This study compared the effects of 1.4 or 2.7% sodium levulinate or sodium lactate on aerobic plate count (APC), color, pH, and TBA value of fresh pork and turkey sausage. Both sodium lactate and Jevulinate inhibited growth of aerobic microorganisms during storage, compared to controls. Bacteriostatic effects of sodium lactate were dose dependent, wherein 2.7% lactate was significantly more antimicrobial than 1.4% lactate. Preliminary studies were undertaken to investigate whether or not added iron (0, 35, 880 ppm of iron as ferrous fumarate) and fat type (corn oil, beef tallow, or menhaden oil ) influenced the oxidation of the rat diet during storage . Iron level affected thiobarbituric acid (TBA) values only in the menhaden oil diets. Storage for 4 d did not affect TBA values of the diets . This work was aimed at optimizing a formulation of silver catfish fishburgers (Rhamdia quelen) using filleting wastes and extract from fruit seeds. The utilization of filleting wastes from silver catfish in the formulation of fishburgers was evaluated by replacing grounded fish fillets with increasing levels (0-control, 20, 50, and 80%) of pulp obtained from filleting wastes (PFW). This study aimed to evaluate the protective effects of curcumin on cellular redox homeostasis and its impact on reactive oxygen species (ROS)- related genotoxicity in vitro. The cytokinesis-block micronucleus (CBMN) test assessed genotoxicity, while thiobarbituric acid reactive substances (TBARS) levels measured oxidative stress induction using standard spectrophotometric methods. Results demonstrate that curcumin exhibited significant protective effects across all concentrations tested, highlighting its potential to maintain cellular homeostasis and mitigate oxidative damage.

The aim of the research was to study the antioxidant activity of bee honey and propolis in the process of lipid oxidation. The studies were carried out on model systems using methods that allow estimating the intensity of formation of primary and secondary oxidation products. Using continuous flow electrophoresis (CFE) normal human platelets have been separated into a surface-charge dependent profile (roughly gaussian) extending over 15-20 fractions with an electrophoretic mobility range between 0.86 and 0.93 μmetres/sec Volt cm. The technique has also been used to study platelets from adult patients with Stable Essential Thrombocythaemia (platelet counts - 600-800 × 109/L) and chronic Idiopathic Thrombocytopaenia (counts 15-80 × l09/L).
