concentrate 90% of the viticulture companies of the state. However, in the interior of the city if it verifies the movement on the part of a group of agriculturists who migrated and others that still are in process of ecological agriculture transistion of dominant conventional grape growing in the region for organic grape growing. The research pointed that the organic production of grape if finds in expansion in the city and the Mountain range “Gaúcha”, and is constructing to a net of production relations and a productive chain different, but similar in some relations established for conventional grape growing. This new relation involving the production of organic grape ruled by the social and economic sustainability ambient, centered in familiar agriculture and the protagonism of the grape grower throughout the productive chain was called of territory of organic grape growing.

Le vignoble jurassien se présente sous la forme d'archipels. Il s'agit alors de comprendre ce qui a procédé à cet état de fait. La première étape de notre travail permet de positionner la démarche quant à la définition du terme "paysage" à envisager. L'élaboration d'une grille de lecture et d'analyse des paysages viticoles est aussi une étape préalable à notre travail. Les premiers éléments de différenciation du vignoble apparaissent dans l'habitat viticole. D'une façon générale, les paysages actuels connaissent une stabilisation sur le plan des superficies viticoles : les droits de plantation octroyés chaque année depuis dix ans sont faibles, de même que la mobilité fonçière. Une typologie des paysages du Revermont peut être établie en fonction de la place tenue par la vigne dans les finages, des terroirs où elle est cultivée, de l'importance des bois, enfin, en fonction du dynamisme des communautés vigneronnes locales. Le paysage du Revermont est alors d'un dynamisme inégal, lié aux structures d'exploitation et aux Appellations d'Origine Contrôlée. Quelle est l'origine de ces paysages inégalement viticoles? Tout au long du XIXe siècle, les paysages du Revermont sont carctérisés par une nette continuité des surfaces viticoles et, jusqu'au phylloxéra, les façons culturales sont similaires. Pourtant, avant même l'arrivée du puceron dévastateur, des signes de fragilité existent dans le vignoble jurassien : le morcellement de la propriété viticole, de même que le métayage à mi-fruits ne permettent pas à l'ensemble de la communauté vigneronne de vivre décemment. Le phylloxéra se manifeste en 1879 dans le sud du vignoble, mais cause la plupart de ses méfaits entre 1893 et 1900. Il engendre de nouveaux paysages. Au cours des premières années du vingtième siècle, la reconstitution du vignoble s'effectue à l'aide de producteurs directs et de plants greffés, et ce, malgré une conjoncture économique tendue. La première, puis la seconde guerre mondiale, vont alors jouer un rôle indirect dramatique pour le vignoble. Au cours des années 1950, quelques initiatives, toutes localisées dans la zone d'Arbois, entament la nouvelle ère du développement du vignoble jurassien. S'ensuit, dans les années 1960-1970, un programme public de relance viticole qui permet un redémarrage plus étendu de la viticulture dans le Revermont. Pourtant, de cette entreprise naît un vignoble à deux vitesses.

The state of Virginia was analyzed to establish its suitability for grape culture. This investigation occurred in two phases: a small scale analysis that encompassed the entire state, and a large scale analysis which focused on site selection at the local level. After identifying regions across the state in terms of their viticulture potential, a study area was chosen from within the highest ranking region. This study area was the focus for the local-scale site potential analysis. <p> First, to delineate regions across Virginia that had greater or lesser viticulture potential from a physical and climatological basis, weather station data were collected for minimum winter temperatures, maximum summer temperatures, precipitation, length of growing season, and day versus night temperature differentials. In addition, elevation and slope models were constructed to complement the climatic variables in identifying areas that contained factors most conducive to grape production. To validate this regional assessment, the history of fruit industries within the state are outlined geographically to display the evolution of the fruit industries, and to establish the factors which have shaped the current fruit landscape. <p>Secondly, at the local scale, a Geographic Information System (GIS) approach was used to identify sites at the county scale that had greater or lesser viticulture potential from a physical basis. Composite maps, constructed by individual counties in the state, were produced from a series of physical databases. The individual databases (sources and resolution in parentheses) included land-use (Virginia Gap Analysis; 30meter² resolution), slope, aspect, and elevation (USGS 1:24,000 Digital Elevation Model; 30meter²), and soils data (USGS Digital Line Graph (DLG-3)). Each physical feature layer was given a numerical classification, then all layers were combined to produce a 0 to 100 scale in the final, composite image. <p>Given this model of potential vineyard suitability, existing fruit operations in select counties were geo-located on each feature layer using a Global Positioning System (GPS: 1-2meter accuracy). Actual data on occurrences of frosts, minimum winter temperatures, and other site variables were collected from these fruit operations and surrounding weather stations as a sample to validate the model. A strong correlation between areas containing characteristics of current fruit acreage--namely apple--and sites high in potential for viticulture according to the model. <p> Studying the history of geographic distribution of apple and grape industries across the state reinforces the regional assessment of viticulture potential, formulated by the climatic and topographic analysis. Employment of GIS approach at the local site scale was shown to be an effective tool for site selection at the local scale with certain caveats. In addition, the evaluation procedure integrating GIS and GPS technologies allows us to visually assess the distribution pattern of each of the factors employed individually; and, in turn, physically identify and locate areas of viticulture potential created from the combination of those factors.<br>Master of Science

The herbicides norflurazon, oxadiazon, oxyfluoren, trifluralin and simazine used in South Australian viticulture were assessed for mobility and degradation through a combination of laboratory and field experiments. Sorption, leaching and dissipation rates were measured, as was presence in shallow groundwater. The fate of herbicides from vine to wine was also investigated, tests being conducted on herbicide residue in both white and red grapes and presence in wine. A proposal for good environmental management of herbicide use in vineyards to minimise the effects of herbicides was also developed.

The accelerated erosion of soil by water from Mediterranean hill-slopes under viticulture is a major problem. It is largely a result of the land management techniques employed and their influence on soil protection, structure and stability. Within this study, the relationships between viticulture practices, soil physical characteristics and erosion processes have been explored in detail, and a soil conservation strategy, which incorporates the use of herbicide managed cover, has been developed. The strategy was applied and tested in two established vineyards in southern France over a three year period (October 2001 to December 2004). Sediment and runoff losses were monitored at the plot scale from the date of treatment installation and comparisons were made with the losses from plots under conventional soil management. Cultivation, to produce a fine seedbed for cover establishment, encouraged soil to become hydrophobic and impeded drainage at depth. This aggravated soil losses under saturated conditions and impeded cover establishment. However, total sediment losses were reduced by the presence of a cover at both sites within the monitoring period. The results of a ‘Visual Soil Assessment’ showed that there was a measurable improvement in the physical condition of the soil of the vegetated plot three and a half years after the cover was sown. Controlled laboratory studies were conducted to identify the most suitable herbicide product and dose rate for inducing dormancy in a grass cover, whilst retaining its protective and stabilizing properties. Two products were tested: Paraquat and Glyphosate. At 21 days after treatment application, the treatment effects on plant and soil physical characteristics were assessed. Herbicide product and dose were found to indirectly influence a soil’s potential to erode but more detailed studies are required. Initial results suggest that Paraquat is the more suitable of the two products tested. The study concluded that herbicide managed permanent cover is a practical option for soil conservation in Mediterranean viticulture.

A recent historical geography examining the development and evolution of a winegrowing region of New Zealand. The development of Marlborough as the nation's major viticultural location has been one of the most important developments of New Zealand’s continued growth as a wine producer. The major emphasis of this study is on the wine companies who got involved in Marlborough and have built wineries in the region. The scale of each operation and the many different reasons for each individual or companies involvement were examined and discussed. An important area of this study has been the principle reasons leading to Montana Wines deciding to plant vineyards in Marlborough in 1973. A major finding has been that there has been considerable over-emphasis on the physical characteristics of the Marlborough region and a neglect of the other “human factors” the major one being the availability of land and the price of land in explaining the region's development as a wine producer. The development of Marlborough has occurred over four stages. These are: a) The initial action by one company which pioneers a new landuse; b) If successful further development occurs by both small and large producers; c) International interest and participation; and d) end of first phase of development. Marlborough has yet to reach full maturity, because there is still some experimentation occurring with different vine varieties.

O setor agrícola brasileiro gera saldos positivos à balança comercial do Brasil, e a fruticultura segue no mesmo ritmo. Dentre as frutas produzidas no Brasil, a uva é uma das que mais impactam na balança comercial, tendo em vista que é amplamente exportada e importada. Este cenário só se tornou possível com a abertura de mercado na década de 90, e, assim, o Brasil pôde se tornar mais competitivo no mercado nacional e internacional. A competitividade é importante para a economia, seja de um país, de um setor ou de uma empresa. No presente trabalho, então, foi realizada uma análise setorial da competitividade da viticultura, fundamentada na produtividade, nos aspectos tecnológicos e no ambiente institucional. Para a análise regional brasileira foi utilizada a técnica de triangulação na metodologia deste trabalho: pesquisa qualitativa (entrevista com produtores das principais regiões produtoras de uva de mesa do Brasil); análise estatística por meio de Modelos Lineares Generalizados de dados secundários (preço nas regiões produtoras de uva de mesa) obtidos no banco de dados do Cepea; e análise documental (com base nas legislações, regras e outros documentos disponíveis). A partir disso foi constatado que o Vale do São Francisco (BA/PE) é a região brasileira mais competitiva, visto que investe mais em tecnologia, tem gestão empresarial (enquanto as outras são marcadas pela agricultura familiar) e consegue se sobressair nas questões de comercialização. Além disso, no Brasil, o ambiente institucional, de um modo geral, não gera grandes vantagens competitivas para nenhum produtor de uva - a exceção são as fortes cooperativas do Nordeste. Para a análise da competitividade internacional, além da análise documental com vistas ao comércio internacional, foram feitas estatísticas descritivas com dados de preço, produção, produtividade, exportação, importação e consumo aparente de uva de mesa do Brasil, Chile e Itália. Os dados foram obtidos nos bancos de dados do IBGE, MDIC, Odepa, Eurostat e USDA. No geral, Chile e Itália têm ambiente institucional mais forte que o Brasil para o comércio internacional de uva de mesa. Mesmo assim, a competitividade internacional brasileira cresceu nos últimos anos frente a Chile e Itália. Assim, pode-se concluir que mesmo com ambiente institucional desfavorável, tanto no mercado interno quanto no externo, o Brasil conseguiu avançar na competitividade entre os anos analisados neste trabalho. Isso se deve, sobretudo, aos investimentos ocorridos na principal região brasileira - o Vale do São Francisco.<br>The Brazilian agribusiness generates profits to the trade balance of Brazil, and the fruit sector follows the same rhythm. The table grape is one of the fruits that impact the trade balance, because it is widely exported and imported. This scenario was only possible to the market opening in the 90s, and thus Brazil was able to become more competitive in domestic and international markets. Competitiveness is important to the economy, whether of a country, of a sector or a company. Thus, a sectorial analysis of the viticulture competitiveness was conducted, based on productivity, technological and institutional environment. In this research, it was used triangulation technique in the methodology to conduct the Brazilian regional analysis: qualitative research (interview with producers of the main producing regions of table grape of Brazil); statistical analysis using Generalized Linear Models of secondary data (price of table grape) obtained in Cepea database; and documental analysis (based on the laws, rules and other documents available). Based on this, it was found that the São Francisco Valley (BA/PE) is the most competitive region in Brazil. This region invests more in technology, has business management (while the others regions are tagged by family farmers) and stands out in the marketing. In addition, in Brazil, the institutional environment, in general, does not generate competitive advantages for grape growers - the exception is the strong cooperatives located in Northeast. The international competitiveness was conducted by descriptive analysis of statistics - price, production, productivity, export, import and apparent consumption of table grape in Brazil, Chile and Italy. Also, a documental analysis of international trade was conducted. Data were obtained from the IBGE, MDIC, Odepa, Eurostat and USDA databases. Overall, Chile and Italy have a stronger institutional environment to international trade of table grapes than Brazil. Anyway, the Brazilian international competitiveness has increased in recent years compared to Chile and Italy. Thus, it can be concluded that even with unfavorable institutional environment, both domestically and external, Brazil was able to advance in competitiveness during the years analyzed in this work. This is mainly attributed to the investments occurred in the main Brazilian table grape region - São Francisco Valley.

Avec l’expansion des exploitations agricoles, le principe d’homogénéité du rendement (céréales, fruits…) devient de moins en moins pertinent. Ce phénomène de variabilité spatiale implique des conséquences économiques et environnementales avec le développement de nouveaux concepts agricoles comme les « site-specific management » (gestion spécifique des parcelles). Les traitements tels que les fertilisants, les intrants et autres pesticides doivent être utilisés de manière différente en les appliquant au bon endroit, à la bonne période et au bon taux. Cette nouvelle façon de penser l’agriculture fait partie de l’agriculture de précision (PA) et se concentre en quatre domaines technologiques : (i) la télédétection, (ii) la navigation et guidage, (iii) la gestion des données et (iv) les technologies à taux variable. Initiée à la fin des années 1990, la viticulture de précision (PV) est une branche particulière de la PA, caractérisée par des problématiques spécifiques à la viticulture. Les travaux effectués durant cette thèse entrent dans le cadre de la télédétection (ou détection proche) appliquée à la PV. Ils se focalisent sur une nouvelle méthode d’estimation de la quantité de grappes (masse ou volume) directement sur les plants de vignes. Pouvoir estimer le rendement des vignes plusieurs semaines avant la récolte offre de nombreux avantages avec des impacts économiques et qualitatifs, avec par exemple : (i) l’amélioration du rapport rendement/qualité en supprimant au plut tôt une partie de la récolte, (ii) l’optimisation des ressources humaines et la logistique à la récolte, (iii) un remboursement le plus équitable par les assurances en cas d’intempéries qui endommageraient les pieds de vignes. La méthode proposée ici repose sur l’imagerie microondes (à 24GHz ou des fréquences plus élevées) générée par un radar FM-CW. Elle implique la mise en place d’un système d’interrogation intra-parcellaire « pied par pied » à distance basé au sol, et en particulier : (i) l’évaluation de la précision des mesures et les limites du système, (ii) le développement d’algorithmes spécifiques pour l’analyse de données tridimensionnelles, (iii) la construction d’estimateurs pour retrouver le volume des grappes, et finalement (iv) l’analyse des données recueillies pendant les campagnes de mesures. Dû au caractère saisonnier des récoltes, les mesures sont en premier lieu effectuées sur des cibles canoniques, des charges variables et des capteurs passifs en laboratoire. Pour mettre en avant la flexibilité de cette interrogation radar, le même système est utilisé en parallèlement dans le cadre du projet régional PRESTIGE, pour compter à distance le nombre de pommes présentes sur les pommiers en verger. Ces travaux ont été financés par l’entreprise Ovalie-Innovation et l’ANRT (Agence Nationale de la Recherche Technologique).

Mestrado Vinifera EuroMaster - Instituto Superior de Agronomia<br>Three different pruning methods were used as a model system to challenge fundamental principles in viticulture. Different viticultural and physiological parameters of field grown Chardonnay, Sauvignon blanc, Chenin blanc and Syrah have been quantified, analysed and compared; main focus was on the comparison of ratios between and amongst vegetative and reproductive parameters. Changes in grapevine morphology due to the pruning system as already described in literature could be proofed; number of buds left at winter-pruning is “correlated” with the number of shoots, leaves and bunches formed during the next year. Shoot length, internode length, leaf size and bunch mass are correlated inversely to the number of remaining winter buds. Source:sink relationship has been affected by pruning method due to changes in size and priority of the source and sink organs, which also affected carbon allocation as well as plant biomass development. Impacts on the rachis development have been found, impacting on the % share of berries on a bunch and the ratio rachis length to rachis mass. Alternative pruned vines seemed to have more sanitary problems and appeared not to be adapted for high quality grape production. Almost no parameter or ratio was stable when changing pruning system; indicating the difficulty of imposing absolute numbers and use them as a recipe for decision making in viticulture

Técnicas de cultivo para adaptar la viticultura mediterránea al cambio climático La viticultura mediterránea se está viendo afectada por el cambio climático, lo que amenaza la tipicidad del vino y, por tanto, la sostenibilidad de la vitivinicultura. Los principales factores que se prevé que afecten al cultivo de la vid son la escasez de agua, los incrementos térmicos y el aumento de la concentración de dióxido de carbono en el aire, lo que influirá en la vid: i) adelantando su fenología, disociando así la maduración tecnológica y fenólica de la uva y ii) incrementando las necesidades hídricas del viñedo. Éste trabajo pretende evaluar los efectos de diferentes técnicas de cultivo para la adaptación de la viticultura mediterránea al cambio climático. Se realizaron tres experimentos en Valencia (España) estudiando los efectos de: 1) el riego deficitario controlado; 2) la arquitectura de los sistemas de conducción y 3) el manejo del dosel vegetal. Las principales respuestas evaluadas fueron la eficiencia en el uso del agua de los viñedos (EUA) y la composición de la uva. El experimento 1 se llevó a cabo durante tres campañas en un viñedo de Moscatel de Alejandría/161-49C regado por goteo con el objetivo de definir la estrategia de riego más sostenible para uva blanca en el levante español. Para ello, se ensayaron cuatro tratamientos: (i) Testigo, regado al 100% de la evapotranspiración del cultivo (ETc) durante toda la campaña; (ii) riego deficitario sostenido (SDI), regado al 50% del Testigo; (iii) déficit temprano (ED), donde se restringió el riego antes del envero, seguido de un 100% de ETc; y (iv) déficit tardío (LD), regado como el Testigo hasta el envero y posteriormente al 25% de la ETc hasta la vendimia. La producción en el ED y el LD se redujo en un 25 y 15% respectivamente en comparación a la del Testigo, mientras que la producción del SDI no difirió significativamente del Testigo ni de los tratamientos de ED y LD. Todos los tratamientos con riego deficitario mostraron efectos acumulativos en la productividad de las cepas como consecuencia de la reducción del número de racimos por sarmiento y del tamaño del racimo debido al menor tamaño de la baya. El experimento 2 pone de manifiesto que la respuesta a la minimización de la radiación interceptada por el dosel vegetal es dependiente de la variedad y que reducir la carga de radiación en viñedos de clima mediterráneo podría tener efectos positivos en la EUA de la vid. La efectividad de la técnica de LLR parece depender de sus efectos sobre la relación área foliar/producción y el estado hídrico de la vid, la capacidad fotosintética compensatoria de la variedad y de las condiciones ambientales. Por consiguiente, en viñedos de baja vigorosidad, una defoliación severa puede no ser aconsejable para adaptar las variedades Bobal y Tempranillo al calentamiento global debido a los efectos perjudiciales sobre la calidad del vino tinto. Por el contrario, los resultados de los experimentos de riego deficitario y de orientación de las filas de espaldera proporcionan nuevos hallazgos en la EUA como posibles técnicas para paliar la escasez de agua en el viñedo. Por lo tanto, las técnicas de campo estudiadas resultan eficaces en adaptar la viticultura mediterránea al cambio climático en cuanto al estrés hídrico. Sin embargo, sus efectos en términos de mitigación del estrés térmico no fueron del todo positivos. Por tanto, es necesario realizar más investigaciones para determinar la viabilidad de emplear otras prácticas de campo, distintas al LLR, para equilibrar la madurez glúcida y fenólica de la uva.<br>Field practices for adapting Mediterranean viticulture to climate change Mediterranean viticulture is being affected by climate change, which threatens wine typicity and, therefore, the whole viticulture sustainability. The main factors expected to affect grapevine cultivation are water scarcity, warm air temperature and the increase in the air carbon dioxide concentration, and impact of these factors will be mainly the: i) advancing of grapevine phenology, thereby decoupling berry technological and phenolic composition and ii) increasing vine water requirements. This PhD Thesis aimed at evaluating the effects of different field practices to adapt Mediterranean grapevine cultivation to climate change. Three experiments were performed in Valencia (Spain) to assess the effects of 1) regulated deficit irrigation; 2) training systems architecture and; 3) canopy management. The main responses evaluated were vineyard water-use efficiency (WUE) and grape composition. Experiment 1 was undertaken for three seasons in a drip-irrigated, cv. Muscat of Alexandria/161-49C vineyard to define the most sustainable irrigation strategy for white winegrapes in eastern Spain. For this, four treatments were tested: (i) Control, irrigated at 100% of estimated crop evapotranspiration (ETc) for the entire season; (ii) sustained deficit irrigation (SDI), irrigated at 50% of Control; (iii) early deficit (ED), where pre-veraison irrigation was withheld, followed by 100% ETc; and (iv) late deficit (LD), irrigated as in the Control until veraison and thereafter at 25% ETc until harvest. Results showed that yield in ED and LD was reduced 25 and 15%, respectively, compared to that of the Control, while yield under SDI did not differ significantly from that of the Control and was similar to that of the ED and LD treatments. All the deficit irrigation treatments had some carry-over effects on vine performance due to a significant decrease in shoot fruitfulness and in cluster mass due to smaller berries. Experiment 2 highlights that the response to the minimizing of the radiation load intercepted by the canopy is cultivar-dependent and that decreasing the radiation load in the Mediterranean vineyards could have positive effects on the whole vine's WUE. The effectiveness of the LLR technique seemed to depend on its final impacts on leaf area-to-fruit ratio and vine water status, the cultivar's photosynthetic compensation capacity and the environmental conditions. Therefore, under low vigour vine conditions, severe defoliation might not be advisable for adapting Bobal and Tempranillo to global warming due to the detrimental effects on red wine quality. On the contrary, the results of deficit irrigation and row orientation experiments provided novel insights on WUE as possible techniques to alleviate vineyard water scarcity. Therefore, the field practices studied are effective in adapting Mediterranean viticulture to climate change in terms of water stress. On the other hand, the impacts of the studied techniques in terms of thermal stress alleviation were not fully positive. Hence, further research is needed to determine the possibility of using other field practices, besides LLR, to couple berry sugars and phenolic maturity.<br>Tècniques de cultiu per adaptar la viticultura mediterrània al canvi climàtic La viticultura mediterrània s'està veient afectada pel canvi climàtic, el que amenaça la tipicitat del vi i, per tant, la sostenibilitat de la vitivinicultura. Els principals factors que es preveu que afecten el cultiu de la vinya són l'escassetat d'aigua, els increments tèrmics i l'augment de la concentració de diòxid de carboni en l'aire, el que influirà en la vinya: i) avançant la seva fenologia, dissociant així la maduració tecnològica i fenòlica del raïm i ii) incrementant les necessitats hídriques de la vinya. Aquest treball pretén avaluar els efectes de diferents tècniques de cultiu per a l'adaptació de la viticultura mediterrània al canvi climàtic. Es van realitzar tres experiments a València (Espanya) estudiant els efectes de: 1) el reg deficitari controlat; 2) l'arquitectura dels sistemes de conducció i 3) el maneig del dosser vegetal. Les principals respostes avaluades van ser l'eficiència en l'ús de l'aigua de la vinya (EUA) i la composició del raïm. L'experiment 1 es va dur a terme durant tres campanyes en una vinya de Moscatell d'Alexandria/161-49C regat per goteig amb l'objectiu de definir l'estratègia de reg més sostenible per al raïm blanc en el llevant espanyol. A tal efecte, es van assajar quatre tractaments: (i) Control, regat al 100% de l'evapotranspiració del cultiu (ETc) durant tota la campanya; (ii) reg deficitari sostingut (SDI), regat al 50% del Contol; (iii) dèficit primerenc (ED), on es va restringir el reg abans del verol, seguit d'un 100% d'ETc; i (iv) dèficit tardà (LD), regat com el Control fins al verol i posteriorment al 25% de l'ETc fins a la verema. La producció en l'ED i el LD es va reduir en un 25 i 15% respectivament en comparació a la del Control, mentre que la producció del SDI no va diferir significativament del Control ni dels tractaments d'ED i LD. Tots els tractaments amb reg deficitari mostraren efectes acumulatius en la productivitat dels ceps, com a conseqüència de la reducció del nombre de raïms per sarment i del tamany del pomell a causa de la menor grandària de la baia. L'experiment 2 posa de manifest que la resposta a la minimització de la radiació interceptada pel dosser vegetal és dependent de la varietat i que reduir la càrrega de radiació en ceps de clima mediterrani podria tindre efectes positius en l'EUA de la vinya. L'efectivitat de la tècnica de LLR pareix dependre dels seus efectes sobre la relació àrea foliar/producció i l'estat hídric de la vinya, de la capacitat fotosintètica compensatòria de la varietat i de les condicions ambientals. Per consegüent, en vinyes de baixa vigorositat, una defoliació severa pot no ser recomanable per a adaptar les varietats Boval i Ull de llebre al calfament global, tenint en compte els efectes perjudicials sobre la qualitat del vi negre. Per contra, els resultats dels experiments de reg deficitari i d'orientació de les files d'espatlera proporcionen noves troballes en l'EUA com a possibles tècniques per pal·liar l'escassetat d'aigua a la vinya. Per tant, les tècniques de camp estudiades resulten eficaces a adaptar la viticultura mediterrània al canvi climàtic pel que fa a l'estrés hídric. No obstant, els seus efectes en termes de mitigació de l'estrés tèrmic no van ser del tot positius. For more than a decade research in wireless sensor networks has received much attention. Several wireless sensor network standards have been proposed and are still being developed. In precision agriculture, specifically viticulture, wireless sensor networks have been proven as advantageous, but widespread implementation of such systems is still lacking in the South African wine farm industry. Investigating what the specific requirements of a wireless sensor network for a South African viticulturist are, and assessing the existing commercial systems available, can provide better insight into the reason for their slow implementation. The researcher has identified a feasible commercially available system and by using the identified requirements, proposes a system as an optimal solution for wireless sensor networks to be implemented at a South African wine farm. The cost of the sensor systems is the most important factor for a wine farmer. This challenges the design paradigm of wireless sensor networks, where nodes are deployed in redundant fashion to create a network of nodes capable of routing packets over several different routes to the same destination. The focus shifts to deploying nodes more sparsely, capable of greater communication distance. Thievery is of concern as well and poses the problem of increasing the risk of theft by installing sensors within line of sight together with solar panels. Placing the nodes on the ground, out of sight, causes interference with the radio signal and reduces the communication distance drastically. Since solar panels are not feasible due to theft, batteries will have to last at least one season. The DASH7 wireless standard meets the longer communication distance and extended battery life requirements, and coupled with autonomous quadcopters is a promising optimal solution. Nodes will not have to be in line of sight since the drone flies directly overhead and initialises communication to retrieve the sensor data. The BLAST principle that the DASH7 standard uses fits in with this approach and should be investigated more thoroughly, but commercial implementation of it has to wait until the development of the standard is completed.<br>Vir meer as n dekade het navorsing in draadlose sensor-netwerke heelwat aandag ontvang. Global climate model simulations indicate 1.3°C to 1.8°C increase in the Earth’s average temperature by middle of this century above the 1980 to 1999 average. The magnitude and rate of change of this projected warming is greater than the average warming during the last century. Global climate models project an even higher degree of warming later in the century also due to increasing grrenhouse gases concentrations in the atmosphere from human activity. Impacts of future climate change on viticulture are likely to be significant as viticulture requires a narrow climate range to produce grapes of suitable quality for premium wine production.In this thesis, impacts of climate change on winegrape growing conditions across the Western Australian wine regions were spatially and temporally examined by utilising fine resolution downscaled climate projections. Relationships between climate variation and grape maturity or key quality attributes of Cabernet Sauvignon, Shiraz and Chardonnay were modelled from measured fruit and climate data along a natural climate gradient encompassing a 5°C range in winegrape growing season average temperature. Potential future climate change impacts on grape quality were quantitatively evaluated by driving the grape quality models with the downscaled climate projections.Analyses of climate conditions for winegrape growth were carried out under future climate projections for the Western Australian wine regions. A total of 10 global climate models forced with an A2 emission scenario were downscaled. Of these models, the MEDRES Miroc3.2 and CSIRO Mk3.5 climate models, which indicated the low and high warming ranges (projections of these models will be referred as low and high range warming, hereafter) across the study regions, were selected to take into account the uncertainty of future climate change for impact assessment. Our results indicate increasingly warmer and drier climate conditions for the Western Australian wine regions. The current October to April average temperature (averaged across the regions) is projected to be 0.5°C to 1.5°C warmer by 2030, respectively. The magnitude of the warming will likely be uneven across the regions. For example, 0.1 to 0.3°C higher average temperature during October to April period has been projected for the northern regions than the southern regions by 2030, depending on the warming ranges. On the other hand, rainfall is projected to decrease across the regions under the future scenario we assessed in this study. By 2030, annual rainfall, averaged across the regions, is projected to decline by 5 to 8%, respectively, under the low and high warming ranges of climate change under the A2 emission scenario. Among seasons, the greatest decline in rainfall is projected to occur during spring. On average, up to 8% and 19% decline in spring rainfall is projected respectively under the low and high warming ranges by 2030.The magnitude of these changes are projected to increase as time progresses. For example, by 2070, averaged across the study regions, our modelling results show current mean temperature during October to April is projected to be between 1.1°C and 3.9°C warmer, but the annual rainfall is likely to be 15 to 24% lower than the current climate averages (1975 to 2005) under the A2 scenario.Maturity dates of the studied varieties are projected to advance asymmetrically across the study regions. For example, Cabernet Sauvignon may reach 22 °Brix total soluble solid maturity about 4 and 7 days earlier respectively for the northern and the southern regions by 2030 under the low warming range. Our results also indicate maturity date shifting a further 8 and 18 days earlier by 2070 for the northern and the southern regions respectively under the same warming range. Patterns of this maturity date shifting is likely to be similar under the high warming range. However, the magnitude of advancement is projected to be doubled.If no adaptive measures are implemented future climate change will likely reduce wine quality due to declining concentrations of berry anthocyanins and acidity under a warmer climate. The reductions of berry quality attributes are likely to be more pronounced in the warmer northern wine regions compared to the cooler southern regions. For example, Cabernet Sauvignon current median anthocyanins concentration is projected to decline by about 12% and 33% for the warmer northern regions, and about 6 to 18% for the cooler southern wine regions respectively by 2030 and 2070 under the high warming range. In contrast, the maximum decline in Cabernet Sauvignon anthocyanin concentration under the lower warming range is projected to be small, up to 5% for the cooler southern and up to 8% for the warmer northern regions by 2070. Shiraz anthocyanins concentration decrease pattern is similar to that of Cabernet Sauvignon, however, our modelling indicates the magnitude is smaller, with maximum of 18% for Swan District and about 11% for the southern regions by 2070 under the high warming range.Modelled impacts of climate change on grape titratable acidity are also region and variety specific. Among the varieties studied, Chardonnay exhibits the highest decline in median titratable acidity across the regions (17% for the Margaret River and 42% for the Swan District regions), followed by Shiraz (7% for the Margaret River and 15% for the Peel regions) and Cabernet Sauvignon (no change for Blackwood and 12% for the Swan District regions) by 2070 under high climate warming. On the other hand, the median titratable acidity levels are less impacted by low warming scenario (maximum decline is 4% for Shiraz only by 2070).Under the future warming scenarios studied in this thesis currently established wine regions and wine styles across the Western Australian wine regions are likely to be affected to the extent that some regions may not be conducive to premium wine production, while for some regions changing the variety may be the only option to adapt to the climate change. For example, by 2070, under high warming range Swan District, Perth Hills, and some parts of the Peel and Geographe regions are projected to be suited more to producing fortified wines or table grapes due to high average growing season temperature (>24°C). In this future climate the present cool climate southern regions are likely to have the same climate conditions that currently prevail in the warmer Swan District. Apparent differences in currently planted varieties between the cooler southern and warmer northern regions clearly indicate the need to adapt to the warming climate in the southern wine regions.Analysis of other potential factors that influence viticulture such as frequency of hot days, vapour pressure deficit and disease pressure were examined. The results indicated that winegrape fungal disease pressure will likely decrease across the regions due to the declining rainfall, potentially lessening the need for spraying during the growing season. On the other hand, there will likely be increased frequency of hot days and elevated vapour pressure deficit. The impacts of these, combined with the decreasing rainfall during growing season will potentially drive irrigation demand higher requiring altered water management under climate change.Climatically, most of the Western Australian wine regions are known as premium wine producing areas. The results from this study indicate potential challenges of climate change for the Western Australian wine industry. Under the future climate scenarios examined, some currently warmer regions may become less suitable for premium quality wines due to the increased temperature, which is projected to be out of the optimum temperature range for premium wine production. For most of the other regions, the challenge will likely be a decreased grape quality required to produce premium wine with the current varieties. Suitable adaptation strategies may be required to maintain the current market reputation. Furthermore, the warmer and drier conditions under climate change is likely to necessitate revised water management across the wine growing regions, especially some regions which are already limited by available water for grape production. However, the magnitude of the impacts is projected to be dependent upon the magnitude of future climate change.

Les dispositifs de traitement biologique par boues activées sont des dispositifs fréquemment utilisés dans l'épuration des effluents urbains et industriels (rejet de cave,. . . ). Les résultats de l'étude concernent la biodégradation des effluents contenant des produits phytosanitaires issus de la viticulture. L'adaptation des populations microbiennes à un substrat toxique a été démontrée à partir d'un mélange de 14 produits phytosanitaires représentatifs des effluents viticoles, les conditions optimales de biodégradabilité ont été définies. Après trente jours de traitement par boues activées, l'épuration atteint un rendement global de 99% lorsque le réacteur biologique est alimenté simultanément avec des effluents vinicoles et viticoles. La présence de matières actives fongicides, insecticides ou herbicides ne modifie pas durablement l'activité dégradante de la microfaune. Une faible toxicité résiduelle a été cependant observée après dégradation par le nouveau test d'écotoxicité (ATPyeast) développé en parallèle de l'expérimentation.

Les questions environnementales récentes posées à la viticulture française mettent celle-ci face à un double enjeu : répondre à la demande réglementaire et rester compétitive. Notre étude de la viticulture girondine met en évidence les effets de la réglementation sur les processus d'innovations environnementales. L'analyse évolutionniste du comportement des producteurs girondins montre que leur trajectoire environnementale est régie par le "paradigme phytosanitaire". La diffusion des innovations est facilitée par des démarches collectives et relève d'une double dimension : base de connaissance et coûts nets de l'adoption. Notre interprétation d'une action collective régionale centrée sur la validation technico-productive d'innovations environmentales souligne le rôle des proximités géographique et organisée et apporte des solutions aux divergences entre les pouvoirs publics, les firmes et les utilisateurs. Enfin, notre étude empirique des comportements des producteurs et des négociants démontre la nécessité de la création d'un signal fort vers le marché concernant leurs pratiques environnementales afin de valoriser celles-ci.

L'influence de la vigueur et du systeme de conduite de la vigne sur sa structure geometrique et son microclimat lumineux est etudiee. Une gamme de variation de structure et de microclimat a ete cree en combinant trois niveaux de vigueur et quatre systemes de conduite faisant intervenir la division de la vegetation et le port des rameaux. La structure geometrique est decrite a l'aide d'indices de structure couramment utilises en viticulture, des distributions spatiales et angulaires de surface foliaire et enfin des images virtuelles de souches de vignes reelles. Ces images de synthese sont obtenues a partir des donnees de digitalisation 3d des vignes qui permet de determiner les coordonnees spatiales et l'orientation de tous les organes aeriens de la plante. Le microclimat lumineux est simule par deux approches. La premiere approche utilise un modele de transferts radiatifs de type milieu diffusant. L'interception du rayonnement et sa distribution a l'interieur de la vegetation sont calcules et les resultats sont valides par des mesures au vignoble. Dans la seconde approche, le microclimat lumineux est simule a l'aide de maquettes informatiques en utilisant des images de synthese des vignes digitalisees. Cette approche a permis de calculer l'interception du rayonnement direct, la surface foliaire eclairee et la quantite de rayonnement parvenant au milieu de la zone des grappes. Les parametres radiatifs et les indices de structure obtenus a partir des images de synthese des vignes sont mis en relation avec quelques caracteristiques de la qualite de la vendange.

Depuis les débuts de nos recherches nous travaillons sur le concept de terroir, sur un essai d'une réflexion géographique à travers la viticulture. Voilà pourquoi nous nous sommes intéressés à l'évolution de ce concept, à la fois dans les domaines de la recherche concernés et dans notre parcours de géographe, pour essayer de cerner un concept bicéphale entre nature et culture. Nous avons insisté à propos de la confusion qui est souvent entretenue avec le sol ou le substrat dans l'application du concept à la viticulture. Pour nous, le terroir doit être assumé sous tous les angles, et nous avons étudié comment deux approches, deux écoles s'ignorent aux sujet des terroirs viticoles alors que nous penchons pour une synthèse, une approche intégré du concept pour mieux le cerner et mieux modéliser le réel pour répondre aux demandes des viticulteurs. La justification du terroir arrive parfois à postériori, dans une logique déterministe ou alors de communication sans garde fou. Nous envisageons le terroir comme possibilité, comme potentiel, comme un concept applicable, de l'agro terroir jusqu'au marketing visant le consommateur. Nous avons approché le concept d'abord par des biais environnementaux avec une étude et une cartographie à grande échelle appliquées à deux grands vignobles à l'échelle du Sud-Ouest viticole, Cahors et Bergerac. Cartographier des terroirs nous a mené à vérifier par l'expérience la corrélation de ceux-ci avec la qualité du vin. Nous avons alors confronté notre vision du terroir viticole au Nouveau Monde avec l'Afrique du Sud. Nous avons analysé un système d'appellations viticoles complexe et sous-utilisé avec deux centres historiques, patrimoniaux, qui concourent à l'image des vins sud africains et un poids important de la coopération dans la diffusion de la vitiviniculture et l'amélioration de la qualité. Le terroir est mobilisé en Afrique du Sud de l'agro-terroir jusqu'à la représentation et l'instrumentalisation, notamment dans des tentatives de " déracialisation " du vin face aux défis post apartheid. Ces stratégies différenciées de marketings allant jusqu'à la fabrique des terroirs nous ont amenés à prolonger nos réflexions encore plus pour comprendre comment passait-on encore plus du cultural au culturel, à travers un vignoble artificialisé à haute dose, celui de Banyuls Collioure dans les Pyrénées orientales françaises. Il s'est d'abord agi d'analyser les enjeux autour d'un territoire patrimonialisé, partagé (écartelé ?) entre activités balnéaires, viticulture et paysages emblématiques. Qu'était-ce qu'un terroir viticole dans le contexte de Banyuls ? Nous sommes passés alors du terroir au paysage pour comprendre leur utilisation et leur évolution depuis le début du XIXème siècle jusqu'à nos jours à travers quatre exemples de bassin-versant. Fort de savoir comment avaient évolué les paysages viticoles, nous avons pu étudier comment la communication et le marketing frappaient l'imaginaire en inventant, en rêvant l'histoire du vignoble. Parfois classique, restant dans des domaines très historiques ou agro géologiques, la communication à propos des terroirs en arrive jusqu'à dissoudre le concept dans la poussée actuelle de l'architecture iconoclaste de certains domaines à travers le monde viticole.

La gestion de données spatiales a pris une importance considérable dans de nombreux domaines de l'Agriculture ou de l'Environnement. Ces informations permettent notamment d'envisager la prise en compte de la variabilité spatiale et temporelle d'une culture. Cela implique cependant de fusionner les informations disponibles de manière à effectuer un diagnostic et à proposer des actions adaptées. Les principales difficultés sont la très grande diversité des informations disponibles (numériques ou symboliques, de résolutions spatiales différentes), et les imprécisions et incertitudes associées aux données et à leur localisation. Face à cette problématique, nous proposons une méthode permettant de nous ramener systématiquement à un référentiel qualitatif, et de superposer les différentes informations disponibles au niveau spatial, tout en prenant en compte les imprécisions, les incertitudes, les conflits, et les absences éventuelles d'information. Nous mettons en œuvre une approche nouvelle tant pour la description des informations disponibles que pour leur utilisation. Cette approche utilise la théorie des sous ensembles flous et la théorie des possibilités pour décrire les informations disponibles. La superposition des données au niveau spatial met en œuvre un opérateur d'agrégation basé sur une intégrale de Choquet. Cette approche est appliquée à des données de Viticulture de Précision. Le premier exemple s'intéresse à la sélection de zones de requête imprécises par un utilisateur, et au diagnostic de ces zones. Le second décrit comment générer une carte identifiant les zones à traiter selon deux modalités distinctes. Ce travail conclue à la validité de l'approche proposée, et identifie certaines limites. L'opérateur d'agrégation proposé constitue une base de raisonnement, mais pourra évoluer pour prendre en compte l'ensemble des particularités liées au traitement des données spatiales<br>During the last decade, spatial knowledge management has become increasingly popular in Agriculture and the Environment. These data can be used to consider the spatial and temporal variability of a culture. Nevertheless, this involves the aggregation of all the available data in order to produce a diagnostic and to propose suitable actions. The main problems are the heterogeneity of the different data sets (numeric or symbolic, with different spatial resolutions), and the imprecision and the uncertainty associated with the data and their locations. To overcome these problems, we propose a method to translate all the data into qualitative data and to estimate all the studied variables on the suitable locations. Our method takes into account imprecision, uncertainty, conflicts, and lack of information. We implement a new approach both for the description and for the treatment of the data. The description of the information is based on fuzzy sets and possibility theory. The spatial estimation process is based on a Choquet integral. Our approach is applied on Precision Viticulture data. Our first application is the diagnostic of expert zones manually delineated by experts. Our second application is a field segmentation in order to perform distinct levels of treatment. These examples shows that our approach is valid. Nevertheless, we identify some limitations. Further work is needed to improve our aggregation operator and to consider all the particular aspects of spatial data treatment

Les atteintes à l’environnement causées par un usage important de pesticides remettent en cause lemodèle productif actuel en viticulture d’appellation. Un cadre d’analyse évolutionniste est mobilisépour comprendre le manque de changement de pratiques phytosanitaires dans ce secteur malgrél’augmentation des pressions réglementaire et sociétale ces dernières années. Après avoir analysé lelock-in des viticulteurs vis-à-vis de l’utilisation des pesticides, nous appréhendons les nouvellespratiques grâce au concept d’innovation environnementale. En nous basant sur une enquête et unmodèle évolutionniste, nous montrons que l’IPM, en tant qu’innovation de processus, permet deréduire de manière significative les quantités de pesticides employées le long de trajectoiresgagnant-gagnant, mais que l’absence de compétences spécifiques dans les exploitations entrave sonadoption. Nous mettons ainsi en évidence l’importance des processus d’apprentissage pour laréduction des pesticides en viticulture. En l’absence de R &amp; D formalisée, les viticulteurs ont besoind’un accompagnement spécifique et d’organismes de conseil agricole structurés localement pourrelever le défi de produire des vins rentables et respectueux de l’environnement. Les politiquespubliques en construction peuvent donc s’appuyer sur ces résultats pour impulser le changementattendu dans un délai raisonnable<br>The environmental damage caused by the intensive use of pesticides challenges the current production model in appellation wine growing. We mobilize here an evolutionary framework to understand the lack of change in vineyard phytosanitary protection despite increasing regulatory and social pressure in recent years. After analyzing grape growers’ pesticide lock-in, we consider new protection practices via the concept of environmental innovation. Our case analysis and evolutionary model allow us to show that IPM could significantly reduce pesticide use along win-win trajectories, but also that the lack of specific implementation know-how in farms hampers its adoption. We therefore highlight the importance of learning processes for pesticide reduction in grape growing. In the absence of formal R &amp; D, growers need specialized advice and structured extension services to meet the challenge they face: producing profitable and environmentally friendly wines. Public policies can therefore be based on this result to drive the expected change in a reasonable time

The soil carbon improves the physical and chemical properties of soil and it widely accepted that the carbon content in the soil is an important factor in the overall health of the soil and crops. In Italy and especially in Veneto region the loss of soil organic matter is a major problem for all sectors of agriculture and certainly also for the wine business. In order to restore soil organic matter has been proposed in this work a model of sustainable management for the re-use of plants and animals biomass (cattle manure, vine branches and grape marc) derived from agricultural practices. In particular, the research has focused on the study of the effects caused by the distribution of composted soil on the major aspects of production and quality of two vineyards, both located in the Conegliano-Valdobbiadene D.O.C.G. zone. The characterization of composted soil improver has been obtained by the study of the evolution of some microbial groups active in fermentation processes and monitoring the changes in temperature, moisture, pH, carbon content, nitrogen, sulfur and heavy metals. The introduction of some innovative indices such as the capacity of the biodegradable organic substance evaluated by the degradation of cotton and silk wires inserted in the soil has allowed the diagnosis of the nutritional status of vine. The variables studied were subjected to one-way analysis of variance (ANOVA) using the statistical software "STATISTICA 12" identifying in some cases large and significant differences (p <0.05). The treated vines showed an improvement in productivity and quality aspects of the grapes due to the contribution both of compost manure both of prunings residues and grape marc, with some variability related to the amount distributed and the method of distribution in the field. This improvement is certainly consequent on an increased biological fertility soil shown by a greater degradation of cotton and silk wires relating to the treated thesis compared to untreated control. ARISA analysis performed on samples of mature compost also showed unexpected and important processes of selection of useful microflora (bacteria and fungi). In conclusion, the compost has proved an excellent soil improver capable of restoring the soil fertility of the vineyards and improve the nutritional status of the vines.<br>Il carbonio del suolo migliora le proprietà fisiche e chimiche del terreno ed è ampiamente accettato che il contenuto di carbonio è un fattore importante nella salute generale del terreno e delle colture. In Italia e soprattutto in Veneto la perdita di materia organica del suolo è un problema importante per tutti i settori dell'agricoltura e sicuramente anche in viticoltura. Al fine di ripristinare la materia organica del suolo è stato proposto in questo lavoro un modello di gestione sostenibile per il riutilizzo di biomasse di origine animale e vegetale (letame bovino, tralci di vite e vinacce) derivate dalle pratiche agricole. In particolare, l’attività di ricerca si è concentrata sullo studio degli effetti determinati dalla distribuzione di ammendante compostato sui principali aspetti della produzione e della qualità di due vigneti, entrambi situati nella zona D.O.C.G. di Conegliano-Valdobbiadene. La caratterizzazione del materiale compostato è stata ottenuta mediante lo studio dell’evoluzione di alcuni gruppi microbici attivi nei processi di fermentazione e il monitoraggio delle variazioni di temperatura, umidità, pH, contenuto di carbonio, azoto, zolfo e metalli pesanti. L'introduzione di alcuni indici innovativi come la capacità biodegradativa della sostanza organica valutata tramite la degradazione di fili di cotone e seta inseriti nel terreno ha permesso la diagnosi dello stato nutrizionale della vite. Le variabili studiate sono state sottoposte ad analisi della varianza ad una via (one-way ANOVA) utilizzando il software statistico "STATISTICA 12” ottenendo in alcuni casi ampie e significative differenze (p <0.05). Le viti trattate hanno mostrato un miglioramento della produttività e degli aspetti qualitativi delle uve grazie al contributo sia di compost da letame sia di compost da sarmenti e vinaccia, con una certa variabilità correlata alla quantità distribuita e al metodo di distribuzione in campo. Questo miglioramento è certamente conseguente ad un aumento della fertilità biologica del terreno mostrato da una maggiore degradazione dei fili di cotone e seta relativi alle tesi trattate rispetto al controllo non trattato. L’Analisi ARISA effettuata su campioni di compost maturo ha anche mostrato inaspettati e importanti processi di selezione della microflora utile (batteri e funghi). In conclusione, il compost si è rivelato un eccellente ammendante in grado di ripristinare la fertilità dei suoli vitati e di migliorare lo stato nutrizionale della vite.

Dans un contexte mondial caractérisé par une crise systémique très complexe, il est évident qu'aux changements structurels (changements climatiques, pression croissante sur les ressources renouvelables, accroissement démographique), on a associé une crise économique dramatique dont les conséquences ne sont pas encore tout à fait prévisibles en termes d'aggravation de la pauvreté, de contraction des marchés internationaux et du crédit et des perspectives de développement. L'agriculture est ainsi confrontée à des défis décisifs, dont l'issue est incertaine, en particulier dans certaines régions du monde; les modèles de développement qui émergent sont différents et se projettent, d'un côté, dans un secteur agricole «familial» encore très fragile et, de l'autre, dans une agriculture de type «capitaliste» de plus en plus dominante. Cependant, dans un tel contexte de crise, il semble que d'autres nouvelles opportunités peuvent naître, bien que dans le long terme; la coupure qui s'est créée et la rupture des schémas ont révélé la vulnérabilité des systèmes agricoles et agroalimentaires en plaçant en premier plan l'exigence d'innovation et de remise en question des modèles de développement. Dans un contexte de grande incertitude, selon les variations des valeurs et des normes à la base des sociétés, ces dernières doivent se montrer créatives et réinventer les modalités de production, de transformation et de distribution des produits agricoles dans une perspective à long terme qui tienne en compte des territoires et des communautés qui y vivent, tout en focalisant l'attention sur le concept de durabilité. En ce qui concerne le développement durable, les différents systèmes agricoles et agroalimentaires ont déplacé leur intérêt vers une perspective agroécologique, en soutenant les systèmes alimentaires locaux. Ceux-ci évoluent en parallèle, en concurrence ou en complémentarité avec les systèmes de production dominants, et prennent des formes différentes selon qu'ils viennent de pays où l'agriculture est à un taux élevé de consommation de capital, d'intrants chimiques et d'énergie fossile, ou de pays où l'accès à ces ressources est insuffisant et, par conséquent, la productivité du travail est faible. Au niveau mondial, il est essentiel de développer une prise de conscience majeure sur l'existence de ces systèmes innovants, de capitaliser ces expériences, dont certaines à l'état embryonnaire, et de faire ressortir un nouveau paradigme conceptuel de développement dans l'agriculture, qui ne soit pas uniquement du point de vue de la technologie et de l'organisation. Il faut s'interroger sur le degré des connaissances nécessaires pour promouvoir le développement durable, remettre en question la primauté de la connaissance scientifique par rapport aux autres types de connaissances et créer de nouveaux liens entre la recherche, les acteurs économiques, les acteurs de la société civile et les décideurs politiques. C'est dans cette perspective que la recherche agricole joue un rôle de premier plan dans la voie de l'innovation, sachant que l'agriculture ne doit plus exercer un rôle uniquement de production, mais d'interaction complexe avec l'environnement et la société dans son ensemble. Dans un débat scientifique qui s'anime de plus en plus, grâce aussi à l'ouverture imminente de l'Expo 2015 à Milan, on veut souligner le rôle que, dans ce processus d'innovation, chaque acteur peut jouer, ainsi que la caractérisation des facteurs qui déterminent les innovations mêmes, dans un contraste et une comparaison de positions sur les processus innovants réellement nécessaires pour le développement durable. Ce travail de thèse vise à enquêter sur certains aspects de l'innovation dans l'agriculture et à fournir également des points de réflexion en ce qui concerne le rôle que l'agriculture peut jouer dans le cheminement vers un développement réel des communautés rurales, qui vivent dans des territoires où l'agriculture même trouve sa raison d'être<br>In a global context characterized by a systemic and multi-faceted crisis, it is clear that the changes that could be defined structural and continuous (climate change, increasing pressure on renewable resources, population growth) are associated with a dramatic economic crisis whose consequences are still not entirely predictable in terms of deepening poverty, contraction of international markets, credit crunch and prospects for development. In this context, agriculture is facing decisive challenges, of uncertain outcome, especially in some regions of the world; the development patterns that emerge are different and are combined, on the one hand, in an agricultural sector "family" still very fragile and, on the other hand, in a capitalist-like farming more and more dominant. However, just by the crisis situation mentioned, it seems that new opportunities can be born, although in the long run; the rift that has arisen and the breaking of the schemes have revealed the vulnerability of agricultural and agro-food systems placing its focus on the need for innovation and on questioning the development models. In a context and in a time of enormous uncertainty, varying the values and norms underlying the society, they must show creative and reinvent the way of producing, processing and distribution of agricultural products in the long period that takes into account the territories and the communities that live there, all focusing attention on the concept of sustainability. In the framework of sustainable development, different farming and agro-food systems moved in an agro-ecological perspective, promoting local food systems. These ones are evolving in parallel, in competition or in complementarity with the dominant production systems, and take different forms depending on whether they themselves emerge in countries where agriculture is at high rate of capital consumption, chemical inputs and fossil energy, or in those countries where the access to such resources is scarce and, consequently, the labor productivity is low. At a global level, it is essential to increase the awareness of the existence of such innovative systems, to capitalize on these experiences, some of which in the embryo, and to bring out a new conceptual paradigm of development in agriculture, all this not only in a technological and organizational perspective. It is necessary to wonder about the state of knowledge necessary to promote sustainable development, calling into question the primacy of scientific knowledge in relation to other types of knowledge and creating new links between research, economic actors, civil society actors and policy makers. Accordingly, it is the agricultural research to play a leading role on the path to innovation, with the understanding that agriculture is no longer called to exercise only a purely productive role, but of complex interactions with the environment and with society as a whole. In a scientific debate that becomes increasingly lively, also thanks to the imminent opening of the event Expo 2015 in Milan, the role is highlighted that, in this process of innovation, each actor can play as well as the characterization of the factors that determine the innovations themselves, in a contrast and comparison of positions on which are the innovative processes really needed and useful for sustainable development. Without any claim of being exhaustive, the present work aims at investigating some aspects of innovation in agriculture and at providing some food for thought about the role that it can play in the journey towards a real development of rural communities , those who live in the territories where agriculture itself finds its “raison d'etre”

Ce travail de thèse est relatif à l’estimation spatialisée de l’état hydrique de la vigne. Son objectif est de proposer et de valider une approche permettant de prendre en compte la variabilité spatiale d’une zone définie afin d’y estimer au mieux l’état hydrique des plantes à une date donnée. Suite à un état de l’art des outils et méthodes existants pour estimer l’état hydrique des plantes, cette thèse a mis en évidence, d’une part, la possibilité d’obtenir des mesures de référence de l’état hydrique des plantes avec une faible résolution spatiale et d’autre part, l’existence d’informations avec une haute résolution spatiale mais indirectement reliées à la variable d’intérêt. Ce constat a conduit à proposer une approche collaborative entre mesures de référence et données auxiliaires à haute résolution. Elle propose une fonction d’extrapolation de l’état hydrique qui permet de prendre en compte la variabilité spatiale caractérisée par les données auxiliaires sur une région définie (domaine de validité). Une telle approche n’a jamais été proposée dans la littérature. Pour répondre aux questions posées et valider l’approche proposée, un dispositif expérimental a été mis en œuvre sur neuf parcelles viticoles du domaine INRA de Pech-Rouge (Gruissan France). Une base de données pré-existante à la thèse, a également été utilisée. Ces données ont permis d’identifier l’intérêt et les limites d’une estimation spatialisée de l’état hydrique des plantes. Pour des contraintes hydriques modérées à fortes (&lt;-0,4 MPa), la variabilité spatiale de l’état hydrique de la vigne est déterminée par certains facteurs du milieu. Le principal facteur identifié est le sol. Lorsque les unités de sol sont caractérisées, la variabilité spatiale est structurée en fonction de la vigueur des plantes. L’étude des informations à haute résolution telles que les images aériennes et les propriétés électriques du sol a montré l’intérêt de ces informations pour caractériser la variabilité spatiale de l’état hydrique des plantes. L’étape de modélisation s’est concentrée sur un domaine spatial correspondant à la parcelle. Pour une première approche, cette échelle de travail a permis de minimiser les sources de variabilité inter-parcellaires liées au cépage, au mode de conduite, à l’âge de plantation, etc. Un modèle d’extrapolation de l’état hydrique a été proposé et validé sur deux bases de données. Ce modèle repose sur l’estimation d’une collection de coefficients locaux et constants. Chaque coefficient local, permet de modéliser la relation linéaire qui existe entre l’état hydrique mesuré sur un site de référence, et l’état hydrique sur un site donné, quelle que soit la date considérée. Lorsque la contrainte hydrique est élevée, l’approche proposée permet d’expliquer une part importante de la variabilité spatiale de l’état hydrique des plantes (r² = 0,70). L’identification de ce modèle général, a permis de proposer une méthode pour introduire les données auxiliaires. Comparée à une approche classique similaire à l’estimation de la moyenne, elle permet d’expliquer une part importante de la variabilité spatiale de l’état hydrique des plantes (r² = 0,71) lorsque la contrainte hydrique est élevée. Au niveau intra-parcellaire, les variables auxiliaires retenues sont relatives à la vigueur des plantes<br>This thesis focused on the spatial estimation of vines water status. Its objective was to propose and validate an approach to take into account the spatial variability in order to better estimate the plant water status at a given date. After a state of the art showing tools and methods exist for estimating the water status of plants, this thesis showed, firstly, the availability of measurements of reference to estimate the plant water status with a low spatial resolution and secondly, the existence of information with high spatial resolution but indirectly related to the variable of interest. This state of art led to propose a collaborative approach between reference measurements and auxiliary data at high resolution. It considers a function of extrapolation of the water status which allows to take into account the spatial variability characterized by the auxiliary data on a defined area (zone of validity). Such an approach has never been proposed in the literature. In response to questions and to validate the proposed approach, experiments were carried out in nine fields of vineyard INRA Pech-Rouge (Gruissan France). A database of pre-existing thesis was also used. A database developed by the thesis was also used. These data have identified the advantages and limitations of a spatial estimation of plant water status. For moderate to severe water restriction (&lt;-0. 4 MPa), spatial variability of vines water status is determined by certain environmental factors. The main factor identified is the soil. When the soil units are characterized, spatial variability is structured according to plant vigor. The study of information such as multispectral airborne images and the soil electrical properties showed the benefit of this information to characterize the spatial variability of plant water status. The modeling stage focused on a spatial domain corresponding to the block. For a first approach, this scale of work permits to minimize inter-block sources of variability like variety, training system, date of plantation, etc. An extrapolation model of plant water status has been proposed and validated in two databases. This model is based on a collection of site specific coefficients which are constant over time. Each coefficient, models the linear relationship between plant water status measured on a reference site, and the plant water status at a given site, regardless of date. When water restriction is large, the proposed approach can explain a significant proportion of the spatial variability of plant water status (r² = 0. 70). The identification of this general model, gave the formalism to take into account the auxiliary data. Compared to a classical approach similar to the estimation of the mean field, the model with auxiliary data explains a significant part of the spatial variability of plant water status (r² = 0. 71), when water restriction is large. At the within-field level, selected auxiliary information refers mainly to plant vigor<br>Este trabajo de tesis se focaliza en la estimación espacial del estatus hídrico de la viña. Tiene por objetivo proponer y validar una metodología que considera la variabilidad espacial del cuartel vitícola, de manera de estimar lo mejor posible el estatus hídrico de la planta en una fecha determinada. Posterior a una revisión exhaustiva de literatura de las principales herramientas y métodos existentes para estimar el estatus hídrico de las plantas, este trabajo puso en evidencia, por un lado, la posibilidad de utilizar mediciones de referencia para estimar el estatus hídrico de planta con una baja resolución espacial y por otro, la posibilidad de utilizar información auxiliar de alta resolución espacial que está relacionada indirectamente a la variable de interés. Este trabajo propone una metodología conjunta entre las mediciones de referencia y la información auxiliar de alta resolución, la cual es original y jamás propuesta hasta ahora en la literatura. Así, se propone una función de extrapolación del estatus hídrico que considera la variabilidad espacial sobre un área determinada (zona de validación) la cual es caracterizada por datos auxiliares. Para responder a las preguntas científicas y validar la metodología propuesta, se planificó un dispositivo experimental que comprendió nueve cuarteles vitícolas de la estación experimental del INRA de Pech-Rouge (Gruissan, Francia) que permitió crear una importante base de datos. Además se utilizó una base de datos pre-existente a la tesis. Estos datos permitieron identificar las ventajas y las limitaciones de una estimación espacial del estatus hídrico de las plantas. Para restricciones hídricas moderadas a fuertes (&lt;-0,4 MPa), la variabilidad espacial del estatus hídrico de la viña está determinada por ciertos factores ligados al medioambiente. Así, el principal factor identificado fue el suelo. Una vez que las unidades pedológicas han sido caracterizadas, la variabilidad espacial se presentó estructurada en función del vigor de las plantas. Además, el estudio de la información auxiliar tal como, imágenes aéreas y propiedades eléctricas de suelo, mostró las ventajas de esta información para caracterizar la variabilidad espacial del estatus hídrico de las plantas. Las etapas de modelización fueron concentradas a la escala del cuartel. Así, en una primera etapa, esta escala de trabajo permitió minimizar las fuentes de variabilidad entre cuarteles vitícolas ligadas al cultivar, sistema de conducción, edad de plantación, etc. Un modelo de extrapolación del estatus hídrico fue propuesto y validado sobre dos bases de datos. Este modelo fue basado sobre una colección de coeficientes sitio-específicos locales y constantes. Cada coeficiente local, permitió modelar la relación lineal existente entre el estatus hídrico medido en un sitio de referencia y el estatus hídrico medido en cualquier otro sitio al interior del cuartel, sin importar la fecha de medición. Bajo condiciones de restricción hídrica elevada, el modelo permitió explicar una parte importante de la variabilidad espacial del estatus hídrico de la planta (r2=0,70). La identificación de este modelo general, permitió proponer una metodología para introducir datos auxiliares. Comparado con un método clásico de estimación, esta última permitió explicar una parte importante de la variabilidad espacial del estatus hídrico de las plantas (r2=0,71) en condiciones de restricción hídrica elevada. Les relations hydriques entre la vigne et son milieu sont mal connues en raison de difficultes experimentales liees a la plante elle-meme (enracinement profond et heterogene) et a son mode de conduite (culture discontinue). L'importance economique de cette culture et les orientations de la politique viticole europeenne incitent a mieux comprendre ces interactions pour un meilleur controle de la production (quantite et qualite). Cette these caracterise les flux d'eau circulant au sein d'une parcelle de vigne pour elaborer un modele extrapolable a des situations pedoclimatiques variees. L'experimentation s'est deroulee pendant trois ans sur une parcelle d'un hectare. L'humidite du sol, l'evaporation du sol nu et le flux de seve ont ete mesures en cinq placettes au sein de la parcelle. Une mesure globale de l'evapotranspiration (etr) parcellaire est fournie par bilan d'energie. L'etr parcellaire est donc calculee simultanement par bilan hydrique du sol ; bilan d'energie et cumul evaporation du sol et transpiration. Ces trois methodes donnent des resultats similaires, mais la troisieme permet une meilleure resolution temporelle associee a un echantillonnage plus souple. La structure du couvert impose une variabilite spatiale a l'evaporation du sol dont l'echantillonnage de mesure doit tenir compte. Toutefois, les differences observees sont quantitativement faibles et ne necessitent donc pas une prise en compte formelle dans un modele parcellaire. L'algorithme de van keulen (1975) est apparu le plus adequat pour simuler les cinetiques d'evaporation mesurees. La transpiration moyenne de la parcelle a pu etre modelisee par une fonction simple ratio la reliant a l'etat hydrique du sol et a la demande climatique. L'extraction racinaire porte sur une zone de sol stable au cours de la saison. Par contre, la profondeur de cette zone varie selon la position par rapport au rang (215 cm sous les ceps, 155 cm entre deux rangs). L'extraction racinaire par couche de 20 cm s'avere reliee lineairement a l'etat hydrique du sol. La relation est stable d'une couche a l'autre si l'etat hydrique de chacune est rapporte a l'humidite minimale mesuree in situ. Cela permet de tenir compte des variations de colonisation racinaire entre couches. Cette these aboutit a une connaissance accrue des relations hydriques entre la vigne et son milieu. There have been numerous attempts for measuring viticulture potential. In most cases, this involves the construction of a climate/viticulture based model which is then applied to a potential region. Although these climatic based models may perform well inside their original regions, they tend to fail elsewhere. Discrepancies between climatic indexes have been attributed to many factors including vineyard management, grapevine variety, phenology/climate misconceptions and regional macro/mesoclimate regimes. The aim of this study is to investigate the viticulture potential within two regions of the South Island of New Zealand, by implementing several climatic based models. These models have been designed to improve the predictive accuracy over other current climatic/viticulture models. A GIS, along with climatic data collected from over 80 stations within Canterbury and the surrounding region, are incorporated into several models which are used within this project as viticultural tools to improve the current understanding between topographic, climatic and grapevine relationships. Viticulture potential ratings are then assessed for two overlapping regions; the smaller sub-region of the lower Waipara catchment and the larger Canterbury region. Results show that many of the current vineyard plots in the Canterbury and lower Waipara regions do not fall within the optimal limits of the models, while there are large potential areas in both regions yet to be utilized for viticulture. However, not all of Canterbury and the lower Waipara catchment can be used for viticulture due to several limiting factors such as elevation, risk of frosts and low mean temperatures. Surprisingly, most of the Canterbury Plains fall within this 'no go' area. The model has proved to be a much more reliable tool than other existing climatic indexes such as the widely used degreeday and mean temperature of the warmest month indices.

Who would believe nowadays a mere animal can compete with the power of human engineering. This thesis has the objective to examine the effects of modern technology in viticulture in comparison to an old fashioned way of working with draft animals such as horses. Analyses were carried out during nine months and one vintage in two different vineyards with differences in cultivation practices with horses as draft animals on mostly bare soil or tractors with an alternate natural grass cover in the wine region Palatinate, Germany. Soil textures are the same in both comparable sites. The vineyard which was cultivated with horses is referred as vineyard horse and the vineyard which is cultivated mechanically is referred as vineyard tractor. Organic matter shows higher contents in the vineyard horse in topsoil as well as in subsoil. The C/N Ratio shows no big differences. Mineral contents of soil were measured as nitrogen, phosphor, potassium and magnesium with differences in values. The vineyard tractor counts with a higher average number of clusters per vine. Differences in percentage regarding total botrytis are minimal and vineyards show a higher infestation frequency in the vineyard horse but the infestation strength within the grape is lower in this vineyard. The cultivation with horses show higher values as density level, degree in Oechsle, total extract, pH, total acidity, tartaric acid and malic acid. The analyses of nutrients in must show higher contents of macronutrients in the vineyard horse as nitrogen, phosphor, potassium, calcium, sodium and magnesium. Very high differences can be found within the amounts of nitrogen. The micronutrients in must such as iron, zinc, manganese and copper resulted in very similar values. The labor in working with draft animals in vineyards is more than two times higher compared to the vineyard that is mechanized. It is necessary to get a more detailed view including more vintages and more vineyards which can be analyzed in order to come to a more scientifically sound conclusion.<br>N/A

La thèse de doctorat avec le titre “Potentiel, valorisation et perspectives de développement de l’œnotourisme en Moldavie occidentale” a comme but l’identification, l’évaluation et l’utilisation des ressources œnotouristique de la Moldavie en prenant comme exemple le modèle français alsacien d’exploiter cette forme de tourisme. La thèse est divisée en 5 chapitres, premièrement on a fait une analyse générale de tout ce que signifie l’œnotourisme et ses modèles de développement dans les Etats de nouveau monde et de l’ancien monde. Ensuite, on a présenté la place de la Moldavie dans le contexte nationale concernant la viticulture et le tourisme pour argumenter le choix de choisir cette région. La Moldavie représente la région avec la plus grande surface viticole du pays. Le troisième chapitre est la plus importante partie de la thèse contenant la comparaison entre deux régions, l’Alsace et la Moldavie pour voir l’état de développement de la Moldavie par rapport à l’Alsace. La Moldavie doit adopter ce modèle car il y a la preuve que c’est un modèle de succès. Les derniers chapitres sont axés sur les questionnaires appliqués auprès les touristes et les viticulteurs de toutes les deux régions pour mettre en évidence leurs opinions concernant le développement de l’œnotourisme<br>The doctoral thesis with the title "Potential, valorisation and development prospects of wine tourism in western Moldova" has as aim the identification, evaluation and use of the wine tourism Moldova resources by taking as an example the Alsatian model to exploit this form of tourism. The thesis is divided into five chapters, first made a general discussion of everything means wine tourism and its models of development in the states of New World and Old World. Then it is presented the place of Moldova in the national context concerning viticulture and tourism to argue the choice to choose this region. Moldova is the region with the largest wine area of the country. The third chapter is the most important part of the thesis containing the comparison between the two regions, Alsace and Moldova to see the state of development of Moldova and Alsace. Moldova must adopt this model because there is evidence that it is a model of success. The last chapters are focused on the questionnaires applied to tourists and winemakers of the two regions to highlight their views on the development of wine tourism

La présente étude anthropologique est une description d’activités multiples qui résultent de la création (1982) et de l’extension (1999) d’un projet vitivinicole au sein de l’agriculture traditionnelle paysanne du haut-plateau tropical andin, dans le département du Boyacá – Colombie. Habitée par l’une des plus nombreuses communautés rurales du pays, l’économie de cette région a connu un important processus historique de déterritorialisation et son économie a longtemps dépendu des activités d’élevage de petits producteurs installés sur de très petites propriétés. L’histoire de cette région nous enseigne que peu de mesures spécialisées (mises en œuvre en tant que techniques) ont été appliquées à sa production agricole traditionnelle. Il s’agit là d’un élément décisif pour comprendre les conditions actuelles de pauvreté de beaucoup des habitants de la région, en particulier ceux des zones rurales, dans la mesure où, dans l’accès aux ressources végétales, minérales et animales, les techniques utilisées jouent un rôle décisif. Les acteurs principaux, dans ce domaine, ont été surtout des religieux, des politiques ou des militaires. L’émergence d’un acteur social détenteur d’un savoir spécialisé susceptible d’être appliqué à la tradition agricole de cette région par le biais de la création du “Projet vitivinicole de la Valle del Sol et territoires limitrophes”, dans le département du Boyacá, est le centre analytique et scientifique de notre étude. A partir d’une analyse historique, économique et descriptive, nous avons pu déduire que l’évolution technique et technologique dans la région n’avait pas été significative du point de vue de la production agricole<br>This anthropological study describes multiple activities initiated through the creation in (1982) and subsequent extension in (1999) of a wine-making project conducted in the high Andean altiplano with a group of farmers of the Department of Boyaca in Colombia. This region has undergone a historical process of deterritorialization. Nowadays, it is the home of a robust peasant population which heavily relies on numerous small properties known as minifundios and micro-minifundios, which are generally farmed by peasant households on hillsides. From this study, it is argued that the application of specialized information (based on specialized methods) to agriculture has been very limited in the region of our study. Therefore, this lack of specialized practices has contributed to the significant level of poverty these communities face, especially the rural dwellers. This is to say, agricultural practices represent a decisive factor for the use of natural resources and cultural development. In the particular case of vegetable and mineral exploitation, this study argues that the current practices have mostly been led by priests, politicians and military authorities. Thus, the need for a science-based approach entwined with cultural traditions of the local peasant communities encouraged the creation of this study called Proyecto vitivinícola del Valle del Sol y territorios afines, and carried out in above mentioned region. From a descriptive and economic standpoint, we claim that there has been a scarce or nonexistent technical and technological agricultural development in the region

Shiraz and Chardonnay were chosen as experimental varieties because these cultivars presented a large range of variability in the field. The extent of the variation within each of the recorded berry parameters was assessed using the coefficient of variation (CV), a unitless measure of sample variability relative to the sample mean, ideally suited to comparative studies.

L'équipe Santé Végétale à Bordeaux a entrepris en 2001 la conception de systèmes décisionnels de gestion des maladies de la vigne, qui utilisent des observations à la parcelle, afin de montrer que l'on peut réduire fortement le nombre de traitements fongiques tout en produisant du raisin de qualité. A l'issue de plusieurs phases de conception et expérimentation, ces pathologistes exprimaient le besoin de formaliser ce que j'ai nommé un Processus Opérationnel de Décision (POD) pour la lutte contre l'oÉidium et le mildiou, pour trois raisons : pouvoir communiquer le POD, en tester les aspects opérationnels, et0 rendre le POD fiable. La modélisation du " POD Mildium " a été réalisée dans le formalisme à évènements discrets des Statecharts, en utilisant les diagrammes Statecharts comme média entre les experts-concepteurs et le cogniticien. Cette méthode originale est une contribution à l'ingénierie des processus métiers. Deux méthodes ont été élaborées pour évaluer la qualité du modèle et la concordance des simulations avec les comportements décisionnels observés. Pour les campagnes expérimentales 2005 et 2006, on a montré que 85% des décisions étaient similaires<br>Consumption of phytopharmaceutics by French viticulture is high. Two fungal diseases, powdery mildew and downy mildew make up for 70% of the yearly pesticides spendings for that crop. As they can cause total destruction of the harvest these diseases are seen as pestilences by the growers. As of today, considering the risks, chemical protection is the sole efficient mean of protection. A Crop Health team (Santé Végétale in Bordeaux) has undertaken since 2001 to solve the difficult task of designing decisional pest management systems for the vineyard. Innovative systems have to demonstrate that, in conformance with Integrated Pest Management (IPM) principles, it is possible to produce high quality grape with a low number of fungicide treatments. The team achieves this by evaluating disease levels plot by plot and by structuring knowledge in what we call a Decision Workflow System (DeWS). The pathologists have adopted an iterative design scheme, interweaving design phases with plot scale experiments. At the end of the third iteration (2001 2003 2005) they felt the need for a more formalised approach. My task consisted in identifying, and, if required, creating the formal tools and methods that would allow the experts to ameliorate their design. The three following needs were stated: to be able to communicate the DeWS; to be able to evaluate its operational aspect; to make the DeWS reliable. The DeWS concept is a prescriptive approach, making decisions at the operational level, for which crop protection is seen as a process spanning over the whole season. Knowledge elicitation of the process was carried out using the discrete events system language Statechart. Statechart Diagrams have been used as the media between the expert designers and the knowledge engineer. This novel knowledge elicitation method is a research result on its own along with the resulting model of the Grapevine powdery and downy Mildew DecisionWorkflow System (GrapeMilDeWS) (POD Mildium in French). Two validation methods were designed to evaluate the quality of the elicited model and identify differences of behaviour between decision observed during the experiments and the model's simulations. The model has been validated against the data from two experiments (2005; 2006). It showed 85% decision similarity. L'objet de cette thèse est de rendre compte de la dynamique longue d'une sphère d'activité, la sphère vitivinicole et des conditions de son insertion dans la formation sociale française. En première partie, les principales grilles de lecture concernant l'articulation de l'agriculture et du capitalisme sont passées en revue. Les limites des explications générales conduisent à dégager la notion de mode de régulation sectoriel en tant que combinaison de régimes économiques de fonctionnement et de dispositifs institutionnels, l'hypothèse étant que le niveau sectoriel peut dans certaines conditions être un niveau pertinent de régulation ne se réduisant pas à la seule réfraction dans la sphère considérée de tendances générales du capitalisme. A partir de là, on étudie le processus historique de constitution de la sphère viticole, marqué en particulier par l'émergence de puissants régimes d'organisation, en réponse aux déséquilibres économiques et tensions sociales sur lesquels a débouché le fonctionnement de l'économie viticole. Sur cette base sont abordées l'analyse économique des institutions et des politiques viticoles, celle des marches, celle des régimes économiques de fonctionnement aux niveaux de la production, de la consommation. L'approche analytique est prolongée par une étude synthétique des modes de régulation sectoriels en viticulture, marques en particulier par le rôle structurant des dispositifs institutionnels et l'existence de dynamiques divergentes selon les statuts sociaux des produits. . . . .

Les évolutions climatiques des trente dernières années, amenées à s'intensifier dans les décennies à venir, ont fait émerger de nouveaux défis pour l'agriculture, et plus particulièrement pour la vitiviniculture, qui est particulièrement sensible aux variations des conditions environnementales. Cette thèse a pour objectif d'analyser la vulnérabilité au changement climatique de deux régions productrices de vin: le Roussillon en France et McLaren Vale en Australie. Nous abordons ces deux espaces comme des systèmes socio-écologiques, car le climat n'est que l'une des nombreuses composantes régulant l'organisation et l'évolution de la filière vitivinicole. Leur vulnérabilité a été analysée via trois composantes, issues d'interactions entre éléments physiques et éléments humains : leur exposition, sensibilité et capacité d'adaptation au changement climatique. Nous avons utilisé une méthode mixte reposant sur des données quantitatives (analyse de données climatiques) et qualitatives (entretiens). La plus grande vulnérabilité du Roussillon aux changements climatiques récemment observés et simulés pour le futur s'explique à la fois par son exposition plus forte à la perturbation, et par sa situation économique, sociale et législative accentuant la sensibilité et freinant la capacité d'adaptation. Les acteurs d'un système actuellement moins vulnérable comme McLaren Vale doivent cependant rester attentifs quant à l'évolution de la trajectoire de leur système, dont la durabilité pourrait être diminuée dans les décennies à venir. Des éléments tels que l'entreprenariat individuel, couplé à l'innovation technique et organisationnelle, au sein d'un projet de développement collectif à l'échelle spatiale du système, émergen comme des points-clés nécessitant la plus grande attention des acteurs des deux systèmes<br>Climatic trends for the last thirty years have been challenging agriculture, and especially vitiviniculture, which is highly dependent on environmental variations, and they are projected to intensify in the following decades. This dissertation aims to analyse the vulnerability to climate change of two wine-producing regions: Roussillon in France and McLaren Vale in Australia. We consider those two field sites as social-ecological systems, as climate is only one of die many variables regulating the organization and development of the local wine industries. Their vulnerability has been analysed through a focus on three components, emerging from interactions between physical and human elements: their exposure, sensitivity and adaptive capacity to climate change. We used a rnixed-methods approach based on both quantitative (climate data analysis) and qualitative (interviews) data. Roussillon's greater vulnerability to climatic changes recently observed and simulated for the future can be explained by its greater exposure to the perturbation and by its socioeconomic and legislative situation that intensifies sensitivity and hinders adaptive capacity. However, actors from a less vulnerable system like McLaren Vale also need to keep a cautious eye on the evolution of their system's trajectory, whose sustainability might be impaired in the future. Elements such as individual entrepreneurship linked to technical and organizational innovation, embedded within a collective development projet at the system's spatial scale, arise as key processes requiring the greatest attention from actors in both systems

La recherche d'une méthode d'authentification des vins a conduit à l'exploration de divers types d'analyses : éléments minéraux, rapports isotopiques, composés polyphénoliques mais aussi à la mise au point de méthodes analytiques : RMN 2D et ICP-MS. Les premières investigations réalisées ont concerné les éléments minéraux du vin. La méthode d'analyse multiélémentaire nous a permis d'une part d'évaluer l'effet de l'utilisation de bentonites sur le contenu minéral des vins et d'autre part de tester les capacités de l'analyse multiélémentaire dans la différenciation et l'authentification des vins. Une méthode rapide, juste et précise de mesure des rapports isotopiques du plomb et du strontium par ICP-MS à secteur magnétique et multicollecteur est présentée. L'utilisation de ces rapports pour réaliser l'authentification d'un vin est discutée. L'analyse d'un extrait polyphénolique de vin par RMN à deux dimensions (HMBC-GAS) a montré que les composés polyphénoliques du vin représentant à la fois le patrimoine génétique de la vigne et les conditions de maturation du raisin. Trace and ultra trace minerals, strontium and lead isotopes ratio, phenolic composition of wine were studied. Several analytical technics were used : ICP-MS with three different type of analysers and heteronuclear 2D NMR. Trace and ultra trace minerals were measured by ICP-MS an adapted method was used to measure mineral enrichment due to bentonites treatment during vinification. Concentration values obtained for a collection of wines allowed to test the capacity of minerals to perform wine differenciation and authentication. Rapid, precise and accurate measurement of lead and strontium isotope ratios in wine by inductively coupled plasma sector field multicollector mass spectrometry is presented. The use of lead or strontium isotope ratio to determine wine origin is discussed. Phenolic wine extracts were prepared and analysed by 2D NMR (HMBC-GAS). Data analysis applied to NMR data allowed complete wine authentication from variety to origin and vintage. Phenolic compounds were found to be representative of plant genetics, and of growing conditions of vine and grapes

Climate is one of the most important factors influencing where wine grapes can be grown and the quality of wine produced from those grapes. A plants habitat has a profound influence on its growth and development. The surrounding climatic conditions at both the macro- and meso-scales influence the plant-climate miro-scale interactions. The main study site is the McKenzie Vineyard that is owned by Torlesse Wines. The climatic conditions of the surrounding Waipara region was also studied using climate data from the following vineyards; Canterbury House, River Terrace and Waipara West. The overall aim of this research is to improve understanding of the influence of the climatic environment on grapevine development at the meso- to micro-scale. The main findings of the research were firstly, that the most important climatic factor influencing grapevine development and growth is temperature and secondly that there is variability in the temperature across the Waipara Basin. Future research should be conducted for the entire growth season to gain a better understanding of how temperature influences the development of grapevine over the growing season as a whole.

L'adaptation au changement climatique est un défi majeur pour la viticulture. Dans un cadre temporel et spatial approprié, l'objectif de cette thèse était d'améliorer la conception de l’adaptation de la viticulture au changement climatique, dans le but de construire des stratégies à haute résolution. Le cadre méthodologique utilisé dans cette étude est constitué de plusieurs étapes. Par l’utilisation d’un modèle climatique régional, la première étape a été d'évaluer les impacts potentiels des changements climatiques futurs sur viticulture dans la sous-région d’Anjou-Saumur. Le réchauffement attendu de +1.1°C à +3.8°C à l’horizon 2071-2100 devrait entrainer une avancée significative de la phénologie de la vigne. Dans un deuxième temps, deux sites d’études contrastées en Anjou-Saumur ont fait l’objet de mesures climatiques et agronomiques à l’échelle fine des vignobles. Pendant trois années consécutives, la variabilité locale du climat et du comportement de la vigne a été étudiée. Les résultats ont montré une forte variabilité spatiale des conditions climatiques locales, qui s'est traduite par des différences de phénologie de la vigne et de composition des raisins. La connaissance de cette variabilité apparait ainsi comme un outil d’adaptation permettant aux viticulteurs de compenser les effets du changement climatique. Enfin, à l’aide d'entretiens semi-directifs individuels, les perceptions, la vulnérabilité et les processus d'adaptation des viticulteurs à la variabilité climatique et au changement climatique ont été évalués. Dans le contexte du changement climatique et des enjeux concernant l'adaptation, cette thèse a mis en évidence l'importance de la connaissance de l'environnement local et de la compréhension contextuelle dans l'élaboration des stratégies d'adaptation à différentes échelles temporelles et spatiales<br>Adaptation to climate change is a major challenge facing the viticulture sector. Within an appropriate temporal and spatial framework, the aim of this thesis was to enhance the conception of climate change adaptation in viticulture, all towards constructing high resolution strategies. The methodological framework used in this study consisted of several steps. Using a regional climate model, the first step was to evaluate the potential impacts of future climate changes on grape growing in the Anjou-Saumur wine growing sub-region. With warming predicted to continue by +1.1°C to +3.8°C in the far future, grapevine phenology is expected to advance significantly. Secondly, two contrasting study areas in Anjou-Saumur were equipped with climatic and agronomic measurements at vineyard-level scales. For three consecutive growing seasons, local variability in climate- and grapevine-related variables were studied. Results have shown a strong spatial variability in local climate conditions, which were reflected on grape phenology and grape composition. This spatial heterogeneity in local conditions should represent an important buffer in response to future climate changes, allowing winegrowers to manage the expected climate change impacts. And finally, wine growers’ perceptions, vulnerability and adaptive processes to climate variability and change were assessed through individual semi-structured interviews. Within the context of climate change and the key issues surrounding adaptation, this thesis have highlighted the importance of local environmental knowledge and contextual understanding in framing adaptation strategies across different temporal and spatial scales
